○ 연구결과
1. 고구마 현탁형 음료, 유산균 발효 음료 및 동결건조 분말제품 개발
○ 고구마의 첨가는 요구르트 제조 시 젖산균의 생육을 촉진시키는 것으로 사료된다.
○ 고구마 함량별 유산균 접종 후 발효액의 pH는 시간에 따라 감소하였고 산도는 증가하였으며, 동결건조 후 발효물의 생균수는 약 109 CFU/g의 범위를 나타내었다.

○ 연구결과

○ 고구마 품종별, 처리방법별 pH의 차이는 크게 나타나지 않았으며, 살균, 접종 과정을 거치면서 감소하는 경향을 보였고, 산도는 증가하는 경향을 보였다. 또한 발효시간이 지남에 따라 pH의 감소 경향과 산도의 증가경향을 나타내었다.
○ 일반세균은 발효 48시간째의 측정 결과가 발효 24시간째보다 약간 증가한 결과를 보였고, 동결건조 후 동결건조 전보다 1 log정도의 수만큼 감소한 경향을 보였다.
○ 50% 고구마 발효 동결건조물을 이용하여 polydextrose, 곤약분말, 비타민 A, B2, B12, C, E를 혼합하여 tablet 형태와 과립 형태로 제조하여 건강 기능성 제품으로 개발하였다. tablet 1정 및 과립 10 g 섭취 시 비타민 1일권장량의 40~60%를 충족할 수 있도록 하였다.
○ 고구마 혼탁음료용 품종별 전처리 시험결과 밤고구마의 구운 처리구를 동결건조하여 분말화 하는 것이 가장 적합한 것으로 판단되었다.
○ 고구마 분말의 초미세 분쇄의 적정 방법은 효율성 측면에서 습식분쇄가 적합한 것으로 판단되었다.
○ 습식분쇄 후 전분액화효소 α-amylase로 반응시키면 당도 증가 및 질감 개선 효과를 가져올 수 있음을 확인하였다.
○ 적정 공정을 거쳐 고구마 분말을 이용한 현탁음료 제품 및 배합된 분말 자체를 스틱형 제품으로 개발하는 것이 가능하다고 판단하였다.
○ 한편 고구마 분말이 아닌 기호도의 증진을 위하여 군고구마를 직접 습식분쇄하여 제조하는 방식의 현탁음료 개발이 가능한 것으로 판단되었다. 이때 군고구마의 적정 함량은 10%, 설탕은 6%를 첨가하는 것이 가장 적합하였다.
○ 본 제품은 95℃에서 약 5분간 살균할 경우 매우 안정한 것으로 드러났고, 분말 사용 음료와 달리 고구마를 직접 습식분쇄함으로써 층분리가 거의 일어나지 않음을 확인하였다.
○ 고구마 현탁음료의 적정 제조공정은 습식분쇄→효소반응→여과→부재료 혼합→균질화→살균→병입→냉각의 순으로 확립되었다.
2. 품종별 고구마 식품소재의 품질특성 및 가공적성조사
○ 국내에서 생산되는 자색고구마, 호박(주황색)고구마, 일반 밤고구마를 해남, 여주, 무안의 산지에 따른 특성을 비교한 결과 재배과정 중 품종구분이 명확하지 않아 고구마의 가공을 위한 품종 특성은 정확한 품종을 보존하는 국립식량과학원의 시료를 사용하였다. 국내산 품종 중 가공적성이 우수한 고구마 8품종(자색고구마, 신자미, 보라미; 호박고구마, 주황미, 신황미; 일반 밤고구마, 신율미, 신천미, 연황미, 증미)을 선발하여 이화학적, 호화 및 기능적 특성을 조사하고 다양한 식품소재를 개발하여 쌀가루와 복합기술로 gluten-free 베이커리제품, 조청, 고추장 등의 제품을 개발하였다.
○ 고구마의 조단백질과 지방 함량은 신자미와 보라미가 높았고 총전분과 손상전분 함량은 품종간 유의적인 차이가 있었는데(p<0.05) 밤고구마가 높은 총전분함량(61.89-70.46%)을 보이고 그 중 신천미(70.46%)가 가장 높았으며 주황색고구마가 낮은 값(48.87와 49.53%)을 나타냈다. 물결합능력은 연황미, 팽윤력과 용해도는 신율미(각각 174.70%, 25.54 and 87.49%)가 높았다(p<0.05). 그러나 유지흡수력은 신율미와 신천미가 낮았고 모든 고구마 분말의 결정성은 A형이었다. 고구마 분말은 RVA에 의해 매우 낮은 호화양상을 보였는데 이는 생고구마 분말에 함유된 전분분해효소의 작용임을 확인하였다. 고구마의 기능적 특성을 조사한 결과 알코올불용성고형분, 총식이섬유, 안토시아닌, 카로티노이드, 페놀성화합물,은 품종에 따라 차이를 보여 유의적이었다(p< 0.05). 총식이섬유와 안토시아닌, 총페놀화합물은 자색고구마가 가장 높았으며(각각 10.11-10.87%, 2.43-3.35 mg/g, 454.13-638.79%) 일반 밤고구마가 가장 낮았다. 카로티노이드는 주황색고구마가 높았는데 주황미가 신황미보다 높은 값을 유지하였다 색차는 자색고구마가 3-4배 높았으며 EDA로 측정한 항산화활성은 주황색고구마가 높았다.
