분석성분에 따라 DB 구축을 위해 식품공전, AOAC법, 분석 전문지에 등재된 방법 적용하여 일반성분 12종, 무기질 12종, 비타민 14종, 지방산 4종, 기타 2종에 대한 분석방법을 확립하였다. 분석결과에 대한 허용 회수율 및 반복정밀성 오차 기준 설정하고 기관별 분석데이터를 수집하여엑셀 함수기능 활용하여 상대표준편차(Relative standard deviation)를 구한후 통과 또는 미통과판정을 내렸으며 미통과시 재분석 통보를 내렸다. 분석 대상 시료에 대해 국내·외 영양성분 데이터를수집하여 분석결과 비교 시 참고 자료로 활용하였다. 또한 FAO/INFOODS 가이드라인에 근거한 분석데이터 검토 기준 설정하여 검토기준 미달시 재검토판정을 내려 분석기관의 재확인을 요청하였다. 국내 영양 DB에 등재되어 있는 요오드의 영양성분 자료는 거의 없는 상태이며 대부분국외 자료의 인용율이 높아 정확한 한국인의 요오드 섭취 수준을 파악하고 영양정책을 시행 및 개선하는데 어려움이 있으므로 신뢰도 있는 국내 요오드 DB 구축이 필요할 것으로 사료되며 특히 식품에 함유된 요오드 함량은 매우 미량이고, 이온-선택전극법으로는 25 mg/kg 이하인 요오드는 측정이 어려움에 따라 신뢰도 있는 DB 구축과 정확도 높은 분석법이 요구된다. 현재 식품공전에 등재한 요오드 분석법은 이온-선택전극법을 적용한 것으로 고체상/액체상 또는 액체상/액체상의 경계면에 생기는 전위차를 측정하여 요오드를 정량하는 것으로 시료 중 약 25mg/kg 이상의 농도일 경우 측정이 가능한 방법이다. 따라서 식품에 미량 존재하는 25 mg/kg이하의 요오드를 분석하기 위해 본 연구에서 도출해낸 유도결합플라즈마법을 사용하면 정확한 요오드 함량을 얻을 수 있을 것으로 사료된다. 농식품자원중 지방산 및 트랜스지방산에 대한 분석의 경향은 개별 지방산 및 트랜스 지방산을 검체 100 g중의 양으로 표현함에 있어 검체중의 지방 함량이 낮은 전분류, 채소류, 과일류는 불검출이나 극히 소량의 지방산을 함유하고 있으며, 상대적으로 지방함량이 높은 육류, 어류, 시리얼 같은 곡류는 다양한 지방산의 분포와 트랜스 지방산의 함량 등을 알 수 있다.

Korean Standard Food Composition Table is the major source of food composition data in the South Korea. It provides the foundation for most food composition databases in the public and private sectors. Korean Standard Food Composition Table has been published since 1970 and undated every five years by Rural Development Administration (RDA). In 2011, 8th version of Food Composition Table is released. Due to the increasing demands of nutrient database users and generators, in 2013, RDA started new research project to improve data quality and quantity for 9th version Food Composition Table. Over 1,000 food items frequently consumed in Korea were selected as key foods using the results of national health and nutrition examination survey. About 400 raw materials and processed food items were collected and analyzed for two years. Target nutrients which were analyzed by corporative labs were increased from 22 to 43 such as, vitamin B6, vitamin B12, vitamin K, vitamin D, folate, trans-fatty acid, etc. In this study, data quality evaluation system were established in collaboration with 9 institutions. To evaluate analytical data quality, the results of analytical method validation such as accuracy, precision, LOD, and LOD have been collected from the corporative labs. Using a composite control sample, a quality control chart that is used to evaluate precision, accuracy, and drift of the measurement system has been plotted. Moreover AOAC and Codex guidelines have been adopted to assess the precision of replicate values and to reject any data that do not meet the quality control criteria established for the study.
The analytical method for the determination of 13 types of minerals (sodium, calcium, potassium, phosphorus, magnesium, iron, copper, manganese, zinc, molybdenum, selenium, iodine, and mercury) in food using inductively coupled plasma optical emission spectrometry (ICP-OES) and inductively coupled plasma mass spectrometry (ICP-MS) were validated in terms of precision, accuracy, recovery efficiency and linearity. Certificated reference material 1849a was used as an infant/adult nutritional formula which was purchased from national institute of standards & technology. All calibration curves exhibited good correlation linearity (r2=0.9999) within the tested ranges. ICP-OES of the limit of detection and the limit of quantification were less than 0.1005 mg/kg and less than 0.3351 mg/kg, respectively. ICP-MS of the limit of detection and the limit of quantification were less than 0.0032 μg/kg and less than 0.3524 μg/kg, respectively. The inter-day precision (n=12) values were ranged from 1.19 to 18.19 %, and intra-day precision (n=3) values were ranged from 0.09 to 4.80 %. Recovery efficiencies of the macro mineral ranged from 90.35 to 110.63 % and the micro mineral ranged from 82.19 to 103.66 %.
The purpose of this study is to develop a fatty acid database (DB) for the frequency consumed foods, simple preprocessed foods, and cooking methods in order to provide Korean population with nutritional information. Total lipid content and fatty acid composition were confirmed by measuring fatty acids and trans fatty acids (TFA) content.
The confectionery product (n=16) contained 0.29-30.42 % of crude lipid, 8.9 % of saturated fatty acid (SFA), 6.6 % of monounsaturated fatty acid (MUFA), 3.1 % of polyunsaturated fatty acid (PUFA), and 0.2 % of TFA. Particularly, the high proportion of C18:1 TFA showed with 105.01 ± 6.63 mg/100 g. The fatty acid contents of legume (n=4) showed in the following order: linoleic acid (0.22 ± 0.02 %) > linolenic acid (0.16±0.01 %) > oleic acid (0.13±0.01 %). The fatty acid contents of nuts (n=3) presented in the following order: oleic acid (30.07 ± 0.26 %) > linoleic acid (30.07±0.26 %) > vaccenic acid (0.66±0.08 %). The SFA and MUFA contents of meat (n=6) accounted for 90% of the total fatty acid, and the TFA composition of meat, including C18:1 TFA (159.6 mg/100 g), C18:2 TFA (51.2 mg/100 g), and C18:3 TFA (4.9 mg/100 g). Likewise, in the present study expects that TFA contents of agri-food will help Korean population choose healthy eating. Finally, proximate nutrient database(13 types minerals, 37 types fatty acid) for 438 kinds of foods was constructed. This result will be used as basic data for 9th Food Composition Table and the policy of nutrient and health, supply of agri-foods, management for school meal, etc.
