본 연구는 학교급식의 나트륨 저감화 실태 및 정책적 지원의 필요성을 파악하기 위하여 대구 지역의 초등학교, 중학교 및 고등학교에 근무하는 영양(교)사를 대상으로 2018년 2월 5일부터 2018년 4월 15일까지 설문조사를 실시하였다. 학교급식 염도 측정 빈도 및 측정담당자와 학교급식 국류 및 찌개류의 평균염도, 학교급식 저나트륨 식단 제공 빈도 및 제공 시 어려운 점, 나트륨 저감화에 대한 급식소에서의 중요도와 수행도, 나트륨 줄이기 활성화를 위한 정책적 지원의 필요성, 조사대상자들의 짜게 먹는 식습관 및 식행동을 분석한 결과는 다음과 같다.
1. 학교급식의 국과 찌개류의 염도를 매일 측정하는 비율은 초등학교 97.7%, 중학교 100%, 고등학교 100%로 높았고, 염도 측정담당자는 초등학교(68.2%)와 중학교(52.2%)에서는 ‘조리사’가 주로 담당했고, 고등학교(70.8%)에서는 ‘영양(교)사’가 대부분 담당했다.
3. 저나트륨 식단을 제공하는 빈도는 초등학교에서는 ‘매일’ 제공이 가장 높았고, 중학교와 고등학교는 월 1-2회 제공 빈도가 가장 높았다(p<0.05). 저나트륨 식단 제공 시 가장 어려운 점은 ‘급식 만족도가 낮아질 것에 대한 염려’가 전체 27.3%로 가장 높게 나타났다.
4. 나트륨 저감화 업무의 중요도와 수행도는 모두 ‘맛내기용 천연식재료(다시마, 멸치, 버섯 등)를 사용한다’가 가장 높았으며, ‘국•찌개•탕류의 염도를 공지하거나 게시한다’, ‘가공제품(햄, 어묵, 통조림 등)은 데치거나 헹궈 조리한다’, ‘국, 찌개는 끓인 후 마지막에 간한다’ 순으로 나타났다.
5. 나트륨 저감화 업무의 수행도를 조사한 결과 초등학교는 중학교, 고등학교에 비해 가공완제품(돈가스, 소스 등) 대신 직접 조리하도록 식단을 조정하는 것으로 나타났고(p<0.001), 초등학교는 고등학교에 비해 채소(김치용) 절일 때 소금 대신 소금물 이용을 많이 수행하는 것으로 나타났다(p<0.05). 초등학교, 중학교는 고등학교에 비해 국그릇은 용량이 작은 그릇으로 교체하거나 양을 적게 배식하는 것으로 나타났다(p<0.001).
6. 나트륨 저감화 사업을 활성화하기 위한 정책적 지원의 필요성에 대해 조사한 결과 ‘급식소 기준 저염 조리법 개발’, ‘단체급식용 나트륨 저감화 식품개발’에 대한 필요성이 가장 높았고, ‘학생 및 학부모 대상으로 한 나트륨 관련 교육의 활성화’, ‘저염식 메뉴 책자 보급’, ‘학교관리자(교장, 교감) 연수 시 나트륨 저감화 교육 홍보’ 순으로 필요성이 높게 나타났다.

The purpose of this study was to investigate the practice of sodium reduction in school foodservice. The subjects were 199 nutrition teachers and dietitions working at elementary, middle and high schools in Daegu. Topics on the survey included frequency of sodium measuring in school meals, workers in charge of measuring, average salinity of soup and stew, frequency and difficulties of offering low-sodium meals, important factors and actual implementation rate of sodium reduction in cafeterias, necessities of political support encouraging sodium reduction, and dietary habits of the targets regarding salty food. These are the major results from the analysis on the survey.
1. The proportion of schools measuring sodium in soup and stew every day was high, 97.7% in elementary schools, 100% in middle and high schools. Workers in charge of measuring sodium were usually cook in elementary schools (68.2%), and middle schools (52.2%), and mainly nutrition teacher and dietitions in high schools (70.8%).
2. Overall, mean salinity(0.60%) in stew was significantly higher than mean salinity(0.51%) in soup(p<0.001). Mean salinity in soup was significantly higher (p<0.05) in high schools (0.54%) than in elementary schools (0.50%). In stew, mean salinity was significantly higher (p<0.001) in high schools (0.66%) than in middle schools (0.62%) and elementary schools (0.58%).
3. Regarding frequency of offering meals with less sodium, 'on a daily basis' was highest in elementary schools, 'once or twice per month' was highest in middle and high schools (p<0.05). The main difficulty in offering low-sodium meals was 'concerns of decreasing satisfaction for school meals', taking 23.7% of the total.
4. Among important factors and actual implementation of sodium reduction, the highest was ‘using natural food ingredients for the taste (kelp, anchovy, mushroom, etc)’. 6. Necessities of political support encouraging sodium reduction were highest at ‘finding low-sodium recipes for school foodservice’, and ‘developing low-sodium food for institutional food service’. The rest rated highest from lowest were ‘encouraging education about sodium targeted students and parents’, ‘supplying booklets about low-sodium menus’, and ‘promoting sodium reduction in training for school officials (principals, vice principals)’.
