Purpose: The aim of this study was to estimate the risk of V. parahaemolyticus in ganjang-gejang to enable food safety managers to consider appropriate control measures by developing a predictive growth model and conducting MRA.
Materials and Methods: Three V. parahaemolyticus (NCCP13712, NCCP13714, and NCCP14551) strains inoculated in ganjang-gejang and incubated at different storage temperatures (5, 10, 15, 20, 25, and 30°C) for a maximum of 144 h were used to investigate the growth of V. parahaemolyticus in ganjang-gejang. The measured growth data were fitted to estimate primary kinetic parameters, including the specific growth rate (SGR) and lag time (LT), using DMFit (Barayni). The obtained SGR and LT values were used to develop a secondary model to describe the relationship between growth parameters and storage temperature. In MRA, the basic structure of the MRA simulation model was based on the results of estimating contamination levels immediately before ingestion, with the daily intake amount (or daily consumption rate) of ganjang-gejang and dose-response model of V. parahaemolyticus as the main input variables.
Results: Statistical evaluation of the growth predictive model compared to experimental data (MSE, Bf, Af and R2) were very well-determined and useful as a model for predicting the growth of V. parahaemolyticus in ganjang-gejang. The estimated quantitative contamination level of V. parahaemolyticus in ganjang-gejang was –2.13±1.13 log CFU/g and estimated consumption levels for V. parahaemolyticus by ganjang-gejang intake was –2.81±1.28 log CFU/serving/day. Finally, the probability of foodborne illness by V. parahaemolyticus when ganjang-gejang was ingested based on the current estimated contamination level and intake level in South Korea was estimated as 3.91×10-9 foodborne illness/serving/day with 95% confidence low and upper limits of 2.32×10-9 and 5.51×10-9, respectively. The daily average number of cases was estimated to be 0.20 cases/day and 95% confidence low and upper limits were 0.12 and 0.29 cases/day, respectively.
Conclusions: Based on the present study, the safe intake time of V. parahaemolyticus in ganjang-gejang is very short. Ganjang-gejang is a ready-to-eat food, and controlling time and temperature is necessary. Particularly, an important factor in preventing foodborne illness caused by V. parahaemolyticus in ganjang-gejang by MRA simulation is storage temperature control.
