In addition, the data of 10,495 menus for the third week of December 2010 and March, July, October 2011 from 557 elementary, middle, and high school were analyzed by school grade, area, and province. The results showed that there were no specific and detailed guidelines for menu planning in terms of traditional food culture in most of the guidelines for school lunch programs. However, the basic traditional menu composition was maintained in school lunch menus. The percentage of menus including rice and Kimchi was 97% and 95%, respectively, and that including Korean soup was about 72%. However, the frequency of serving Namul, Korean seasoned vegetable dish, accounted for only about 52% of the menus. The percentage of the menus following the traditional food group pattern including such five food groups as rice, Korean soup, Kimchi, Namul, and optional Korean side dish was only about 35%. The percentage of the menus following the traditional food group pattern excluding Namul from the five food groups accounted for about 30%. The traditional food group score, calculated by allocating 1 point to each of the five food groups was 4.06 out of 5 points on average. Elementary schools and schools in rural area and in Jeolla-do province served traditional menus more frequently. In conclusion, school lunch programs need to consider establishing traditional foods-based standards and relevant guidelines for school lunch, particularly for high schools and schools in urban areas and in some provinces.

문제 정의
이에 본 연구에서는 전통 음식문화 측면에서 초·중·고등학교 급식 식단을 평가하기 위하여 전통음식군패턴 분석 기법을 이용하여 식단의 구성을 분석하였으며, 또한 학교급(초/중/고), 지역(도시/농촌), 도(서울/경기도/강원도/충청도/전라도/경상도/제주도)에 따라 비교하고자 하였다.
제안 방법

성능/효과
1. 전국 16개 시·도 교육청의 학교급식 운영지침의 내용을 분석한 결과, 경상남도와 광주시, 전라남도, 전라북도 교육청을 제외한 대부분의 교육청의 운영지침에는 식단작성과 관련한 세부항목이 포함되어 있지 않거나 포함되어 있다고해도 그 내용이 구체적이지 않았다.
2. 식단의 구성에 있어 각 음식군의 상대적인 중요도를 평가한 결과, 밥류를 제공한 식단이 전체의 약 97%로 학교급식 식단의 대부분을 차지하고 있었으며, 빵류를 포함한 식단은 약 4%, 면 및 만두류를 포함한 식단은 약 10% 수준이었다.

장기적으로는 영양소 기준과 병행하여 적용할 수 있는 전통식단 기준이 마련되고 더불어 실질적인 질적 평가기준이 적용된다면, 학교급식을 통한 보다 효율적인 전통 음식문화의 계승과 발전이 가능할 것으로 생각된다. 단, 이를 위해서는 영양학적으로도 바람직한 전통식단에 대한 체계적인 연구가 지속되어야 하며, 이를 바탕으로 학교급식에 적합한 우수한 전통식단의 개발이 이어져야 할 것이다.
그러나 학교급식으로 제공되는 떡이나 한과류에 대한 학생들의 기호도가 높은 편이므로(Kim 등 2011)학교급식에서 과자나 당류 대신 떡이나 한과를 포함시키려는 노력이 필요할 것이다. 더불어 학교급식에 적합한 떡이나 한과 메뉴의 개발도 함께 이루어져야 할 것이다.
