제 1 절 수출용 국화 상품의 수출 전략 및 수확 후 관리기술 매뉴얼화
1. 수출시장의 유통 환경조사
❍ 수출 유통과정 분석으로 유통 단계별 관리 시스템 마련
농가에서의 빠른 품온(식물이 가지고 있는 온도) 저하와 수출업체로부터 수거되기 전까지 냉장 저온보관이 필요할 것으로 조사되었다. 봄, 가을 또는 동계에 외부기온에 따라 냉장차의 가동여부가 절화의 신선도에 영향을 미칠 수 있음을 확인 할 수 있었고 특히, 검역을 위한 수검품의 경우 품질저하를 초래하며 검역 수검 시 컨테이너의 미작동 및 오작동에 따른 온도 불균형으로 인해 품질 저하가 초래할 것으로 보였다. 수출국(일본)의 경우, 물류센터 내 온도 관리 미흡으로 절화 상품성 저하 및 절화 품질이 좌우되는 것으로 분석 되었다. 온도 그리고 습도를 측정하는 센서를 활용하여 수출 유통 환경을 새롭게 구축 방법은 다음과 같다. 데이터로거를 이용하여 일정 주기별로 데이터를 수집한다. 실시간 대응이 부족한 점은 향후 해당기관(예: 일본의 검역기관, 유통기관 등)과의 협력을 통해 Cold Chain이 계속 유지 될 수 있도록 보완해야 할 것이다.
❍ 국화 수출 유통구조 데이터베이스 구축을 통한 최적 환경의 표준화
데이터 로그 수집이 가능한 소프트웨어를 이용하여 센서에 기록된 온습도 데이터를 가져와 데이터베이스에 저장한 후 온습도 데이터를 Chart로 표현하기 위해 데이터 형태로 가공한다.
Google Chart Tool을 이용하여 온습도 데이터를 Chart로 표현하며 이때, Chart로 표현된 온습도 데이터는 국화수출사업단 홈페이지에 게시되어 사용자들은 이를 통해 정보를 얻을 수 있도록 하였다.
❍ 시장 및 소비자의 선호 분석에 따른 수출확대 전략 수립
일본에서 널리 사용되고 있는 불단용 국화와 캐주얼 플라워를 대상으로 조사를 하였으며 설문 조사결과, 캐주얼 플라워의 경우 일본 소비자 모든 그룹에서 화색, 화형이 꽃 선택 기준으로 가장 높은 효용치를 보여주었고, 불단용의 경우 화형을 가장 중요하게 생각하는 것으로 나타났다. 그리고 중국 시장의 경우 흰색 겹꽃의 단일품목으로 포장한 상품, 러시아의 경우 흰색 겹꽃에 다른 품목(또는 품종)의 꽃과 함께 포장한 상품을 개발하는 것이 앞으로 수출확대에 기여할 수 있을 것으로 판단되었다.
2. 수출시장 맞춤형 상품 등급 설정
❍ 수출시장 및 소비자 기호 중심의 등급설정 및 매뉴얼 제작
국화의 주요 수출국인 일본시장에서 국산 절화국화의 수출 극대화를 위하여 수출시장 맞춤형 상품의 등급을 설정하고자 국내외 절화류 표준규격 현황 및 국화 표준규격에 대해 조사하였다.
수출국 맞춤형 상품과 등급별 규격에 따른 표준화 작업, 그리고 표준화에 따른 홍보 및 교육용 매뉴얼(소책자, 포스터, 앱)을 제작하였다. 또한, 국화 수급 정보를 수집하여 수급 정보 고유 시스템을 구현하였고 웹 기반 국화 수급 조절에 관한 정보 공유를 위해 시스템을 개발하였다.
❍ 등급 규격 관련 매뉴얼 E-book 및 앱 개발
생산자와 소비자, 수출 유통업체 등에서 활용 가능한 ‘국화등급설정매뉴얼’ E-book (http://bigdata.sejong.ac.kr:8080/flower_ebook.html) 및 앱을 개발하였다. 앱을 통한 ‘국화 등급설정 매뉴얼 책자’를 연동시켰을 뿐 아니라, 국화수출연구사업단 홈페이지(http://chrysanthemum.in)에서도 연동 가능하여 언제 어디서나 등급규격 정보를 얻을 수 있도록 하였다.