○ 고구마 8품종으로 개발한 식품소재는 생고구마와 브랜칭한 고구마를 채나 슬라이스로 말린 것, 육면체로 잘라 당절임, 굽기, 찌기, 삶기를 이용한 패이스트, 생분말, 호화 패이스트로 호화분말, 패이스트로 앙금과 고구마 전분이었다. 생고구마분말은 가공 중 전분 분해효소 작용에 의해 가공적성이 달라지고 안토시아닌은 산화와 열에 비교적 안정하나 카로티노이는 쉽게 산화되므로 용도에 따라 적합한 품종과 소재를 선택하는 것이 중요함을 확인하였다. 최근 세계적으로 gluten-free 식품개발에 관심이 증가하는데 고구마 식품소재와 쌀가루를 이용한 다양한 식품의 기능성 gluten-free 제품개발이 가능함을 확인하였다.
3. 고구마 이용 고품질 베이커리 가공제품의 개발
○ 일반고구마와 유색고구마로서 주황색, 자색고구마를 다양한 처리 조건으로 건조하여 분말화 하였고, 고구마 종류별로 전분을 분리하여 고구마 분말과 전분의 종류별 특성을 분석하였다. 일반고구마, 주황색고구마, 자색고구마는 건조 전 각각 60.11, 64.57, 69.51%의 수분함량을 나타냈고, 분말 제조 시 건조온도에 따라 건조시간을 달리하여 건조한 결과 건조 종료 후 60, 70, 80, 90℃ 건조한 모든 고구마의 수분함량은 5% 이하로 낮아졌으며, 50℃ 건조한 고구마의 경우도 10% 이하의 수분함량을 보였다. 수분함량이 13% 이내에 도달하는 시간을 측정한 결과 열풍온도 50℃에서 약 12시간, 60℃ 6시간, 70℃ 4시간, 80℃와 90℃에서 2시간 정도 소요되는 것으로 나타났다.
○ 갈변방지제 처리에 의한 일반고구마, 주황색고구마, 자색고구마의 색도는 NaHSO3, citric acid, vitamin C 용액의 농도와 침지시간, 침지 후 물 수세시간 등의 조건에 따라 다양한 결과를 나타내 일반고구마와 주황색고구마는 NaHSO3 단독 처리, 자색구마는 NaHSO3와 citric acid 복합 처리로 육질색이 안정되는 것으로 나타났다. 동결건조와 열풍건조의 건조방법에 따라서도 색도의 차이를 나타냈다.
○ 고구마 분말의 수분함량은 2.50∼4.35%로 나타났으며, 조단백과 조회분은 자색고구마가 6.65, 3.7%로 가장 높았으며, 조지방과 전분 함량은 주황색고구마가 2.33, 46.37%로 가장 높은 결과를 나타냈다. 또한 고구마 분말의 식이섬유 함량은 자색고구마 분말이 가장 높게 분석되었다. 고구마 종류별 고구마 분말의 carotenoid 함량을 측정한 결과 carotenoid 중 β-carotene 함량은 주황색고구마가 4237.10 μg/100 g으로 가장 높았으며, 일반고구마 107.95 μg/100 g과 자색고구마 31.11 μg/100 g과 함량의 차이가 큰 것으로 분석되었다. Lutein, zeaxanthin, α-carotene 등의 함량도 주황색고구마가 일반고구마와 자색고구마의 함량보다 높게 측정되었다.
○ 고구마 분말의 입자크기는 주황색고구마 분말에서 가장 큰 것으로 나타났다. 주황색고구마 분말의 평균 입자크기는 동결 건조의 경우 46.84 μm, 열풍 건조한 경우 90.77 μm로 건조방법에 따라 같은 종류의 고구마 분말에서도 차이를 나타냈다. 고구마 분말의 입자 형태는 일반고구마는 둥근형이나 다각형의 모양이고 건조 방법에 따른 특징이 구별되지 않았다. 주황색고구마는 동결 건조한 분말이 열풍 건조한 분말보다 둥근 모양으로 보이며 일반고구마보다 입자 크기가 큰 것으로 나타냈다. 자색고구마 분말의 형태는 주황색고구마와 유사하나 입자 크기는 자색고구마 분말이 작은 것으로 보여졌다.
○ 고구마 분말의 수분흡수지수(WAI)와 수분용해도지수(WSI)는 동일한 고구마에서도 건조방법에 따른 차이를 보였다. 수분흡수지수는 열풍 건조한 일반고구마 분말이 1.70 g/g으로 가장 높고, 열풍 건조한 주황색고구마 분말이 1.43 g/g으로 가장 낮았다. 수분용해 도지수는 주황색고구마 분말 중 열풍 건조한 분말이 28.65∼30.65%로 가장 높은 수치를 나타내고, 자색고구마>일반고구마 순으로 높은 수분용해도지수를 보였다. Oil 흡수력은 모든 고구마에서 동결 건조한 분말에서 열풍 건조한 분말이 높은 수치를 나타냈다.
