trehalose는 어디에서 처음 발견되었는가? | 일본에서 대량생산 방법이 개발되어 전분의 노화를 연장하는데 사용하는 당 중의 하나인 trehalose는 Wiggers가 1832년에 호밀의 맥각에서 처음 발견한 이래(3), 다양한 종류의 식물, 조류, 곰팡이, 효모, 세균, 곤충, 무척추 동물 등에서 발견되었으며, 효모는 섭취한 당을 이용하여 세포내 효소가 trehalose를 생합성하만든 떡의 노화억제(11), 포도당과 trehalose로 삼투적 탈수 시 사과 조직의 구조, 레올로지, 수분이동 등에 미치는 영향(12), 냉동 생지 제조시 trehalose가 빵효모의 냉동장해에 미치는 영향(13), trehalose가 빵의 노화에 미치는 효과(14) 등이 있으나 빵용 반죽 레올로지에 미치는 연구가 필요한 실정이다. 따라서 본 연구에서는 여러 가지 기능적 특성을 가진 trehalose 를 제빵 분야에 이용하고자 빵용 밀가루 대비 trehalose를 0, 2, 4, 6% 첨가하여 반죽의 rheology에 미치는 영향으로 Farinograph, Viscograph에 의한 pasting 특성, 반죽의 pH 및 총산도, 효모에 의한 발효팽창력 등의 반죽 특성을 조사하여 향후 빵 제조에 활용 하고자 하였다. |
