This study was carried out to identify the effect of Hard Seltzer on the surface of tooth enamel, which is a new liquor consumption trend. By measuring the pH of 12 Hard Seltzer products on the market in Korea, one (Kloud Hard Seltzer Mango, group 4) was selected as the final experimental group. Beer(Kloud original, group 3) was selected as group 3, mineral water (Jeju Samdasoo, group 1) was selected as the negative control group and carbonated drink (Coca-Cola, group 2) was selected as the positive control group. A total of 40 specimens with 10 in each group were prepared using bovine teeth. In order to examine the surface aspect of the tooth enamel, a healthy specimens were immersed into the experimental beverages for 30 minutes. The surface hardness (VHN) of the specimen before and after immersion was measured. And the surface aspect was observed through a scanning electron microscope (SEM), and the following results were obtained.
1. The average pH of the 12 Hard Seltzer products measured in this study was 3.46±0.01 after stirring and 3.51±0.01 before stirring. The average titratable acidity was 0.21±0.19 mL at pH 5.5, 0.31±0.25 mL at pH 7.0 after stirring and 0.26±0.17 mL at pH 5.5, 0.78±0.23 mL at pH 7.0 before stirring. 2. The pH of each group was 2.55±0.01(group 2), 3.31±0.01(group 4), 4.41±0.01(group 3), 7.92±0.03(group 1). The titratable acidity was 0.09±0.01 mL(group 2), 0.10±0.01 mL(group 3), 0.11±0.01 mL(group 4) at pH 5.5, group 2 and 4 were same (0.15±0.01 mL) and group 3 was larger than the others at pH 7.0. 3. As a result of measuring the surface micro-hardness (∆VHN) of bovine teeth before and after immersion of the experimental beverages, there was no significant difference in group 1(P>0.05). Group 2, 3 and 4 showed significant difference(P<0.05) and weakened the surface micro-hardness (∆VHN) of bovine teeth. Comparing the difference in the surface micro-harness (∆VHN) before and after immersion of the experimental beverages, there was a significant difference between group 1(9.20±34.82), 3(20.20±6.52) and group 2(82.90±18.08), 4(67.10±18.27) (P<0.05). 4. Scanning electron microscopy findings of the surfaces of the specimen revealed hardly damaged surface in group 1, the negative control group. Group 3 was significantly less damaged than that of group 2 and 4. Group 4 immersed in the Hard Seltzer showed a much damaged surface similar to group 2, a positive control group. Based on the foregoing results, there was a risk of tooth corrosion due to low pH when drinking Hard Seltzer. The degree was significantly higher than that of beer and there was no significant difference from carbonated drinks using positive control group. Therefore, it is necessary to provide dietary guidance so that consumers can be aware of the risk of tooth erosion and be cautious about oral health care when drinking Hard Seltzer.