○ Differential Scanning Calorimeter(DSC)에 의한 고구마 분말의 특성 중 호화개시온도와 최고온도는 일반고구마 분말이 다소 높았으나 다른 분말과의 차이는 크지 않았다. 호화엔탈피는 자색고구마 분말이 7.40∼7.71 cal/g으로 가장 높았으며 주황색고구마 분말은 2.68∼4.19 cal/g으로 가장 낮았다. 고구마 분말의 in vitro 가수분해에 따른maltose 함량은 열처리에 의해 증가하는 것으로 나타났으며, 조리 방법에 따른 가열처리별 결과를 보여 오븐 및 전자레인지로 가열한 고구마로 제조한 고구마 분말의 가수분해력이 높은 것으로 나타났다.
○ 고구마 전분의 수분함량은 12.65∼13.80% 범위로 고구마 종류별로 큰 차이가 없었고, 조단백, 조지방 및 조회분 함량은 자색고구마 전분이 다른 고구마 전분보다 다소 높았으며, amylose 함량은 모든 전분에서 유사하였다. 고구마 전분의 색도는 고구마 종류별로 크게 차이를 보이지 않았다. 주사전자현미경으로 관찰한 고구마 전분의 입자 형태는 둥근형과 다각형이 혼합되어 있는 것으로 나타났으며 주황색고구마 전분의 입자는 둥근형보다 다각형이 더 많은 것으로 분석되었다.고구마 전분의 입자크기는 고구마 분말의 경우와 같이 주황색고구마의 평균 입자크기가 22.96 μm로 가장 컸으며 일반고구마 전분의 입자크기와 유사하였다. 고구마 전분의 X-선 회절도는 일반, 주황색, 자색고구마 모두 유사한 회절각도를 보였다. 15.12∼15.20〫 , 17.22∼17.30〫 , 23.14∼23.28〫 에서 강한 peak를 나타내 Ca형으로 판단되었다. 고구마 전분의 팽윤력은 주황색고구마와 자색고구마 전분이 30, 50, 70, 90℃ 모든 온도에서 높게 나타났고, 일반고구마 전분이 모든 온도에서 가장 낮은 팽윤력을 나타냈다. 용해도는 90℃에서 자색고구마 전분이 가장 높았으며 30℃에서의 용해도 보다 80배 가량 증가하여 증가폭이 가장 컸다.
○ 고구마 전분의 Differential Scanning Calorimeter(DSC)에 의한 특성 중 호화개시온도는 자색고구마 전분이 가장 높았으며, 호화최고온도와 호화엔탈피는 일반고구마 전분이 가장 높은 결과를 보여주었다. Rapid Visco-Analyzer(RVA)에 의한 고구마 전분의 호화 특성 중 호화개시온도는 일반고구마 전분이 76.9℃로 가장 높았고, peak점도와 breakdown 점도는 주황색고구마가, final 점도와 setback 점도는 자색고구마 전분이 가장 높았다. 고구마 전분의 in vitro 가수분해에 의한 maltose 함량은 열처리에 의해 증가하는 결과를 나타냈다. 열처리 후 가수분해한 결과 가수분해 0∼5분 까지 급격히 maltose 함량이 증가하였고 분해 60분까지는 완만한 증가세를 보였다.
○ 일반고구마와 유색고구마로서 주황색고구마와 자색고구마로부터 분말을 제조하여 이들 고구마 분말을 첨가한 식빵, 케이크, 쿠키, 머핀과 같은 베이커리 제품의 품질 특성을 조사하였다.
○ 밀가루에 고구마 분말을 0∼30% 대체한 혼합분 반죽의 Mixograph 특성에서 고구마분말을 첨가한 복합분의 peak time은 대조구에 비해 감소하는 경향을 주었다. 특히 주황색고구마 분말을 첨가한 복합분에서 peak time의 감소 정도가 가장 크게 나타났으며 반죽의 안정성이 떨어지며 반죽의 물성이 약화됨을 보여주었다. 밀가루(강력분)에 고구마 분말을 10∼30% 첨가함에 따른 제빵 특성을 조사하였다. 반죽의 수분흡수율은 일반고구마와 주황색고구마 분말의 첨가량이 증가함에 따라 감소한 반면 자색고구마 분말의 첨가에 의해서는 증가하는 추세를 나타냈다. 고구마 분말 첨가량이 증가할수록 전반으로 식빵의 부피가 현저하게 감소하였으며 자색고구마 첨가 식빵에서 가장 급격한 부피의 감소를 초래하였다. 고구마 분말 첨가 빵의 특성분석 결과 일반고구마와 주황색고구마 분말의 적정 첨가 수준은 10%인 것으로 판단되었으며 자색고구마 분말은 10% 이내 적로 첨가하는 것이 바람직한 것으로 사료되었다.
○ 밀가루(박력분)에 고구마 분말을 10∼30% 첨가함에 따른 white layer 케이크 특성을 조사하였다. 케이크의 부피는 대조구에 비해 고구마 분말 첨가량이 증가함에 따라 감소하였으며 케이크의 경도는 증가하는 추세였으나 20% 첨가 수준까지는 케이크의 품질에 큰 영향을 미치지 않는 것으로 평가되었다.
