연어는 미국 뉴욕 타임지에서 슈퍼푸드(superfood)로 소개되고 있을 정도로 영양 및 건강 기능적으로 우수한 수산자원이어서 미국과 유럽 같은 서구에서 즐겨먹는 대표적인 고급 수산자원이다. 이로 인하여 연어의 전 세계 생산량은 2016년 3,927 천M/T으로 세계 수산물 생산량(101,644 천M/T)의 약 38.6%를 차지하고 있으며, 최근 10년 동안 2016년(2015년 대비 약 1% 감소)을 제외하고 2,109-4,001 천M/T으로 매년 꾸준히 생산되고 있다. 이러한 연어의 고급 이미지와 소비현상은 국내 시장에도 적용되어 국내 연어 생산량은 2016년 기준 3 천M/T으로 미미하지만 수입량은 1997년 대비 28 천M/T으로 급격한 증가 패턴을 나타내고 있다. 국내에서 연어는 대부분이 조미훈제품 등으로 가공되어 유통(1.3 천M/T, 60.6%)되고 있으며, 이 때 두부, 내장 및 frame 등과 같은 가공 부산물이 다량 발생되고 있다. 하지만, 이들 수산가공 부산물은 단백질, 지질, 효소 및 기타 맛 성분 등과 같은 유효 성분을 다량 함유하고 있으나 현재 이들의 대부분은 폐기되어 환경오염의 주원인 물질이 되고 있다. 따라서, 환경 오염원의 근원적 제거, 수산자원의 고도 이용에 의한 수산가공산업의 활성화 등을 위하여 수산 가공 부산물의 효율적 이용이 절실히 요구되고 있다. 본 연구에서는 고급 수산자원인 연어 자원의 고도 이용과 고부가 가치화를 위한 일련의 연구로 연어가공 부산물인 프레임(frame, 필렛 제조 시에 발생하는 두편의 육편 이외에 중골 부위) 육을 활용한 고품질의 연어 어묵을 제조하고자 하였다. 즉, 본 연구에서는 연어 프레임육을 활용하여 고품질 연어 어묵의 제조를 위하여 1) 연어 어묵의 품질 및 위생을 고려한 가공공정 최적화, 2) 이의 표준화를 위한 위생안전관리 기준(안) 제시 및 현장적용, 3) 최적 공정에 의하여 생산한 연어 어묵의 품질 특성에 대하여 살펴보았다. 이 때 연어 어묵은 속의 경우 연어 프레임육과 실꼬리돔 연육으로 배합한 것을, 그리고 겉의 경우 실꼬리돔 연육 만으로 가공한 것으로 하였다. 반응표면분석법(response surface methodology, RSM)을 활용하여 연어 어묵의 가공 공정 최적화를 시도하였다. 연어 어묵의 속과 겉의 적정 두께는 각각 1.6 cm 및 0.8 cm로 하는 것이 적절하였고, 이의 충진을 위한 적정 부품은 스테인리스 스틸 재질로 하였으며, 내부에서 작은 직경(1.6 cm)의 관을 충진기에 직접 연결하여 배합연육을 공급하게 하되, 큰 직경(1.6 cm)의 관은 한쪽을 막고, 외부에서 배합연육을 공급할 수 있도록 하여 제작하였다. 이들 장치를 활용하여 표면반응분석법으로 살펴본 연어 어묵의 조직감 개선을 위한 최적 연육 배합 비율은 연어 연육 74.9% 및 실꼬리돔 연육 25.1%이었고, 색 개선을 위한 최적 색소 배합 비율은 전체 배합 연육에 대하여 파프리카 색소와 토마토 색소의 경우 각각 0.06% 및 0.03%이었다. 연어 어묵의 안전성을 검증하기 위하여 원료(연어) 및 어묵에 대하여 국내 기준 규격(식품공전 및 KS 산업규격) 및 국외 기준 규격(FDA, 중국, 일본, CODEX, 베트남 및 EU)을 참고하고, 이들과 각 공정을 모니터링을 하여 원료, CCP (튀김: CCP-1B 및 금속검출기: CCP-2P), 최종 제품(연어 어묵) 및 생산 환경관리 조건에 대하여 위생안전관리 기준(안)을 제시하였다. 연어 어묵 제품의 위생안전관리 기준(안) 중 주원료인 연어는 11개 항목〔1) 성상 적합, 2) 이물 불검출, 3) 히스타민 200 mg/kg이하, 4) 벤조피렌 2 ㎍/kg 이하, 5) PCBs 0.3 mg/kg 이하, 6) 납 0.5 mg/kg 이하, 7) 카드뮴 0.1 mg/kg 이하, 8) 총수은 0.5 mg/kg 이하, 9) 134Cs+137Cs 370 Bq/kg 이하, 10) 131I 300 Bq/kg 이하, 11) 보관온도 –18℃ 이하]을. 연어 어묵 제품 제조공정의 CCP 중 튀김(CCP-1B) 공정의 경우 3개 항목〔1) 대장균 음성, 2) 1차 튀김온도 및 시간 각각 145.0±3.0℃ 및 2.5분, 3) 2차 튀김온도 155.0±3.0℃, 시간 1.5분〕을, 금속검출(CCP-2P) 공정의 경우 1개 항목〔1) Fe 1.5 mmΦ, STS 2.0 mmΦ 이상 불검출〕을, 최종 생산제품은 15항목〔1) 성상 적합, 2) 이물질 적합, 3) 대장균군 음성 4) 히스타민 200 mg/kg 이하, 5) 산가 2.5 mg/KOH/g 이하(튀김유에 한함), 6) 과산화물가 50 meq/kg 이하(튀김유에 한함), 7) 보존료 2.0 g/kg 이하(소르빈산으로서), 8) 타르색소 불검출, 9) 벤조피렌 2.0 ㎍/kg 이하, 10) PCBs 0.3 mg/kg 이하, 11) 납 0.5 mg/kg 이하, 12) 카드뮴 0.2 mg/kg 이하, 13) 총수은 0.5 mg/kg 이하, 14) 134Cs+137Cs 370 Bq/kg 이하, 15) 131I 300 Bq/kg 이하〕을 제시하였고, 환경관리 조건은 7개 항목〔1) 공중낙하균 100 CFU/plate/15min, 2) 대장균군 음성, 작업자 손의 위생상태의 경우 3) 일반세균수 100 CFU/100 cm2이하, 4) 대장균군 음성, 5) Staphylococcus aureus 음성, 작업도구의 위생상태의 경우 6) 일반세균수 100 CFU/100 cm2이하, 7) 대장균군 음성 등〕을 제안하였다. 