3. 국화 수급 조절 정보 공유 기술 개발
❍ 웹 기반 국화 수급 조절 및 정보 공유를 위한 시스템 개발
국내 화훼 수출 관계자들이 수출을 하는데 있어 생산자는 수급 상황을 고려하여 적시에 재배 및 출하를 할 수 있도록 하고, 수출업자들은 해당 제품을 필요한 만큼 알맞은 시기에 확보하는 것이 필요하다. 그러기 위해서는 수급 정보를 공유할 수 있는 체계적인 시스템을 구축하는 것이 많은 도움이 된다. 하지만 현재 국내에는 수급 정보를 공유할 수 있는 시스템이 존재하지 않는다. 이에 따라 이 연구에서는 화훼 수급 정보를 공유할 수 있는 시스템을 설계 및 구현하였다.
이 시스템은 특정한 사용자를 대상으로 구현되었으며, 생산자와 수출업자들이 웹이나 모바일 기기를 이용하여 실시간 정보를 입력하거나 검색하여 상황에 맞도록 수급 정보를 활용할 수 있다.
4. 수확 후 일괄 관리 프로그램 확립 및 적용, 매뉴얼화
❍ 기술 및 적용 프로그램에 따른 절화국화의 수출 극대화 전략의 현장화
절화 국화의 수출 극대화를 위하여 “국화수출사업단”홈페이지(http://chrysanthemum.in)를 개설하였으며 이를 통한 수출 극대화와 현장화를 꾀하였다. 홈페이지 내에서는 “국화등급설정매뉴얼”(http://bigdata.sejong.ac.kr:8080/flower_ebook.html)과 “국화 수확후 관리 매뉴얼”(http://bigdata.sejong.ac.kr:8080/flower_ebook2.html)을 E-BOOK으로 연동시켰을 뿐 아니라 국화에 관련한 재배기술, 논문에 관한 정보를 익힐 수 있다.
수출유통정보를 통하여 세계국화 생산&무역추이, 국화시세를 확인 할 수 있으며 관련 사이트도 쉽게 접속 할 수 있도록 구현하였다.
❍ 어느 곳에서나 활용 가능한 N-screen 수확 후 일괄 관리 매뉴얼 기술 개발
‘국화 등급 설정 매뉴얼’과 ‘국화 수확 후 관리 매뉴얼’을 컨텐츠로 사용하여 단행본으로 만든 자료를 E-Book 시스템으로 구현하였으며 Web과 Mobile에서 볼 수 있도록 HTML5와 CSS를 사용하여 디자인 하였다. Mobile은 N-Screen이 가능한 JQuery를 이용하였고 E-Book은 크롬과 익스플로러 11버전에서 개발하였다. E-Book의 기능에는 메뉴를 이용한 페이지 이동과 일반 페이지 이동, E-Book을 해당 문서 파일 PDF 다운받기가 가능하다.
제 2 절 수출 국화의 최적 수확 단계, 예냉 및 저장조건 구명 및 산업화
1. 스탠다드와 스프레이 국화의 최적 수확적기 구명 및 품질 평가
춘계, 하계, 추계, 동계 등 사계절에 걸쳐 스탠다드 국화를 개화단계에 따라 6단계로 구분한 후, 수송온도에 따라 절화의 품질 변화를 조사한 결과 국내 출하용은 6단계의 절화를, 일본 수출용은 3단계의 절화를 5℃ 조건에서 수송하는 것이 절화의 품질을 유지하면서 노화를 지연시킬 수 있을 것으로 판단되었다. 또한 스프레이 국화에 있어서도 일본 수출용은 3단계의 절화를 5℃에서 수송하는 것이 절화의 품질을 유지하면서 노화를 지연시킬 수 있을 것으로 판단되었다.