○ 밀가루에 고구마 분말을 10∼30% 첨가하여 제조한 쿠키의 특성을 조사하였다. 고구마 분말을 넣지 않은 대조구 쿠키에 비해 고구마 분말의 첨가량이 증가할수록 쿠키 지름의 크기는 감소하고 높이는 증가하였으며, 이에 따라 고구마 분말의 첨가량이 증가함에 따라 쿠키의 퍼짐성이 일반고구마 2.47~2.27, 주황색고구마 2.61∼2.31, 자색고구마2.52∼2.11로 점차 감소하였다.
○ 밀가루에 고구마 분말을 10∼30% 첨가하여 제조한 머핀의 특성을 조사하였다. 고구마 분말을 첨가한 머핀의 부피는 대조구와 비교하여 일반고구마 첨가구에서 약간 높은 반면 주황색고구마와 자색고구마 첨가구에서 약간 낮았지만 대조구와 유의적인 차이가 없었다. 머핀의 내부(interior) 색은 고구마 분말의 첨가에 의해 감소하는 경향이었으며 머핀의 경도는 일반고구마와 주황색고구마 첨가 머핀은 대조구와 유의적인 차이를 보이지 않았다. 머핀의 경우 고구마 분말의 첨가는 부피에 큰 영향을 주지 않았으며 색도의 차이와 내부 기공의 특성이 떨어지는 결과 등 특성차이를 보여주었지만 20% 첨가 수준 범위에서 부피에 큰 영향을 주지 않았으며 머핀의 품질에 크게 부정적이지 않은 것으로 평가되었다.
○ 고구마 분말을 대체한 베이커리 제품의 품질개선을 위해 유화제와 검류 의 첨가시험을한 결과 유화제 SSL, 검류인 타라검, 구아검, 로커스트콩검 등에서 비용적과 경도가 개선되어 좋은 효과를 보인 것으로 나타났다. 제빵실험을 통해 확립된 고구마 식빵 프리믹스의 기본 formula와 사용방법을 확립하였으며 기 확립된 프리믹스를 가정용 제빵기를 사용한 제빵 제조 가능성을 분석하였다.
4. 유색 고구마 이용 기능성 음료제품 개발
○ 고구마의 이화학적 성분분석
고구마의 이화학적 특성을 알아보기 위하여 수분, 회분, 조단백, 조지방, 식이섬유등을 분석한 결과 수분은 62-66%, 조단백은 1.47-1.52%, 식이섬유는 1.5-1.8%정도로 유색 고구마에 식이섬유가 일반고구마나 호박고구마에 비하여 많이 함유되어있는 것으로 나타남
○ 유색고구마 색소추출 실험
유색고구마를 세절하여 10배의 0.1% 구연산을 첨가한 20% 에탄올용액을 용매에 침지하여 저온에서 24시간 추출후 필터링하여 감압농축(40℃)하여 제조한 유색고구마의 추출액을 얻을수 있었으며 이때 추출색소의 고형분함량(Brix)은 29.44이었음
○ 고구마 원료의 전처리 공정
고구마를 증숙처리한 후 0.05% α-amylase를 첨가하여 90℃에서 4시간동안 반응시킨후 0.01% glucoamylase를 혼합하여 50℃에서 4시간 동안 다시 당화반응을 시키고 여과한후 원심분리하여 50Brix로 농축하여 제조하였으며 음료개발 시료로 이용하였음
○ 유색고구마 음료 개발
가. 유색고구마 추출액 을 이용한 음료개발
유색고구마 음료를 제조하기 위하여 유색고구마 추출액 및 고구마 농축액 원료를 이용하여 시제품을 제조한 결과 유색고구마 추출액은 시제품의 색상과 맛을 좋게 하지만 고구마농축액은 음료의 맛을 저하하므로 유색 고구마추출액을 시제품의 원료로 사용하였으며 또한 사과 및 산수유 시료도 시제품의 맛을 좋게하는 원료 였음. 저장성 실험결과 45℃에서 5주간 저장기간 동안 품질에 큰 변화가 없어 음료 유통기간인 1년간 상온 보관이 가능한 것으로 나타났음
나. 식이섬유 및 콜라겐을 첨가한 음료개발
유색고구마 추출액을 이용한 음료개발 결과 우수한 시제품 배합비율에 식이섬유 및 콜라겐을 첨가하여 실험한 결과 0.5% 첨가한 시제품이 가장 우수하였으며 제조된 시제품을 45℃에서 5주동안 저장하여 일반분석, 미생물검사 및 관능검사 결과 저장중 변화가 거의 없는 것으로 나타나 저장안정성이 있는 시제품으로 개발하였음
5. 홍국과 고구마를 이용한 건강제품의 배변촉진 및 혈액순환 개선 효능 검증
○ 6주동안 고지방식이를 급여한 흰쥐에게 4주동안 고구마(일반, 홍국, 자색)분말 5%첨가 식이를 급여한 결과 실험 전기간(10주) 고지방대조식을 급여한 대조군(A)에 비해 배변량은 C군(홍국고구마)이 유의하게 증가하였고, 분변중 TC함량은 홍국고구마(C)군이 자색고구마(E)군에 비해 통계적인 차이가 있었고(p<0.05), TG함량은 C군이 A군과 E군에 비해 각각 22%, 26% 높았다. 장통과시간과 갈색지방량 및 혈청중 인슐린, 렙틴과 혈당농도는 E군(자색고구마)이 유의하게 낮았으며, 혈청 지질중 TC, LDL-콜레스테롤, TG농도 및 백혈구와 혈소판수는 B군(일반고구마)에서 유의하게 낮았다(p<0.05). 향후 상기 고구마(3종)의 혈액순환개선효능과 관련한 추가적인 확인실험이 필요한 것으로 사료된다.
