In this study, the antibacterial, hypertension, and diabetes-centered physiological activities of Chrysanthemum zawadskii extract and fermentation liquid were analyzed to confirm the potential as a health functional food. Also, based on the possibility, after establishing fermentation conditions to improve the palatability of Chrysanthemum zawadskii intake, it was intended to develop materials for the diversity of processed products. Through the survey on the overall perception and experience of Chrysanthemum zawadskii, the necessity of developing various processed products that can experience the intake of Chrysanthemum zawadskii was confirmed. In particular, the intake experience in the twenties was very low at 12.9%, and there was a very large difference from those in the fifties or older. In addition, factors that hindered Chrysanthemum zawadskii consumption were investigated as the unique bitter taste of Chrysanthemum zawadskii and lack of various products, which confirmed the need for various Chrysanthemum zawadskii processed products based on functionality. The antimicrobial activity of Chrysanthemum zawadskii extract using ethanol was found in the 5 strains (S. aureus, E. coli, P. aeruginosa, C. albicans) used in the experiment for Chrysanthemum zawadskii leaves in June, outposts collected in October, and Chrysanthemum zawadskii fermentation liquid, A. niger) did not exhibit antimicrobial activity. However, in terms of antioxidant activity, both Chrysanthemum zawadskii extract and fermentation liquid showed more than 50% of antioxidant activity compared to ascorbic acid. The extract and fermentation liquid of Chrysanthemum zawadskii proved the anti-diabetic effect through significant increases and decreases in weight, blood sugar, total cholesterol, blood lipids, and HDL of diabetic rats, but LDL levels did not show a positive effect. In the hypertension suppression experiment, the hypertension suppression effect was also confirmed through significant increases and decreases in body weight, NO production, cholesterol, blood lipids, and HDL in the hypertension inducing group and the Chrysanthemum zawadskii intake group after hypertension induction. However, as in the diabetes suppression experiment, the LDL level did not show a positive effect, but it is judged that the value was different from the expected value due to the short period of the experiment, and it is considered that it will need to be re-verified by further experiments in the future. As shown in the preference survey, bitter taste, which accounts for a large portion of the factors that hinder the positive perception of Chrysanthemum zawadskii, is a very important part for spreading Chrysanthemum zawadskii consumption. In order to solve this problem, this study used the method of fermentation, and it was confirmed through sensory evaluation that fermentation by adding angelica and licorice was most effective in improving bitter taste. Chrysanthemum zawadskii fermentation liquid has been shown to have a significant effect in improving diabetes and hypertension while improving palatability, which was previously bad, showing high potential as a raw material for future health functional foods. Therefore, it is expected that research that can be used as a health functional material and analyzing physiological activity indicators in detail through continuous research will be of value.
