When manufacturing Alaska pollack Gadus chalcogrammus surimi for 3D printing, it examined the characteristics of physical properties and sensuality by adding polysaccharides alginic acid [0, 1, 2, 3% (w/w)]. As a result of the color value of surimi by adding alginic acid, it showed that the lightness of heated surimi containing 2% (w/w) alginic acid was the highest and ∆E value was the lowest. In the changes in physical properties, the heated surimi of 3% (w/w) alginic acid content showed the lowest values of hardness, springiness, cohesiveness, gumminess, chewiness and resilience, but the highest adhesiveness. After 7 days of cold storage, the hardness, gumminess, and chewiness of heated surimi with an alginic acid content of 2% (w/w) were significantly higher, and fried surimi was also the same. In the results of the sensory evaluation, there were significant differences according to the alginic acid content in hardness and fishy smell, and as the alginic acid content increased, it felt more fishy smell, resulting in poor preference.

따라서 본 연구에서는 3D 프린팅을 위한 명태(Alaska pollack Gadus chalcogrammus) 수리미 제조 시, 수리미의 물성을 조절하기 위하여 다당류 알긴산[0, 1, 2, 3% (w/w)]을 첨가하였고, 이에 따른 물성과 기호성 등의 특징을 조사하였다. 또한 알긴산첨가에 의한 명태 수리미의 3D 프린팅 카트리지로서의 이용 가치를 평가하였다.
제안 방법
관능평가는 잘 훈련된 7명의 panel (부경대학교 식품공학과 남 4명, 여 3명. 21-25세)를 선정하여 평가 대상 수리미 겔의 색(color), 냄새(smell), 비린내(fishy smell), 맛(taste), 이미(abnormal taste), 조직감(texture), 경도(hardness), 탄력성 (springiness) 및 종합적 기호도(preference) 등 9가지 항목을 7 점 척도로 실시하였다. 7점 척도 중 1점은 매우 나쁘거나 낮음 (extremely bad or slight), 7점은 매우 좋거나 강함(extremely good or much)으로 표시하게 하여 관능 평가를 실시하였다.
2% (w/w), 설탕(CJ Cheiljedang Co. Ltd., Seoul, Korea) 1.5% (w/w), 인산염 혼합제제(MSC Co., Ltd., Kyeongnam, Korea) 0.5% (w/w)를 순차적으로 넣고 각 농도별 알긴산 0, 1, 2, 3% (w/w)을 각 시료에 첨가하여 약 15분간 혼합하였다. 혼합 후 충진기(DICK 15LB, DICK, Germany) 에기포가 들어가지 않게 수리미를 넣고 PVDC (polyvinylidene- chloride) casing에 충진 하였다.
이후 5℃에서 30분간 냉각시켜, 이를 가열 수리미 시료로 사용하였고, 해당 시료를 약 180℃ 기름에 5 분간 튀겨, 튀김 수리미 시료로 제조하였다. 또한 PVDC casing 에 충진한 알긴산 함량 별 명태 수리미를 4℃ 냉장고에 7일간 보관한 후, 가열 및 튀김 과정을 거쳐 수리미의 냉장 보관에 따른 물성 및 기호성 등을 평가하였다.
따라서 본 연구에서는 3D 프린팅을 위한 명태(Alaska pollack Gadus chalcogrammus) 수리미 제조 시, 수리미의 물성을 조절하기 위하여 다당류 알긴산[0, 1, 2, 3% (w/w)]을 첨가하였고, 이에 따른 물성과 기호성 등의 특징을 조사하였다. 또한 알긴산첨가에 의한 명태 수리미의 3D 프린팅 카트리지로서의 이용 가치를 평가하였다.
물성 측정은 texture meter (T1-AT2, SMS Co., Tokyo, Japan) 를 이용하여 시료의 견고성(firmness), 경도(hardness), 부착성 (adhesiveness), 탄력성(springiness), 응집성(cohesiveness), 검성(gumminess), 씹힘성(chewiness) 및 복원성(resilience)을 측정하였다. 알긴산 함량 별 가열 수리미와 튀김 수리미를 지름 3.