○ 실험1기(4주)동안 고지방식이를 급여한 흰쥐에게 실험2기(4주)동안 홍국제품분말첨가 식이를 급여한 결과 배변량은 C군이 가장 많았고, E군이 가장 적었다(p<0.05). 장통과 시간은 홍국균미파우더첨가군 보다 선식분말첨가군이 통계적으로 단축되었다(p<0.05). 분변중 총콜레스테롤(TC)함량은 홍국균미파우더첨가군(B, C)이 선식분말첨가군(D, E)에 비해서 통계적으로 높았고(p<0.05), 분변을 통한 TG배설량은 C군이 다른 실험군 보다 평균 40% 더 높았다. 실험2기의 혈청 TC농도는 C군이 가장 낮았고, E군이 가장 높았던 반면, TG농도는 C군이 가장 높았고, E군이 가장 낮았다(p<0.05). 혈액응고활성(PTT)는 고지방식이대조군 보다 홍국제품군에서 통계적으로 유의하게 짧은 것으로 나타났다(p<0.05).
6. 홍국 고구마를 이용한 배변촉진, 혈액순환개선 건강기능식품 개발
○ 홍국고구마의 대량 생산체계 확립 : 고구마와 현미를 1:2 비율로 혼합하여 121℃에서 1시간 멸균 후 10%의 홍국균을 접종하여 40일간 배양함으로써 2,250mg/kg의 monacolin-K를 함유하는 홍국고구마를 안정적으로 대량생산 가능함
○ 홍국고구마를 이용한 건강기능식품 개발 : 홍국고구마를 이용해 monacolin-K 하루 권장 섭취량인 4~8mg에 적합하도록 ‘홍국 그래뉼’과 ‘홍국 캡슐’ 시제품 제작 및 일본의 시장반응 파악결과 제품의 안정성은 확보되었으나 시제품의 일일 섭취량이 다소 많은 것으로 평가됨
7. 고구마를 이용한 감압유탕 스낵 및 재성형 냉동제품 개발
○ 다양한 가공기술을 이용한 즉석조리 및 간식용 고구마 신제품(감압유탕스낵, 재성형냉동제품, 푸딩)이 개발되었다. 감압유탕 스낵은 상압유탕 스낵에 비해 낮은 수분함량과 지방함량을 나타내고 높은 기능성 성분함량을 나타내어 기능성 및 영양적인 면에서 우수할 뿐만 아니라 기호적으로도 우수한 것으로 나타났다. 또한 관능적으로 우수한 감압유탕 스낵을 제조하기 위한 적정 전처리 및 감압유탕 조건이 확립되었다. 자색 고구마는 수용성의 안토시아닌이 풍부하여 전처리 및 감압유탕시 안토시아닌이 많이 소실되기 때문에 안토시아닌의 소실을 최소화하기 위한 방법이 요구된다. 본 연구에서는 기존의 감압유탕 공정에 비해 안토시아닌의 소실을 크게 감소시킬 수 있는 열처리 및 당침방법을 개발하였다. 스팀처리와 감압당침은 기존의 블랜칭과 상압당침에 비해 안토시아닌의 소실을 최소화할 수 있으며 이러한 공정을 통해 기존의 스낵에 비해 약 1.9배 높은 안토시아닌 함량을 갖는 자색 고구마 스낵을 제조할 수 있었다. 생과로 사용되기 어려운 품질과 크기를 갖거나 또는 수확후 단기간 내에 가공되어야 할 고구마를 활용하여 고구마의 부가가치를 높일 수 있는 다양한 가공제품(고구마 튀김, 군고구마, 푸딩)을 제조하고자 할 경우 품질 및 크기 등의 문제로 인해 우수한 품질의 가공제품을 제조할 수 없는 문제가 발생하기 때문에 본 연구에서는 고구마 퓨레를 이용하여 재성형함으로써 고구마튀김과 군고구마를 제조하였다. 그러나 고구마 퓨레 제조시 고구마의 조직은 크게 손상받기 때문에 이를 재성형하여 제조한 제품의 조직감이 고구마 생과를 가공한 제품의 조직감을 기대하기는 어렵다. 따라서 본 연구에서는 재성형 제품의 조직감이 생과를 가공한 제품의 조직감과 유사하도록 하기 위한 고구마 전처리 및 고구마 퓨레의 물성조절기술을 개발하고자 하였다. 고구마 퓨레 제조시 예비 열처리 및 biopolymer와 칼슘염의 반응에 의해 기존방법에 비해 월등히 견고하고 치밀한 조직감을 갖고 관능적으로 우수한 퓨레 및 가공제품을 개발할 수 있었다.