2. 국화의 계절 및 품종별 최적 예냉 조건 구명
스탠다드와 스프레이 국화를 계절별로 수확하여 가장 효과적인 예냉 방법을 조사하였다. 일반 저장고와 차압송풍식 저장고에서 5℃와 7℃에서 예냉 할 경우 절화 수명에는 큰 차이가 없었으나, 모의 수송 후 개화 정도를 비교했을 때 일반 저장고에서 예냉을 한 경우는 일부 꽃이 개화되어 상품성이 조금 떨어지는 결과가 나타났다. 반면에 차압송풍식에서 예냉 한 처리에서는 절화의 개화 상태가 수확 직후와 동일하였으며, 절화의 품질과 수명이 양호하였다.
3. 계절별 국화의 저장 온도 및 기간에 따른 절화의 품질과 수명
계절별로 스탠다드 국화와 스프레이 국화를 수확하여 절화의 품질변화를 조사하였는데, 계절별 차이는 크지 않았다. 일반적으로 5일 동안의 단기간 저장에서는 1~4℃에서 저장했을 때, 생체중과 화폭 등 품질이 우수하였으며, 수명도 다른 처리에 비해 연장되었다. 10일간 저장에서는 1℃에서 저장한 처리에서 수명과 품질이 가장 양호하였다. 20~30일간 장기 저장은 1℃에서 절화 품질이 가장 좋았으나, 5일과 10일 저장보다 저장 온도에 상관없이 생체중, 화폭, 흡수량이 크게 감소하였고, 절화수명도 크게 짧아졌다. 따라서 절화 국화를 수확한 후 5일 저장하기 위해서는 1~4℃가 효과적이며, 10일간 저장을 위해서는 1℃에서 저장하는 것이 적합하였고, 20일 이상 저장하는 것은 바람직하지 않았다.
4. 절화 국화의 예냉 및 저장방법에 따른 절화의 품질과 수명
스탠다드 국화와 스프레이 국화를 수확하여 5℃에서 예냉한 후 1, 4, 7, 10, 20℃에서 5, 10, 20일간 저장한 후 절화의 품질변화를 조사하였다. 전반적으로 품종에 관계없이 예냉한 후 5일간 저장한 절화는 저장온도가 1~7℃ 범위에서 절화의 품질이 유지되었고, 10일간 저장한 처리에서는 저장온도가 1~4℃에서 절화 품질과 수명에 효과적이었다. 5℃에서 예냉 후 20일간 저장한 처리는 다른 처리보다 저장 온도 1℃에서 절화 품질이 가장 좋았으나, 품질 자체는 많이 떨어졌다.
5. 국화의 예냉, 전처리, 저장, 수송 등 수확 후 관리과정에 대한 시뮬레이션 시험 연구
스탠다드 국화와 스프레이 국화를 수확한 후 예냉, 전처리, 저장 처리를 실시하고 선박에 선적하여 일본 시모노세끼 항에 도착한 후 일본 동경으로 수송하는 전 과정에 대한 시뮬레이션을 실시하였다. 이 전 과정에 대한 국화 박스 내의 온도와 습도를 조사하였고, 일본 동경에서의 절화의 품질변화를 조사하였다. 예냉과 전처리를 실시한 처리에서 절화 품질이 양호하였고, 10일 이상 저장한 처리는 동경 현지에서 일부 개화되어 상품 가치가 하락하였다.
6. 재배 농가별 스탠다드 국화의 수확 후 절화 품질 및 수명 비교
스탠다드 국화 ‘백선’의 양액재배 2농가의 절화 품질이 토경관비재배 2농가의 것보다 우수하였고, 절화수명도 더 길었다.
