Sourdough starter의 pH는 저장 기간에 따라 3일차에 일부 시료에서 증가를 나타냈지만, 저장 5일 차에 과실 발효종간의 유의적인 차이 값은 모든 군에서 pH가 감소 하였고 과실분말 첨가량이 증가함에 따라 그 값이 낮아졌다. 발효종의 폴리페놀 함량은 저장이 진행됨에 따라 5일차에서 다시 저장 초기와 비슷한 수준으로 감소하였다. 발효종의 DPPH 라디칼 소거능은 대조군인 우리밀이 가장 낮았으며, 저장이 진행됨에 따라 DPPH 라디칼 소거능이 유의적으로 증가하였다. 과실을 첨가한 발효종의 미생물의 변화를 보면 제조 후 1일 경과에는 모든 군에서 미생물이 작은 균수가 검출되었는데 가장 많은 균수는 대조군에서 2.00x101 으로 검출 되었다. 대조군의 경우 3일차 후 저장일이 증가할수록 5.43x102에서 5.13x103총균수가 약 101 CFU씩 증가하는 경향을 보였다. 과실발효종을 첨가한 Sourdough bread의 반죽의 pH는 과실첨가량이 많을수록 반죽의 pH가 높아지는 경향을 보였다. 적정산도의 경우 대조구와 OMJD10가 0.47~0.48%로 낮은 적정 산도값을 나타냈다(p<0.05). 가용성 고형분 실험 결과는 대조군과 유자 5% 첨가 발효종 반죽이 가장 낮은 값을 보였다. 폴리페놀 함량의 경우에는 대조군 551.87 mgGAE/100g으로 가장 높았고(p<0.05), DPPH 라디칼 소거능은 6.03%로 가장 낮았다(p<0.05). 과실발효종을 첨가한 Sourdough bread의 특성 결과, 빵의 경도 및 씹힘성은 대조군이 1.18 kg 가장 높았으며, 탄력성은 MSB5가 가장 높았고, 부착성은 발효분말의 첨가량이 많을수록 모든 시료에서 점점 높은 부착성을 나타내었다. 갈변도는 10%의 유자분말을 첨가하여 제조한 Sourdough bread가 0.019로 갈변도가 가장 낮아지는 결과를 나타냈다. 전체적인 기호도(Overall-acceptance) 항목에서는 10%의 매실분말을 첨가하여 제조한 Sourdough bread가 8.12±1.24로 가장 높은 값을 나타냈으며, 5%의 매실(7.56±1.33), 5%의 유자(6.71±0.15), 10%의 유자(6.41±0.11), Control (5.61±2.01), 5%의 오미자(5.19±1.21), 10%의 오미자(4.99±0.41) 순으로 유의적인 차이를 보였다. 향기성분 GC/MS로 분석한 결과 총 80종의 휘발성향기성분이 동정되었으며, Control의 경우 59개, 유자는 70개, 오미자는 71개, 매실은 67개의 종류가 동정되었다. 화학적 특성에 따라 ester류 7종, alcohol류 24종, acid류 7종, aldehyde류 14종, ketone류 6종, volatile phenol, Benzene, 알칸화합물 miscellaneous 22종이 동정되었다. 각 Sample의 휘발성향기성분의 Peak Area는 1.0(*107)은 매실(416.52) > 오미자(412.51) > 유자(384.34) > Control (123.56)으로 나타나 Control에 비해 과실첨가군의 휘발성향기성분의 Peak area가 커지는 것으로 나타났다. 본 연구를 통하여 우리밀에 과실 분말을 5%와 10% 첨가가 적절하다고 판단 하였고, 발효종은 3일 동안 발효하는 것이 적당 할 것으로 보여 졌다. 향기성분에서는 과실 첨가 발효종을 사용한 Sourdough bread가 더 많은 향을 보유하여 기호도가 높았으며, 항산화성도 과실 발효종 첨가군이 높은 것으로 보아 영양적으로도 과실 발효종 첨가가 좋은 것으로 밝혀 졌다. 그러므로 국내산 과실을 이용한 Sourdough bread의 적합성과 소비자의 기호도를 충족시킬 수 있는 과실발효종과 첨가량은 매실 10% 첨가 발효종이 가장 좋을 것이라 보여 진다.

This study aims to investigate the quality of sourdough bread through conducting mechanical property and taste tests. The sourdough bread used was made out of both domestic and importedwheat flour with the addition offruit sourdough starters, i.e. plum,citron, and schisandra, which are popular natural foodsin the nation. The characteristics of domesticwheat flour, imported wheat flour, sourdough starters, and sourdough were investigated through content analysis, granularity, a farinograph, and an amylograph. According to the results from the farinograph experiments, the amount of time to reach 500 BU of the domesticwheat flour is shorter than that of the imported wheat flour however, the absorption rate and stability increases with the increasing amount of the imported wheat flourin the mixture. Since the farinograph results demonstrate that the percentage of measured protein decreases dramatically after the 7 to 3 ratio ofimported wheatflour todomestic wheat flour is increased, the 7 to 3 mixture ratio was used for further sourdough bread processing in the study. The pH level of the sourdough starters increased for some fruits in 3 days of storage time; however, the pH level decreased in 5 days regardless of the fruit. The more fruit powder was added, the lower the pH level was obtained. The polyphenolcontent of fermented species increased in the beginning of storage however, it leveled down to the original amount before storage. While the DPPH radical scavenging ability of the fermented species is lowest in the domestic wheat flour or the control group, it increases over the storage period. When it comes to the microorganisms of thefermented species, aminimal number of microorganisms can be observed regardless of the group in 1 day of processing and the largest amount of microorganisms is 2.00x101from the control group. 3 days after processing, the total number of microorganisms increases approximately by 101 CFU, which means from 5.43x102 to 5.13x103. The pH level of sourdough bread dough containing the fruit fermented speciesincreases with the increasing amount of fruit. The optimal acidity of the control group and the OMJD10 group is low, at 0.47% to 0.48% (p<0.05), while that of the control group and the 5% citron group show the lowest values from the experiments with the soluable solids. For polyphenol content, the control group has the highest value, at551.87mgGAE/100g (p<0.05) and lowest DPPH radical scavenging ability (p<0.05) at 6.03%. The quality characteristics results of sourdough bread containing fruit fermented species present that the hardness and chewinessof bread of the control group is the highest at 1.18 kg, while the resilience of the MSB5 experimental group is the highest. When increasing the amount of the fermented powder, attachment increases regardless of groups.Browning of the sourdough bread made of the 10% citron powders is the lowest at 0.019. For the overall-acceptance, the sourdough bread made of the 10% plum powders is the highest at 8.12±1.24, with the others ranked 5% plum powders (7.56±1.33), 5% citron powders (6.71±0.15), 10% citron powders (6.41±0.11), the control group (5.61±2.01), 5% schisandra (5.19±1.21), and 10% schisandra (4.99±0.41), respectively. According to the fragrance component GC/MS results, 80 different volatile fragrance components are identified. In detail, the control group has 59 components while 70, 71, and 67 difference components are identified in citron, schisandra, and plum, respectively. According to the chemical characteristics, 7 types of ester, 24 types of alcohol, 7 types of acid, 14 types of aldehyde, 6 types of ketone, and 22 types on volatile phenol, Benzene, and miscellaneous alkane compounds are also identified. The antioxidant propertiesas well as nutrition of the experimental groups with the fruit powdersare higher than those of the control group. In conclusion, the fermented specieswith an added 10% plum should be chosen to maximize both the satisfaction of customers and the compatibility of sourdough bread withdomestically grown fruits.
