In order to obtain the fundamental factors influencing on gelation of Alaska pollack meat paste during processing, thermograms of protein using differential scanning calorimetry (DSC) were investigated. The thermal transition temperatures of Alaska pollack meat paste due to protein denaturation were $38^{\circ}C,\;49^{\circ}C,\;55^{\circ}C\;and\;77^{\circ}C$, but those temperatures were changed to $35^{\circ}C,\;45^{\circ}C,\;50^{\circ}C\;and\;73^{\circ}C$ after adding salt($3\%$ NaCl).