Ⅲ. Quality characteristics and processing quality of food biomaterials from Korean sweet potatoes with different varieties
○ The properties of purple fleshed, orange fleshed, and white/cream fleshed dry type sweet potatoes with different production areas, Haenam, Yeoju, Muan were investigated. There were ambiguous results to apply for making food biomaterials with different sweet potato varieties, because most sweet potatoes have been hybridized. Therefore, confident Korean sweet potato varieties were obtained by Rural Development Administration, National Institute of Crop Science. Eight varieties of Korean sweet potatoes, purple fleshed (Shinjami and Borami), orange fleshed (Juwhangmi and Shinwhangmi), and white/cream fleshed dry type (Shinyulmi, Shinchunmi, Yeonwhangmi, and Jeungmi) were used to develop processing food biomaterials. Physicochemical, pasting, and functional properties of sweet potatoes with different varieties were investigated, various food biomaterials were developed using sweet potatoes, and complex technology between sweet potato biomaterials and rice flours was used to make gluten-free bakery products, starch syrup and Gochujang,and etc.
○ Crude protein and lipid contents of Shinjami and Borami were higher than those of other varieties. Lightness of raw sweet potato flesh was the highest value in Shinchunmi, but the lowest value in Shinjami. Using color difference (ΔE), color similarity compared to white plate were as following order; purple-fleshed > orange-fleshed > commercial dry sweet potatoes. The total and damaged starch contents were significantly different (p<0.05). Total starch contents of sweet potatoes were higher in commercial dry sweet potatoes (61.89-70.46%), especially Shinchunmi (70.46%) and lower in orange-fleshed sweet potato (48.87 and 49.53%). Water binding capacity of Yeonwhangmi, swelling power and solubility of Shinyulmi were the highest values (174.70, 25.54 and 87.49%, respectively) among them (p<0.05). But oil absorptions of Shinyulmi and Shinchunmi showed lower values (97.08 and 97.54%). Allsweet potato powders had A type x-ray diffraction pattern. Initial pasting temperature of sweet potato powders were ranged from 69.50 to 75.95℃ and amylolytic enzyme of sweet potato powder affected lowering pasting viscosities.
○ AIS, total dietary fiber, anthocyanin, carotenoids, and phenolic compound contents of SP powders were significantly different (p<0.05) with different varieties. The total dietary fiber, anthcyanin, and total phenolic compounds of SP were the highest values in purple fleshed SP (10.11-10.87%, 2.43-3.35 mg/g, 454.13-638.79%, respectively) and the lowest values in white/cream fleshed dry type SP. The carotenoids of orange fleshed SP were higher in Juwhangmi than in Shinwhangmi. The color differences of purple fleshed SP were 3-4 times higher than those of others. The antioxidant activities by EDA of orange fleshed SP were higher than those of other SPs.
○ Food biomaterials developed from eight Korean sweet potatoes were dried slice and julienne, sugaring of raw sweet potatoes, pastes using baking, steaming, and boiling methods, powders of raw and cooked sweet potatoes, ann, and starch. The powder from raw sweet potato showed much lower pasting viscosities than that of same starch, because amylolytic enzyme activity of raw sweet potato powder. Anthocyanins from purple fleshed sweet potatoes were stable in air and heating treatment, but carotenoids from orange fleshed sweet potatoes were easily oxidizable. The properties of food biomaterials from sweet potato varieties were important factors to apply for making processed food as use. It is suggested that the mixes of food biomaterials from sweet potato varieties and rice flours could be used for developing gluten-free and functional food products
Ⅳ. Development of high quality bakery products using sweet potato flours
○ Flours were prepared from sweet potatoes with varying flesh colors such as white/yellow(general sweet potato), yellow/orange(orange-fleshed sweet potato), and purple(purple-fleshed sweet potato), and their physicochemical properties were investigated.
○ Sweet potatoes were treated with antibrowning agents such as NaHSO3, vitamin C, and citric acid, and dried to appropriate moisture contents. Two different drying methods prior to grinding, freeze drying and hot-air drying, were employed to produce sweet potato flours.
○ Sweet potato flours with varying flesh colors showed differences in proximate composition, starch, and dietary fiber contents. β-Carotene content of orange-fleshed sweet potato flour was higher than those of the other sweet potato flours. Particle size of orange-fleshed sweet potato flour was higher than those of general or purple-fleshed sweet potato flour. Both water absorption index(WAI) and oil absorption of flours prepared from sweet potatoes by hot-air drying were higher than those from sweet potatoes by freeze drying. Differential Scanning Calorimetery(DSC) results showed that the entalpy of purple-fleshed sweet potato flour was higher than those of the other sweet potato flours. Heat treatments increased the degree of in vitro starch hydrolysis of sweet potato flours.
○ Starches were isolated from sweet potatoes with varying flesh colors, and their physicochemical properties were investigated. Slight differences were found in proximate composition and amylose content of starches from different sweet potatoes. Scanning electron micrograph(SEM) results showed that the sweet potato starch granules were round and polygonal. Average granule size of the starch isolated from orange-fleshed sweet potato was higher than those from general and purple-fleshed sweet potatoes. X-ray diffraction patterns demonstrated that all the starch samples were appeared to be Ca crystalline type.
