식품위생법(식품공전)의 미생물 관리는 규격을 설정하고 위생에 대한 지속적인 검사를 수행하게 되므로 국가의 경제적 비용이 소요되어 신중히 결정해야 하는 부분이다. 기본적으로는 국제식품규격위원회(CODEX)의 규격 대상을 골격으로 하고 우리나라의 식습관 및 국제적인 통상을 고려하여야 한다. 식품 중 미생물 관리의 중장기 계획을 바탕으로 식품공전 규격 확대 대상 미생물에 대한 시험법 개발은 병원성대장균, 비브리오 콜레라, 패혈증 비브리오균에 대하여 선택 배지 효율 중심으로 검증을 수행하였고, 장염비브리오 정량규격 설정에 따른 정량시험법,

식중독원인조사 지침에 대상 확대 미생물인 병원성대장균, 비브리오, 캠필로박터 콜리의 신속검출법을 마련하였다. 또한 2012년 9월 경 발생했던 경인지역 식중독의 원인균이 조사 결과 돼지유래 장독소형대장균(ETEC-STp)으로 판명됨에 따라 원인균 시험법을 신속히 마련하여 검사기관에 보급하였다. 2011~2012년 식품으로부터 분리되었던 대장균의 분포도, 병원성 특성, 유전자 특성, 유전자지문분석, 항생제 내성 분석을 통하여 식품에 분포하는 병원성대장균의 특성을 파악하고 세균성 식중독 원인균 1위인 병원성대장균의 특성을 파악함으로써 원인균 추적조사에 활용할 예정이다.
또한, 2010년 개발 제작했던 유전자지문분석 시험법 매뉴얼을 검사기관의 표준화를 위하여 지속적으로 시험법을 개선하고 2012년 유전자지문분석 워크숍을 개최하여 검사 효율을 제고하였다.
2012년 9월 경 8개교에서 동시 다발적으로 발생하였던 단체급식 식중독 사건을 사례연구로 식중독 원인조사를 수행하였다. 456명의 식중독 환자가 발생하였으며 환자 분변, 식품 검사를 통하여 병원성대장균임이 검출되었고 유전자 검사 결과 돼지 유래 장독소형대장균의 내열성 독소(ST-p)가 확인되었다. 식중독 원인조사에서는 과거에 보고되지 않았던 유전자를 보유하여 신속한 유전자 검출 시험법을 마련하고 국가 검사기관에 보급하여 확산 방지를 위하여 노력하였다. 환자 및 식품 분리균의 병원성특성, 혈청형, 항생제 내성 등 기본적인 특성 조사 결과 O169로 밝혀졌고, 유전자지문분석(PFGE), Rep-PCR을 통하여 환자와 식품간 동일균임을 확인하여 원인균임을 밝혔다. 산지에 대한 추적조사도 실시하였고 산지에서 분리된 병원성대장균은 유전자지문분석 결과 식중독 원인균과 동일하지 않음을 확인하였다. 향후에도 다양한 유전자 분석법을 활용하여 가능한 많은 균주에 대한 정보화를 통해서 식중독 원인균 출현 시 검출법, 원인조사, 유전자 상동성 분석 등에 활용할 계획이다.

Microbial management by Food Sanitation Law(Food Code) is a set of the specification that performs the continuous inspection on hygiene. The economic cost/benefit analysis must be the important part when microbial criteria be determined. Basically, setting management options such as setting criteria or specifications consider the Codex Alimentarius Commission (CODEX), the dietary habits of Korea and international trade. As Vibrio parahaemolyticus criteria was set quantitatively on Food Code, the test method was developed and noticed. Selective media for pathogenic Escherichia coli, Vibrio cholera, Vibrio vulnificus were tested for their efficiency verification and biochemical test method for other vibrios except V. parahaemolyticus is going to be verified at 2nd year of this study. Quantitative analysis of E. coli in oyster was reviewed and prepared refer to as International Standard Organization(ISO) method by MPN on minerals modified glutamate medium and confirmed using BCIG. The live oyster that exported internationally required for sanitation by their mutual agreement. The target strain of epidemiological study on Foodborne disease outbreak was expanded and as a priority rapid detection method of Campylobacter coli was set in this year. In addition, foodborne disease outbreak occurred around September 2012 in Incheon Area was investigated and the causative agent proved was enterotoxigenic E. coli with porcine heat-stable toxins(ETEC-STP). As of further research, the characteristics of food from 2011 to 2012, the prevalence, pathogenic characteristics, genetic characteristics, and DNA fingerprint analysis, antibiotic resistance were identified with pathogenic Escherichia coli. In addition, the DNA Fingerprint Test Methods Manual developed in 2010 had produced continuously improved standardized assay method for the inspection agency, and enhanced the efficiency of the examination held by the genetic fingerprint analysis workshop in 2012. In September 2012, outbreak was reported at 8 school with 456 patiens and case study was carried out to investigate the cause of food poisoning. Patients' feces, food inspection, and pathogenic E. coli was detected that genetic test results from pigs enterotoxins of Escherichia coli small heat-resistant toxin (ST-p) has been identified. Investigation of the genes that have not been reported in the past prepared by rapid gene detection assay, and distributed at national inspection agency to prevent the spread of the outbreak. Basic characteristics, such as patient and food isolates were identified pathogenic characteristics, serogroups, and antibiotic resistance survey results of O169 was identified and homology analysis was made by genetic fingerprinting analysis (PFGE), Rep-PCR. Follow-up survey was conducted in the Kimchi materials as cabbage product area and and environmental samples was investigated of ETEC-STp O169, the causative agent of foodborne illness.
Finally, the genetic fingerprint analysis was not identical to exact causative agent of foodborne outbreak.
For information about the strain as much as possible through utilizing various gene assay, the causative agent of foodborne illness, the emergence during detection method, investigate the cause, for the analysis of gene homology in the future plans to utilize.