이들 연어 어묵의 위생안전관리 기준(안) 항목은 현장 적용한 결과 모두 기준(안) 이하거나 적합한 것으로 나타났다. 따라서, 연어 어묵의 원료, CCP 및 최종제품에 대하여 제시한 위생안전관리 기준(안)은 연어 어묵 제품의 안전성 확보를 위한 위생안전관리 기준으로 적절하다고 판단되었다. 이상에서 검토한 반응표면분석법(response surface methodology, RSM) 및 위생안전관리 기준(안)을 활용하여 최적화한 연어 어묵의 가공 공정은 다음과 같다. 연어 어묵의 제조를 위한 속 부위용 연어육은 프레임 육을 반해동하고, chopper로 마쇄한 후 수세, 탈수하여 제조하였다. 이어서, 수세 연어육(58.70%)에 부원료[실꼬리돔 연육(19.69%), 다진 당근(0.89%), 다진 대파(0.89%), 맛술(0.89%), 설탕(0.71%), 소금(0.71%), MSG (0.53%), 감자전분(3.56%), 수용성 파프리카 색소 5만수(0.04%), 수용성 토마토 색소(0.02%), 얼음물(13.35%)]를 첨가하여 stephan mixer에서 혼합하여 제조하였다. 이어서 바깥쪽 부위용 배합 연육은 해동 실꼬리돔 연육(56.97%)에 부원료[밀가루(5.70%), 감자전분(5.70%), 소금(0.97%), 자일로스(0.11%), 중합인산염(0.11%), 소르브산 칼륨(0.17%), 글루코노델타락톤(0.17%), 탄산칼슘(0.11%), MSG (0.28%), 사카린(0.02%) 및 정제수(29.67%)]를 첨가하여 stephan mixer에 넣고 혼합하여 제조하였다. 연어 어묵은 제조 된 어묵 제조용 반죽들을 각각 충전기(stuffer)에 넣고 성형, 이단 튀김 및 냉각하여 제조하였다. 최적 공정으로 제조한 연어 어묵 100 g 당 일반성분 함량은 수분 71.1 g, 조단백질 12.1 g, 조지방 2.0 g, 회분 1.7 g 및 탄수화물 13.1 g이었고, 이를 토대로 계산한 에너지는 122.7 kcal이었으, pH는 7.17이었다. 시작품의 관능 특성을 대조구(시판 어묵)의 그것과 와 비교한 결과는 다음과 같다. 시작품이 대조구에 비하여 전자혀를 이용하여 측정한 맛강도는 감칠맛, 단맛 및 신맛의 경우 높았고, 짠맛 및 쓴맛의 경우 낮았으며 휘발성염기질소 함량은 차이가 없었고, 냄새강도는 높았다. 연어 어묵 100 g 당의 총 아미노산 함량은 11.64 g이었고, 주요 아미노산은 glutamic acid와 aspartic acid이었다. 연어 어묵의 무기질 함량은 대조구에 비하여 칼슘의 경우 유의적인 차이가 없었고, 인, 마그네슘의 경우 높았으며, 칼륨의 경우 낮았다. 인의 경우 한국인 남녀(6세 이상)가 섭취하는 경우 1일 인 권장섭취량에 대하여 남자가 10.5∼21.1% 범위, 여자가 10.5∼23.0% 범위에 해당하였다. 연어 어묵 100 g 당 지방산 총함량은 1,833 mg이었고, 주요 지방산은 다가불포화지방산인 18:2n-6 (730 mg, 39.8%) 및 일가불포화지방산인 18:1n-9 (360 mg, 19.6%) 등이었으며, 대표적인 오메가-3 지방산인 EPA (eicosapentaenoic acid, 20:5n-3)와 DHA (docosahexaenoic acid, 22:6n-3)의 함량은 각각 39 mg (2.1%) 및 122 mg (6.7%)이었다. 이상의 결과들로 미루어 보아, 저부가가치의 연어 가공부산물을 활용하여 제조한 연어 어묵은 시판 어묵에 비하여 관능적으로 우수하였고, 무기질(인과 마그네슘), 아미노산 및 오메가-3 지방산이 풍부하여 영양 및 건강 기능학적으로도 우수하였으며, 위생안전관리 기준(안)도 구축되어 어묵 시장에서 충분히 경쟁력이 있을 것으로 판단되었다.

