The purpose of this study was to understand attitudes towards bitter flavor through sensory tests for healthy 20-30 age group in Korea and to understand the individual characteristics which modulate their preference. The study also investigated the different effects of bitterness liking on bitterness masking in model functional beverages, in order to highlight the significance of bitterness liking in developing such beverages. This study was composed of three parts. First, the cognitive abilities and genetic sensitivity of bitter taste perception of 157 subjects were identified through sensory tests. Personal characteristics such as demographic information and attitude toward health and taste also collected. Subjects were classified according to their attitude towards bitterness by examining preference and intensity of two bitter substances of quinine hydrochloride and ginseng extract solutions. Accordingly. this study investigates the effect of various personal characteristics on the classification of bitterness liking. Second, the stimuli interaction between bitter taste and red ginseng odor was examined.. For this purpose, subjects were asked to evaluated the preference and intensity of bitter taste and red ginseng odor to compare the changes of sensory responses according to the similarity of taste and odor in bitterness. Third, subjects examined the preference and JAR fitness of red ginseng model beverage prepared by adding ginseng extract, which is a functional substance, and two bitterness masking agents. The results of this study are as follows: First, cluster analysis on the preference responses yielded two distinct clusters: the “bitter disliker” cluster and the “bitter liker” cluster. Bitter dislikers had a pattern in which the preference was continuously decreased as the concentration of bitter substance increased. On the other hand, bitter likers had a significant increase in preference as bitterness increased. Across the same sample, preference for bitter flavor was significantly higher for bitter likers than bitter dislikers and awareness of bitterness intensity was lower. It was also verified that variables such as attitude toward health and taste as well as age and drinking habit, which influence attitude towards bitterness, could be useful explanatory variables to control bitter taste. Second, the addition of red ginseng odor to the ginseng extract solution increased overall preference for bitter flavor, which was attributed to the familiarity of the mixture positively affecting the overall flavor perception. On the other hand, there was no significant effect on bitterness intensity due to the contradictory impression of bitterness and sweetness of red ginseng odor. The intensity of the perceived red ginseng odor increased with the concentration of the bitter taste solution. Third, it was revealed that preference was significantly different according to bitterness liking in model beverages with different level of bitter functional ingredients and two masking agents. The bitter dislikers showed the highest preference for the samples with the lowest bitterness and the strongest sweetness due to low content of ginseng extract and high content of cyclodextrin and fructose. The bitter liker, on the other hand, preferred beverages with equally strong bitterness and sweetness. Reactions to bitterness masking were also different. The bitter liker cluster preferred samples with low content of bitter masking solution. With bitter dislikers, excessive bitter taste resulted in a decrease in the preference when the bitter functional ingredient was high.
