In case of fishery products, frozens made of 100% of raw material contained the highest level of total mercury and methyl mercury. The weekly intake of total mercury and methylmercury was calculated in 4.72% and 5.24% of Provisional Tolerable Weekly Intake (PTWI) respectively. This study showed that the weekly intake of methylmercury from Deep-sea Fish, Tuna and Billfish was less than the PTWI recommended by the Joint FAO/WHO expert committee on food additives.

제안 방법
메틸수은 분석은 기체크로마토그래피 전자포획검출기(GC-µECD, Agilent Technology GC System 7890N, Agilent, Palo Alto, California, USA)를 사용하여 분석하였다. 제조된 표준용액을 외부검량선으로 사용하여 정량하였고, 회수율을 측정하기 위해 표준용액을 각각 희석하여 분석하였다.
수은 분석은 가열기화 금아말감법의 원리로 분석을 하는 수은분석기(MA-3000, Nippon Instruments Corporation, Tokyo, Japan)를 사용하여 측정하였다. 균질화한 시료 약0.
대상 데이터
시료는 냉장상태로 유통되는 것과 냉동상태로 가식부가 절단되어 판매되는 제품으로 나눠 수거되었으며, 시료로 수거된 검체는 가식부인 근육부분만 잘라 균질기에서 1 kg 이상 균질화하여 −20℃에서 보관하며 시료로 사용하였다. 어류가공품 역시 식품공전 검체 채취방법에 따라 2015년 5월에서 11월 까지 경기도내 대형마트에서 다랑어류를 주원료로 하는 통조림 30건, 조미식품 6건, 레토르트 2건, 냉동식품 3건, 건포류 3건등 총 44건을 시료로 사용하였다.