Swelling power and solubility of orange and purple-fleshed sweet potato starches were higher than those of general sweet potato starch. Differential Scanning Calorimetery(DSC) results showed that the entalpy of general sweet potato starch higher than the other sweet potato starches. Different sweet potato starches produced somewhat different RVA pasting properties. Degree of in vitro starch hydrolysis was similar among the different sweet potaotes.
○ For the development of bakery products containing sweet potato flour, flours were prepared from sweet potatoes with different flesh color(white, yellow/orange and purple). Sweet potatoes were soaked in solutions of antibrowning agents such as sodium metabisulfite(NaHSO3) and citric acid, and hot air-dried prior to grinding to produce sweet potato flours. Sweet potato flours with different flesh colors showed differences in proximate composition, starch, amylose, and dietary fiber contents. Total carotenoid content(5.4 mg/100 g) of yellow/orange-fleshed sweet potato flour was higher than those of the other sweet potato flours. Total anthocyanin content was the highest(59.9 mg/100 g) in purple-fleshed sweet potato flour.
○ Replacement of wheat flour by 10, 20, 30% sweet potato flour was tested for the effects on bread-, white layer cake-, cookie- and muffin-making properties.
Increasing proportions of sweet potato flours significantly decreased the loaf volume, and the highest decrease in loaf volume was found in the bread containing purple-fleshed sweet potato flour. Increasing levels of sweet potato flours decreased specific volume and tended to increased cake hardness.
However, it was suggested that sweet potato flour could be substituted for wheat flour at levels up to 20%. Increaing levels of sweet potato flour substitution reduced cookie spread and lightness. The physical properties indicated that sweet potato flour could be added to muffin at replacement levels up to 20% without a large adverse effect on muffin quality.

Among gums tested, tara, guar, and locust bean gum produced better specific loaf volume and crumb texture. Ⅴ. Development of functional drinks using purple sweet potato
○ Physicochemical analysis of sweet potato
By analyzing moisture, ash, crude protein, crude fat and dietary fiber in order to find out physicochemical properties of sweet potatoes it was found out that purple sweet potatoes contain 62-66% of moisture, 1.47-1.52 % of crude fat, 1.5-1.8% of dietary fiber, which means purple sweet potatoes contain more dietary fiber than normal sweet potatoes and pumpkin sweet potatoes.
○ Experiments for extraction of purple sweet potatoes' color pigment
By soaking sliced sweet potatoes in a solvent of 20% ethanol which contains 10 times volume of 0.1% citric acid, extracting it for 24 hours under low temperature, filtering and vacuum evaporating at 40℃ we can obtain extracted solutions of purple sweet potatoes and extracted pigment's Brix was 29.44.
○ Pre-processing procedures of raw material of sweet potatoes
After steaming sweet potatoes 0.05% a-amylase was added, and was reacted for 4 hours under 90℃. After that 0.01% glucoamylase was mixed and was kept in sugaring reaction for 4 hours under 50℃, filtered and centrifuged. By those processes we obtained raw material of sweet potatoes of 50 Brix and used it as testing samples for development of drinks.
○Development of drinks of purple sweet potatoes
- Development of drinks using extracted solutions of purple sweet potatoes
In order to develop purple sweet potato drinks we produced prototypical drinks using extracted solutions of purple sweet potato solutions and raw material of condensed solutions of sweet potatoes. We used extracted solutions of purple sweet potatoes as raw material for prototypical drinks since extracted solutions of purple sweet potatoes improves the color and taste of prototypical drinks, and on the other hand condensed solutions of sweet potatoes degrade the taste of drinks. We found out that testing samples of apple and cornus also improves the taste of prototypical drinks. By way of experiments for storage stability we found that the quality was maintained during 5 weeks under temperature of 45℃. So purple sweet potato drinks can be stored at room temperature during one year which is expiration date of normal distribution.
- Development of drinks which contain dietary fiber and collagen
By experiments adding dietary fiber and collagen with mixture proportion of optimum prototypical drinks we found that the prototypical drinks which contain 0.5% of them were the best. We stored the prototypical drinks during 5 weeks at temperature of 45℃ and executed normal analysis, microbiological tests and sensory evaluation, and we didn't notice any slight change at storage and could develop prototypical drinks that have good storage stability.
Ⅵ. Development and its effectiveness evaluation of the functional foods aims for improving of defecation and blood circulation using a Red Yeast Rice and sweet potato
○ This study was performed to investigate the effects of diet added with red yeast rice and sweet potato on the defecation, body fat and serum lipid levels in Sprague-Dawley male rats fed a high fat diet for 10 weeks. Rats were fed a high fat diet(15% fat) with additional lard(7%) and cholesterol(1%) to AIN-93G basal diet(7%) for 6 weeks on first phase. In terms of second phase for 4 weeks, rats divided into five experimental groups which were composed of a high fat diet group(A), a high fat diet with 5% general sweet potato powder-supplemental group(B), a high fat diet with 5% Red Yeast Sweet potato powder-supplemental group(C), a high fat diet with 10% Red Yeast Sweet potato powder-supplemental group(D) and a high fat diet with 5% purple sweet potato powder-supplemental group(D). Total dietary fiber content of experimental diet was shown 16.59∼19.73%. Body weight gain and food efficiency ratio(FER) was not different among the experimental group. The feces amount of the group C for second phase increased significantly compared to the other groups (p<0.05). The fecal total-cholesterol content of group C were higher than that of group E(p<0.05).
