현재 국내에서 UV-C 조사와 mild heat을 병합 처리하여 후춧가루의 미생물적 안전성을 파악한 연구는 미흡한 실정이다. 따라서 본 연구에서는 후춧가루의 안전성과 저장성을 확보하기 위해 물리적인 방법인 UV-C와 mild heat을 단일 처리 및 병합 처리하여 이에 의한 미생물 사멸효과 및 관능적 품질 변화를 조사하였다.
