This study has investigated levels of awareness and actions taken about sodium reduction in school meals by conducting a survey on 222 dietitians working at elementary, middle, and high schools during April 11-23, 2014. Approximately 75% of dietitians were well aware of recommended daily allowance of sodium, but only 43.70% of them knew how much sodium students take from school meals, and they recognized that out of menus, stew·soup and meat·processed food are among the highest in sodium. For the purpose of raising awareness about sodium reduction among students, a string of actions were being taken including holding events (28.83%), nutrition education(81.53%) and nutrition consultation(15.32%). As for the events to reduce sodium intake, ‘day without a soup(79.70%)’ was one of the most sought-after ways, followed by school newsletters to the students’ families, website notice and direct education. In particular, everyone who has responded that they are directly teaching students turned out to be dietitians working at elementary schools. In addition, 79.73% of dietitians responded that they are developing menus and cooking to reduce sodium. The latter includes having a low-salt diet, blanching ham·fish cake as a pretreatment, reducing processed foods, providing more fruits, reducing broth in soup·stew, seasoning after cooking and using natural seasoning. 31.98% at least once used low-sodium products and most of them responded that lack of information, a limited variety in products and high price are the reasons they do not often use them. 87.3% did not notify students of sodium amount in school meals, and as a result they do not understand how much sodium is used in food which is not compulsory. The results of this study reveal that awareness about sodium reduction and level of action is relatively high when respondents are dietitians who are working at elementary schools and had more experiences.