Salmon is an excellent nutrition and health functional fishery resource that has been introduced as superfood in New York Times and representative high-grade fishery resources as preferred in Americans and Europeans. The salmon harvested 3,927,000 M/T in the world in 2016, accounting for 3.9% of the total worldwide fisheries harvest (101,644,000 M/T). With the exception of 2016, the salmon harvest has increased steadily every year over the recent decade, from 2,109,000 to 4,001,000 M/T (it decreased by 1% in 2016 compared with 2015). The high-end image and consumption of salmon is also applied to the domestic market, and the domestic salmon production is small at 3,000 M/T as of 2016, but imports are showing a rapid increase pattern of 28,000 M/T compared to 1997. Most of salmon in Korea is distributed with seasoned smoked products, etc. (11,300 M/T, 60.6%). During processing of salmon, a large amount of processing by-products, such as head, viscera and frame are generated. However, these by-products contain large amounts of proteins, lipids, mineral, enzymes, and other flavor ingredients. Most of the by-products are often underutilized or wasted, causing environmental pollution. Therefore, efficient use of fish processing byproducts should be required for the purpose of removing the source of environmental pollutants and activating the fish processing industry by highly utilizing fishery resources. As a series of studies for high utilization and high value added, this study was conducted to produce high quality fish (salmon) cake using frame meat (aside from two pieces of meat in the producing fillet) that is processing by-products of salmon. In this study, for the production of high quality fish (salmon) cake using salmon frame meat, 1) optimization of processing process considering quality and hygiene of fish (salmon) cake, 2) safety and sanitation management standard, 3) the quality characteristics of fish (salmon) cake produced by the optimum process were examined. In the processing, inner part of fish (salmon) cake was prepared by combining the salmon frame surimi with the golden threadfin bream surimi, outer part was used only the golden threadfin bream surimi. Processing process for fish (salmon) cake was optimized using a response surface methodology (RSM). The optimum thickness of the inside and outside of the fish (salmon) cake was 1.6 cm and 0.8 cm, respectively. The salmon harvested 3,927,000 M/T in the world in 2016, accounting for 3.9% of the total worldwide fisheries harvest (101,644,000 M/T). With the exception of 2016, the salmon harvest has increased steadily every year over the recent decade, from 2,109,000 to 4,001,000 M/T (it decreased by 1% in 2016 compared with 2015).