제 3 절 수출 국화 상품 선도 유지용 최적 전처리제, 포장재 개발 및 현장화
1. 선도유지를 위한 전처리제 효과 및 현장 활용기술 개발
스탠다드 절화 국화 ‘백선’의 전처리 결과 경매장에서는 큰 유의차가 없는 것으로 조사되었으나, 소비자 관찰 시점에서 NaOCl의 절화수명이 다소 연장되는 것으로 조사되었다. 또한 스프레이 절화 국화 ‘레오파드’의 실험 결과 GA4+7, Promalin, GA3 처리구가 다른 처리구에 비해 농도에 상관없이 다소 절화수명이 연장되는 것으로 조사되었다.
2. 유통 시 온도조건별 고품질 선도유지용 최적 전처리 기술 개발 및 현장화
스프레이 절화 국화‘레오파드’의 온도별 최적 전처리제 효과 분석 결과, 5℃의 온도가 상온에 비해 수명이 다소 연장되는 것으로 조사되었고, 5℃의 수송온도에서 NaOCl 전처리가 절화수명 및 품질에 영향을 주는 것으로 조사되었다. 스탠다드 절화 국화 ‘백선’실험 결과 NaOCl, BA, 1-MCP 처리구가 경매장에서 초기 봉오리 상태를 유지시켜 효과적인 것으로 조사되었다. 또한 일본으로 선박 수출 시 스탠다드 절화 국화‘백선’은 NaOCl 처리가 다른 처리구에 비해 경매장에서의 개화가 덜 진행되어 효과적인 것으로 판단되었다. 수송환경을 조사한 결과 계속되는 온도변화에 따라 국화의 품질이 손상되는 것으로 사료되었다. 스탠다드 절화 국화‘백선’의 최적 복합 전처리제를 조사한 결과, 앞선 실험들과 유사하게 NaOCl 처리가 균일한 개화 진행을 보여 효과적인 것으로 판단되었다.
3. 최적 실용형 전처리 기술개발 및 현장화
스탠다드 절화 국화‘신마’는 NaOCl, ClO2 단독 및 혼용 처리가 절화수명, 꽃의 화색, 박테리아 검정 등의 품질을 향상시켜 효과적인 것으로 조사되었으며, 그 중 NaOCl 처리는 농가에서 쉽게 사용할 수 있는 전처리로 사료되었다. 스탠다드 절화 국화 ‘백마’는 Chrysal RVB, NaOCl + ClO2 처리에서 절화수명이 다소 연장되어 효과적인 것으로 판단되었다. 스프레이 절화 국화 ‘라도스트’는 NaOCl + BA + ClO2 처리구의 절화 수명이 다소 연장되어 품질에 영향을 미친 것으로 사료되었다.
또한 스탠다드 절화 국화‘백마’를 전처리 후 일본으로 선박 수출하여 실험한 결과, NaOCl 처리가 선도유지에 영향을 미치는 것으로 조사되었으며, 일본의 선박 수출 시 수송 온도는 10℃이하의 저온저장을 하는 것으로 나타났으나, 검역 시 상온에 노출되는 문제가 있는 것으로 판단되었다.
4. 수확 후 저장유통 온도별 최적 전처리 기술 및 현장화
스탠다드 절화 국화 ‘신마’, ‘백마’ 와 스프레이 절화 국화 ‘라도스트’ 의 실험 결과 NaOCl + BA 전처리 후 10℃에 저장하였을 경우 초기 개화 지연에 효과가 있는 것으로 조사되었다.
따라서 NaOCl + BA 전처리 후 저온 저장이 유통 단계 초기에 개화를 지연시키는 효과가 있는 것을 알 수 있었다.
5. 비화학적 전자빔 전처리 실용 기술 개발
스탠다드 국화 ‘백선’은 10MeV 100Gy에서 절화수명이 연장되었으며, 2.5MeV 800Gy, 10MeV 600Gy 이하에서 절화품질이 유지되어 전자빔에 대한 저항성이 높았다. 스프레이 국화 ‘델몬트’는 10MeV 600Gy이하에서 절화 품질이 유지되어 전자빔에 대한 저항성이 높았으며, ‘레오파드’는 2.5MeV와 10MeV 모두 600Gy 이하에서 전반적인 절화의 품질이 유지되어 전자빔에 대한 저항성이 높은 것으로 판단하였다.
