배추김치와 동치미의 제조 과정 중 화학적, 물리적, 관능적 품질 특성의 변화를 측정하였다. 배추 김치는 절임과 발효과정으로 나누어 특성을 측정하였으며 동치미는 양념을 첨가한 경우와 안한 경우로 나누어 발효시켰다. 4-35℃의 범위에서 제조하면서 측정한 품질 특성은 김치액과 동치미 담금액의 pH, 총산도, 환원도, 유기산, 점도, 탁도 및 색을 그리고 배추나 무우는 견고성을 측정하였으며 냄새, 맛, 텍스쳐에 대한 성질을 평가하였다. 그 결과 배추김치에 대하여는 절임시 배추내부에의 소금 침투 속도는 온도와 소금농도 (5-15%)가 늪을 수록 증가되었으며 침투 속도의 증가율은 온도나 소금농도가 증가되면서 감소하였다. puncture test로 측정한 배추의 경도는 절임 초기에 현저히 감소하였으며 발효과정 중에는, pH4.2-4.3에 도달할 때까지는 감소되다가 그 후 약간 증가하였다. 절임액의 점도는 발효에 의하여 약간 증가하였다. 한편 pH의 감소나 총산도의 증가는 이들의 변화 경향에서 초기, 중간, 최종 단계의 3단계로 구분할 수 있었으며 중간 발효 단계에서 계산된 활성 에너지는 각각 15.67Kcal/mole이었다. 김치액의 Hunter'L' 값은 약간씩 증가하였고 색은 발효가 진행됨에 따라 연한 녹청색으로 변화하였다. 관능적 품질의 평가 결과 pH4.0 부근에 도달할 때까지 상큼한 맛과 냄새 및 사각사각한 조직감이 증가하다가 그 후 감소하였으며 군덕냄새와 맛은 급격히 증가하였다. 동치미의 발효는 발효시간이 경과함에 따라 담금액의 소금농도가 감소하였으며 소금농도와 발효시간과의 관계는 상관계수가 0.79-0.96인 직선적인 관계를 보여주었다. 발효온도와의 관계에서 계산된 소금농도 감소의 활성에너지는 양념첨가시 8.99Kcal/mole, 비첨가시 8.01Kcal/mole이었다. 그리고 pH의 감소와 총산도의 증가속도는 발효온도가 높을수록 더 증가하였으며 환원당과 비휘발성 유기산은 발효가 진행됨에 따라 증가되었다. 절임액의 점도와 고형분은 발효에 의하여 증가하는 반면 무우의 경도는 발효 2일경까지 급속히 감소하였고 Hunter'L'값과 탁도는 지속적으로 증가하였다. 한편 동치미의 관능적 성질은 발효과정중 생무우 냄새와 생무우맛은 감소하는 반면 신냄새와 신맛은 증가하였으며 또한 군덕내와 맛은 25-35℃ 발효시 약 3일경 부터 뚜렷하게 증가하였다.

Changes in the quality characteristics of physical and organoleptic characteristics of kimchi and Dongchimi were investigated during brining and fermentation at 4-35℃. the quality properties measured were pH total acidity, reducing suger, organic acids, viscosity, turbidity and color of Kimchi juice and Dongchimi brining solution, hardness of chinese cabbage and radish, and sensory properties of odor , taste and texture. From the results of Kimchi fermentation work, it was found that the sqlt penetration rate during brining increased as the temperature and salt concentration increased from 5% to 15% while the temperature effect reduced as salt concentration increased. The hardness of the cabbage measured by puncture test showed a rapid initial decrease during salting fermentation resulted a little increase in viscosity which the hardness of the cabbage decreased as pH 4.2-4.3 and then recovered a little thereafter. The changes pH and acidity suggested 3 steps of fermentation which are initial, intermediate and final stages and activation energies for changes in pH and acidity of intermediate stage were calculated. The Hunter color values showed that Kimchi liquid became a weak greenish blue color as the fermentation progressed. Sensory properties of fresh sourness and fracturability were increased until pH reduced to approx. 4.0 and then decreased while moldy taste and odor increased. The quality changes in Dongchimi showed that the decrease in salt concentration had a linear relationship with logarithmic value of fermentation time and activation energy was calculated. The rates of pH decreased. The acidity increase were higher as the fermentation temperature increased. The reducing sugar and nonvolatile organic acid were generally increased during fermentation. Fermentation also resulted in relative viscosity and total solids in brining solution while the hardness of the radish decreased rapidly during 2 days of fermentation and then changed a little thereafter. The Hunter"L" values and turbidity of brining solution were increased as the fermentation progressed. The evaluation of sensory quality of Donchimi showed that the fresh radish order and taste decreased while sourness odor and taste increased during fermentation. The yeast-moldy odor and taste became to be significant from 3 days of fermentation at 25-35℃.