알긴산 함량에 따른[0-3% (w/w), 1% (w/w) 간격] 명태 수리미의 저장성을 평가하기 위해 저장 0일차 튀김 수리미와 casing 충진 상태로 4℃에서 7일간 냉장 보관 후 튀긴 수리미의 물성 변화를 확인하였다(Table 3). 저장 0일차 튀김 수리미의 경우, 가열 수리미와 마찬가지로 알긴산 함량에 따라 경도, 응집성, 검성, 씹힘성 및 복원성이 유의하게 감소되어 알긴산 함량 3% (w/w)에서 각각 321.
대상 데이터
본 실험에서 사용된 냉동 수리미는 KA급 명태(Alaska pollack G. chalcogrammus) 수리미로 KOREAN SEAFOOD사 (Busan, Korea)에서 구입하였다. -30℃ 이하에서 냉동 보관 중인 명태 수리미를 약 4℃에서 냉장 해동시킨 후 가로×세로×두께를 각각 5 cm 큐브로 작게 잘랐다.

9.3, SAS Institute, Inc., Cary, NC, USA)을 이용하여 실험 처리된 값의 평균값을 분산분석 한 후, Duncan's multiple range test 법으로 P<0.05 수준에서 항목 간의 유의적인 차이를 검정하였다.
성능/효과
7일간 냉장 저장 후 가열한 수리미의 알긴산 함량에 따른 물성 변화를 확인한 결과, 2% (w/w) 알긴산 함량 수리미의 경도가 2264.4, 검성 1920.2, 씹힘성 1835.1로 유의하게 가장 높게 나타났다. 그러나 1% (w/w)와 3% (w/w) 알긴산 함량군의 경우, 무첨가군과 비교하여 그 값들이 약간씩 감소함을 보였다.
73으로 가장 낮은 값을 보였다. 이에 따라 본 연구에서는 알긴산 함량에 따른 명도, 황색도 및 ∆E 값에서 냉장 저장 후, 비슷한 경향을 보이는 것으로 확인된 바, 수리미의 색도에 있어서 알긴산 첨가가 저장성에 크게 영향을 미치지 않는 것으로 사료된다.
알긴산 함량에 따른[0-3% (w/w), 1% (w/w) 간격] 명태 수리미의 저장성을 평가하기 위해 저장 0일차 튀김 수리미와 casing 충진 상태로 4℃에서 7일간 냉장 보관 후 튀긴 수리미의 물성 변화를 확인하였다(Table 3). 저장 0일차 튀김 수리미의 경우, 가열 수리미와 마찬가지로 알긴산 함량에 따라 경도, 응집성, 검성, 씹힘성 및 복원성이 유의하게 감소되어 알긴산 함량 3% (w/w)에서 각각 321.3, 0.7, 222.3, 183.5, 0.3으로 확인되었다.
저장 7일 후, 가열 수리미의 명도는 저장 0일차와 마찬가지로 알긴산 함량 2% (w/w)에서 84.15로 유의하게 가장 높은 값을 보였고, 적색도와 황색도는 알긴산 함량 3% (w/w)에서 각각 0.16과 7.05로 유의하게 가장 높은 값을 나타냈다. ∆E 값은 저장 0일차와 마찬가지로 무첨가군에서 24.
0으로 유의하게 가장 높은 값으로 확인되었다. 한편 알긴산 함량에 따른 색도의 변화(Table 1)에서 알긴산을 수리미에 혼합함으로서 명도는 증가하고 ∆E 값은 감소하는 경향을 확인하였다. 따라서 알긴산의 첨가가 색도에 있어 수리미의 품질을 향상시킬 뿐만 아니라, 가소성과 점착성을 지닌 3D 프린팅 카트리지로 활용 수 있을 것으로 여겨진다.
후속연구
한편 알긴산 함량에 따른 색도의 변화(Table 1)에서 알긴산을 수리미에 혼합함으로서 명도는 증가하고 ∆E 값은 감소하는 경향을 확인하였다. 따라서 알긴산의 첨가가 색도에 있어 수리미의 품질을 향상시킬 뿐만 아니라, 가소성과 점착성을 지닌 3D 프린팅 카트리지로 활용 수 있을 것으로 여겨진다.