6. 비화학적 전자빔 전처리 실용 기술 개발 및 현장화
스탠다드 국화 ‘백선’와 스프레이 ‘레오파드’는 전처리를 통해 전자빔 조사선량이 높아지면서 발생하는 문제점이 개선되었으며, BA와 Sodium hypochlorite를 전처리 한 후 전자빔을 조사하였을 때, 절화수명과 품질을 효과적으로 유지할 수 있었으며, 이를 통해 해충검역에 전자빔을 보다 안정적으로 사용할 수 있을 것으로 판단하였다.
7. 기능성 포장재 개발 및 품질 분석
스탠다드 절화 국화 ‘백선’과 스프레이 절화 국화 ‘레오파드’ 의 실험 결과 기능성 포장재를 사용하여 포장하였을 경우 초기개화단계의 변화폭이 작은 것으로 분석되었고 이와 같은 결과는 유통기간 중 개화 지연 및 선도유지에 효과적인 것으로 판단되었다.
8. 선도유지용 기능성 포장재 개발 및 현장 적용
스탠다드 절화 국화 ‘백선’과 스프레이 절화 국화 ‘레오파드’ 의 실험 결과 기능성 포장재로 포장하였을 경우 포장 3일 후 개화가 다소 지연된 것으로 분석되었으며 이는 기능성 포장재 처리시 수확 후 유통 단계 중 초기 개화 지연에 효과적인 것으로 판단되었다.
향균팩을 처리를 한 결과, 잿빛 곰팡이 병원균의 균사 및 포자가 현저히 적게 발생한 것으로 관찰되었으며, 특히 아황산나트륨, 과망간산칼륨 및 제올라이트를 함께 포함하는 향균팩의 경우 잿빛 곰팡이 병원균 포자가 거의 관찰되지 않아 방제능이 매우 우수한 것으로 확인되었다.
9. 선도유지 기능성 포장재(팩 및 캡슐) 개발 및 현장화
스탠다드 절화 국화 ‘신마’와 스프레이 절화 국화 ‘라도스트’ 의 박테리아 실험 결과 캡슐 1개를 처리하였을 때 가장 적은 반응을 나타낸 것으로 분석되었으며, 이와 같은 결과로 보아 절화 국화의 절단면 오염 방지에 효과적인 것으로 판단되었다.
이산화염소 캡슐을 처리한 경우, 잿빛 곰팡이 병원균의 균사 및 포자가 거의 관찰되지 않아 방제능이 매우 우수한 것으로 확인되었다. 또한 식물체의 잎에서도 이와 비슷한 결과를 나타내었으므로 절화 국화의 포장 시 이산화염소 캡슐을 처리하면 잿빛곰팡이병 방제에 효과적인 것으로 판단되었다.

- Providing management system of each distribution steps by analyzing distribution process during export
We collected the environmental data using data logger in the process of export and distribution and analyzed environmental variations in each distribution steps. According to our results, rapid decrease of plant temperature and cold storage are needed before the export company collect it. By outside temperature of spring, fall or winter, the operation of refrigerated van could influence freshness of cut flowers and expecially, when it comes to products that need quarantine inspection, deterioration of quality would incur because of the temperature imbalance caused by malfunction or inactive of container while being inspected. In the case of export country (Japan), it was analyzed that insufficiency at controling temperature in the distribution center causes a decline of marketability and quality of cut flower. Collecting data by a certain period using data logger and cooperating with related authority (ex: quarantine station and distribution center in Japan) are required to maintain the sustainable cold chain.
- Standardization of best environment by constructing database of chrysanthemum export distribution structure
After storage of temperature and humidity data recorded by data logger into database, it is processed to show temperature and humidity data in a chart. By using Google Chart Tool, temperature and humidity data is expressed in a chart. Thus, this chart data will be posted on the website of chrysanthemum export agency, and users could get the information through this system.
