본 연구 결과 한국 비흡연 여자 노인의 carotenoid bioa- vailability에는 연령, 식이 섬유소 섭취량과 운동이 영향을 미치는 것으로 나타났다. 모든 종류의 식이 섬유소는 비교적 lycopene과 lutein의 흡수를 저해하며, 수용성 식이 섬유소는 -carotene의 흡수를 비교적 감소시키는 것으로 연구되고 있다(Riedl 등 1999).
본 연구에서 규칙적 운동 여부와 연령 증가는 lycopene biomarkers에 변화를 가졌왔다. 이는 lycopene이 caro tenoid 중 가장 강력한 항산화 물질임 (Clinton 1998)을 고려할 때, 규칙적 운동과 연령 증가가 carotenoid bioavaila- bility에 미치는 효과는 매우 중요하다.
본 연구의 결과 비흡연 여자 노인들의 carotenoid bioa- vailability는 혈장 지질 함량보다 식이 섬유소 섭취량에 의해 크게 영향을 받는 것으로 나타났다 따라서 혈장 carotenoid 의 농도를 식이 섬유소 섭취량으로 보정한 값을 carotenoid biomarkers로 표현하기로 한다.
그러나 이미 보고된 성인 대상 연구(Brady 등 1996; Rock 등 1999; White 등 2001)와 10~15세 어린이 대상 연구 (Herbeth 등 1999)에서는 혈액 carotenoid 및 지용성 영양소의 농도는 그들의 운반체인 cholesterol을 포함하여 지질의 농도에 영향을 받는다고 보고하고 있다. 비흡연 여자 노인을 대상으로 실시한 본 연구의 결과를 통해 노인의 carotenoid bioavailability는 혈장 지질 농도보다는 또 다른 요인에 의해 영향을 받을 것으로 여겨진다. 또한 caro tenoid 및 다른 지용성 비타민의 흡수를 증가시키기 위해 필요한 지질의 양은 식사당 3~5 g이 필요하며, 그 이상의 식이 지방을 과도히 섭취할 경우 반드시 영양소의 bioavailabi- lity를 증가시키는 것은 아니다(Roodenburg 등 2000).
식이 섬유소 섭취량을 보정하여 식품과의 상관관계를 살펴 본 결과(Table 10) 혈장 carotenoid 농도와 관련성이 있는 것으로 나타났다. 채소와 혈장 lutein + zeaxanthin,lycopene, ^-carotene 농도와의 상관관계는 각각 r = 0.

연령 중가에 따라 3-carotene의 섭취량이 유의적으로 감소한 것으로 나타났으며, 또한 0 -carotene biomarkers도 연령 증가에 따라 감소하는 것으로 나타났다. 연령 증가에 따라 lutein, zeaxanthiii과 lycopene의 섭취량에는 를 보이지 않았으나, 두 군의 lutein + zeaxanthin biomarkers와 lycopene biomarkers는 연령 증가에 따라 유의적으로 감소한 것으로 나타났다. 따라서 연령은 carotenoid biomar- kers에 크게 영향을 미치는 인자로 여겨진다
조사 대상자들의 carotenoid의 섭취량은 a - carotene 0.50 mg, lutein 1.51 mg, zeaxanthin 25.95 mg, lycopene 356.39 mg 그리고 6-carotene 3.32 mg였다.
