In this study, we investigated the names and various types of "kwa-jung" along with their recipes and ingredients occurring in Korean cookbooks published before the 17th century. The kwa-jungs were classified into 7 groups including Yoomilkwa, Yookwa, Dasik, Junkwa, Kwapyun, Yutganjung and Dang. 17세기 이전 조리서를 통하여 과정류를 분석해 본 결과 처음보다 과정류의 종류가 다양해졌고 사용된 재료도 점점 많아진 것을 알 수 있다. 또한 조리과정은 현재에 비해서는 많이 복잡한 과정으로 되어있으나 큰 변화는 없었다.