To establish export expansion strategy, questionnaire survey analysis was conducted on consumer preference on chrysanthemums for casual flowers and Buddhist altars in Japan. According to the survey, flower colors and shape were most important for selection criteria of flowers in all customer groups in casual flowers, while flower shape was more important for selection in case of Buddhist altars. It is also suggested that development of chrysanthemum products, such as only white double chrysanthemums in packages and white double mixed with other flowers in packages, is needed to expand exportation to Chinese and Russian markets, respectively.
2. Establishment of classification system customized for the export markets
- Development of manual and classification system focused on exporting market and consumer preferences.
We investigated the classification standards of domestic and foreign cut flowers to establish the classification systems customized for export market to maximize chrysanthemum export to our main flower markets Japan. We performed standardization according to the standard classification system customized to the export market and developed manuals (pamphlet, poster, app) according to the standards for a publicity and an education. Also, by collecting information about chrysanthemum’s supply and demand, we developed supply and demand information system and web-based system that shares information about control of chrysanthemum’s supply and demand.
- Development of E-book and application on classification standards.
We developed E-book and application on classification standard manuals for chrysanthemum exportation and practicalized the manuals through the connection of the classification standard manuals to E-book(http://bigdata.sejong.ac.kr:8080/flower_ebook.html).
3. Development of the system for sharing information and controling chrysanthemum’s supply and demand.
- Development of web-based system for control of supply and demand of chrysanthemum and sharing information.
In export by domestic flowers exporter and other concerned parties, suppliers should able to grow and shipment timely by considering supply and demand situation, and exporters should able to secure the product as required at the right time. For this system, system that could share the information about supply and demands is required. However, there is no system that can share information about supply and demands in this country. Therefore, this research has designed and developed system that can share information about supply and demand of flowering plants. This system is developed for specific users, and exporters and producers can utilize the web or mobile devices to enter or search real-time information, so they could use right information about supply and demand at the right circumstances.
4. Establishment, application and manualization of postharvest integrated management program
- A field application of export maximizing strategy according to technology and application program We performed manualization of field supply method of technology, such as casual analysis of deterioration after harvest, harvest stages, precooling and storage, preservatives and packing materials to minimize postharvest loss rate. Furthermore, we will perform a field application through development of posters and a webpage.
- Development of postharvest integrated management technology that can be available in any locations Using chrysanthemum classification manuals and postharvest physiology manuals as book contents, we developed the E-book system that can be shown on web and mobile devices.
Chapter 2. Investigation and Industrialization of the Optimum Harvest Stage and Precooling and Storage Conditions for Chrysanthemum Export
1. Investigating the optimum harvest time and evaluating the flower quality of standard and spray chrysanthemum
We separated standard chrysanthemum flowers to 6 stages on the basis of their opening stages throughout four seasons, spring, summer, autumn, winter, and determined the effect of temperature during transport on the quality of cut flowers. Our results suggest that harvesting flowers at stage 6 for the domestic markets and stage 3 for the Japanese markets, followed by transport at 5℃ are the best methods to maintain the quality and retard the senescence of cut flowers. The results also show that harvesting spray chrysanthemum at stage 3, followed by transport at 5℃ is best for better quality and longer vase life of cut flowers.
2. Exploring the optimum precooling condition for chrysanthemum varieties in different seasons
We harvested standard and spray chrysanthemums throughout four seasons of the year and determined the most effective precooling methods. There is no significant difference in vase life between the precooling methods (room and vacuum cooling) and between cooling temperatures (5℃ and 7℃). After simulation transport following precooling, the flowers treated with the room cooling showed a partial petal opening and slightly low quality, while the flowers treated with vacuum cooling showd a better quality and longer vase life.
3. Determining the effect of storage temperature and time on the quality and vase life of cut flowers in different season
We harvested standard and spray chrysanthemum throughout spring, summer, autumn and winter, and determined the effect of storage temperature and time on the quality change of cut flowers.
The result showed that harvest seasons rarely influenced on the quality of chrysanthemums. In the short term storage (5 days), the flowers kept at 1~4℃ showed a better quality, such as a higher fresh weight and a larger flower diameter.
