원유상태로 수입하는 대부분의 수입기름과 달리 팜기름의 수입 형태는? | 우리나라는 식용 유지 자원이 풍부하지 않아 해마다 많은 양의 유지를 수입하고 있으며, 그 중 팜기름, 콩기름, 카놀라기름이주를 이루고 있다(1). 대부분의 수입 기름은 원유(crude oil) 상태로, 우리나라에서 정제공정을 거쳐 식용유지로 전환되지만, 팜기름은 생산지에서 간략하게 정제공정을 거쳐 수입된 후 우리나라에서 탈색과 탈취공정을 거쳐 식용유지로 전환된다. 탈색공정에서는 주로 색소, 과산화물, 비누, 금속이온을, 탈취공정에서는 알데하이드, 케톤 등 비정상 향미 화합물(off-flavor compounds)과함께 잔류 색소, 자유지방산, 고분자 화합물 등을 제거한다(2,3). |