Triglyceride content of the group C were 22% and 26% higher in group A(positive control as a high fat diet) and the group E. The serum contents of insulin, leptin and glucose were significantly lower in group E among the experimental diet (p<0.05). These results indicate that supplementation with red yeast rice and sweet potato seemed to be effective in improving constipation and fecal lipid excretion in rats fed a high fat diet.
○ This study was performed to investigate the effects of the products supplemented with red yeast rice on the defecation, body fat and serum lipid levels in Sprague-Dawley male rats fed a high fat diet for 8 weeks. Rats were fed a high fat diet(D12492, 45kcal fat) for 4 weeks on first phase. In terms of second phase for 4 weeks, rats divided into five experimental groups which were composed of a high fat diet with 7.5% Red Yeast Sweet potato powder-supplemental group(A), a high fat diet with 15% Red Yeast Rice powder-supplemental group(B), a high fat diet with 30% Red Yeast Rice powder-supplemental of group(C), a high fat diet with 15% Red Yeast Sunsik powder-supplemental group(D) and a high fat diet with 30% Red Yeast Sunsik powder-supplemental group(D). Total dietary fiber content of experimental diet was shown 6.95∼8.29%. Body weight gain and food efficiency ratio(FER) was not different among the experimental group. The feces amount of the group C for second phase increased significantly compared to the other groups(p<0.05). The intestinal transit time of the groups D and E was significantly faster than that of the groups B and C (p<0.05). The fecal total- cholesterol content of groups B and C were higher than that of groups D and E(p<0.05), while those values for triglyceride of group C was on a average of 40% higher than the other groups. The serum total-cholesterol contents for second phase was significantly lower in group C, but triglyceride content was the lowest in group E(p<0.05). The activated partial thromboplastin time(PTT) of the supplemented red yeast rice groups tended to decreased significantly compared to a high fat diet as control(p<0.05). From the findings, the supplementation with red yeast rice seemed to be effective in improving constipation, lipid metabolism and anticoagulation activity in rats fed a high fat diet.
Ⅶ. Development of health functional foods that aids improving of defecation and improvement of blood circulation with Red Yeast Sweet potato To increase of effective utilization of domestically produced sweet potato, we investigated to development of sweet potato health functional foods combine to the Red Yeast Rice.
1. Established for mass production system through optimization of fermentation conditions such as type of raw materials, duration of fermentation as well as biological and environmental conditions of fermentation.
2. Red Yeast Sweet potato stably produces 2,250mg/kg of monacolin-K from mass production system, and contains no contained citrinin, bacteria and coliform bacteria.
3. Developed new health functional food the type of granule and capsule using Red Yeast Sweet potato contained high concentration of monacolin-K.
Newly developed Red Yeast Sweet potato granule and capsule as health functional food should be increase household income by creative new request of sweet potato.
Ⅷ. Development of vacuum fried snacks and restructured frozen products using sweet potatoes
Using a variety of processing technology, new products of sweet potatoes (vacuum fried snacks, restructured frozen products, pudding) for ready-to-eat and between meals were developed. Compared to the atmospheric fried snacks, vacuum fried snacks represented lower moisture and fat content and higher content of functional components like carotenoid and anthocyanin, indicating they were excellent in terms of functional and nutritional quality. And they also showed good results in sensory evaluation. And the optimal pretreatment and vacuum frying conditions were established to prepare vacuum fried snacks excellent in sensory quality. Because purple-fleshed sweet potatoes are rich in anthocyanins, soluble in water, a lot of methods to minimize the loss of anthocyanins are required during pretreatment and vacuum frying. In this study, the heat treatment and sugar steeping methods to dramatically reduce the loss of anthocyanins were developed compared to conventional vacuum frying process. Steam treatment and sugar steeping in vacuum minimized the loss of anthocyanins in vacuum fried snacks compared to conventional blanching and sugar steeping in the atmospheric pressure, and through this process, we could prepare purple-fleshed sweet potato snacks which were approximately 1.9 times higher in anthocyanin content. In addition this study was designed for development of the fried sweet potatoes and roasted sweet potatoes by restructuring purees in order to enhance the added value of low-quality sweet potatoes. But it is difficult to expect that the texture of processed products manufactured with purees is similar to that of processed products manufactured with fresh sweet potatoes because the texture of sweet potatoes receive significant damage in preparation of purees. Therefore in this study, we tried to develop technologies of pretreatment and rheology control of sweet potato purees to make the texture of restructured products to be similar to that of processed products manufactured with fresh sweet potatoes. Sweet potato puree and processed products that showed excellently solid, voluptuous texture and good sensory evaluation compared to those prepared by conventional method were developed by preheating and the reaction of biopolymers with calcium salt in preparation of purees.
