1. 신선편이 농산물 수출을 위한 고품질의 안전한 원재료 생산 시스템 구축
주년생산 및 연중 고품질 원료 생산을 위한 수출전용 품목 선발을 목적으로 국내ㆍ외 시장조사를 통해 수율, 운송 중 저장성 및 안전성에서 강점을 나타내는 어린잎 5종, 포기상추 5종의 품목선발을 완료하였다. 또한 연중 안정적인 원료 공급기반 마련을 위해 무농약, GAP 수준의 농가보급형 수경재배 system을 개발하여 이천농장에 적용하였으며 체계적인 운영체계 확보를 위해 GAP 및 ISO 22000 인증을 완료하였다.

1. 신선편이 농산물 수출을 위한 고품질의 안전한 원재료 생산 시스템 구축
주년생산 및 연중 고품질 원료 생산을 위한 수출전용 품목 선발을 목적으로 국내ㆍ외 시장조사를 통해 수율, 운송 중 저장성 및 안전성에서 강점을 나타내는 어린잎 5종, 포기상추 5종의 품목선발을 완료하였다. 또한 연중 안정적인 원료 공급기반 마련을 위해 무농약, GAP 수준의 농가보급형 수경재배 system을 개발하여 이천농장에 적용하였으며 체계적인 운영체계 확보를 위해 GAP 및 ISO 22000 인증을 완료하였다.
이번 연구를 통해 수율 및 품질 안전성을 확보하기 위해서는 NFT 수경재배 방식이 가장 효과적인 것을 확인할 수 있었지만 국내 대규모 시설이 확보되지 않은 점과 초기 투자비용에 대한 농가 부담을 줄이기 위해 DFT 재배방식을 기본으로 하여 품목별 최적 재배기준 및 공정기술을 도입하여 단점을 보완해 나가는 방향으로 접근하였다. 이로 인해 전용 유기상토 배합비율, 양액 농도 및 pH, 전용 트레이를 개발하였고 안정적인 공정 육묘 process를 구축하였으며 수출 과정에서 발생할 수 있는 미생물 안전성 확보 위해 재배 단위에서 적용이 가능한 양액 UV 살균 system을 도입하여 보다 안전적인 원료 공급 체계를 구축하였다. 연중 생산성에서도 초기 목표치 달성에 성공하였으며, 기존 40% 수준이었던 생산의 계절적 편차 또한 25% 이내로 관리되어 외기 기온에 의한 생산성 편차를 재배 기술 및 관리로 개선이 가능하였음을 확인할 수 있었다. 추가적으로 아직 상용화 되지는 않았지만 인공적인 광원(LED, UV)을 통한 보광 공정, one-cut 포기상추용 통기형 트레이 적용 등 선진 재배기술의 효과 검증을 통해 보다 발전된 수경재배 system 구축 가이드 라인을 설정하였다.
또한 재배적인 측면에 국한되지 않고 단위기술을 적용후 수확후 관리방안으로 연구범위를 확대하여 기존의 저장시설을 개선 현장형 예냉 시설을 구축하였다. 이를 통해 공정 및 유통시품온 상승에 의한 호흡을 제어함으로써 선도유지효과를 확인하였으며, 수출제품 뿐만 아니라 국내 시장에 유통되는 신선편이 제품의 선도유지를 위한 원료관리 체계에 활용 중에 있으며 이번연구를 통해 적용된 공정단위기술 및 재배 기준에 대해서는 공정별 매뉴얼 작성을 통해 농가기술지도시 활용할 수 있도록 문서화 하였다.
2. 신선편이 농산물의 유통관리 핵심기술 개발
수출전용 품목으로 선발된 어린잎과 포기상추를 대상으로 원료의 생리적 특성 및 가공특성을 조사하여 품목별 품질변화 특성을 분석한 결과 조직이 연한 품목(적근대)의 경우 가공공정에서 발생된 스트레스에 의해 유통 중 짓무름이 심하게 발생하며, 조직이 강한 품목(바타비아 그린, 바타비아 레드)의 경우는 짓무름이 심하지 않으나 줄기의 부러짐 현상이 문제가 되었다. 절단면에 발생하는 갈변은 어린잎 품목 중에는 바타비아 그린이 가장 크게 나타나며 포기상추에서도 문제시 되었다. 포기상추의 경우 갈변 발생이 문제가 되므로 ‘Ovired, 'Westham', 'Risewan', 'Coventry'의 4 품종의 품질변화를 비교한 후 저장성이 높고 갈변과 미생물 증식이 적은 ’Ovired’와 ‘Westham’ 품종을 수출 품목으로 선정하였다. 소비자의 기호도를 고려하여 품목을 혼합하여 제품화 할 경우에는 갈변현상은 육안으로 잘 나타나지 않았으나 연한 조직에서 발생되는 짓무름과 부러짐 현상은 유통 중 상품성을 낮추는 요인으로 작용하는 것으로 분석되었다. 또한 혼합 제품의 경우는 호흡과 에틸렌 발생이 단일 품목에 비해 높아 품질변화가 더 빠르게 발생할 가능성을 확인할 수 있었다. 따라서 가공공정에서 물리적 상처를 경감시키고 호흡률을 억제하며 갈변과 미생물 증식을 제어할 수 있는 기술개발의 필요성이 대두되었다.
신선편이 공정 과정 중 발생하는 원료의 물리적 상처가 상품성에 미치는 영향을 조사한 결과 물리적 상처에 의해 미생물 증식이 빨라짐을 확인하였으며 유통 온도가 5℃에서 1~0℃로 낮아질 경우 품질변화가 억제됨은 물론 물리적 상처가 미생물 증식에 미치는 영향을 제어할 수 있었다. 신선편이 제품의 유통이 5일 이내에 이루어지는 국내시장에서는 5℃ 온도 설정이 품질 관리에 적합하나 10~14일의 선도유지 기간이 요구되는 수출 제품은 보다 더 낮은 온도로 저온 유통 체계 구축이 더욱 중요하다고 판단되었다. 미생물 증식은 온도가 낮을수록 효과적으로 경감되나 0~1℃ 환경에서도 4일 이후에는 증식이 빠르게 이루어지므로 저온 관리 이상의 기술이 요구되었다. 본 과제에서는 무농약 수경 재배된 원료를 대상으로 기술개발이 이루어졌으므로 미생물 제어를 위해 살균제 사용이 제한되어, 친환경적 기술 중 hexanol vapor 처리, active MAP, 열처리, 이산화탄소 처리 조건을 구명한 후 각 공정에 활용하여 선도유지 효과를 분석하였다. Active MAP처리 시 5% 이산화탄소 조건이 85% 산소조건과 병행 처리되었을 때 미생물 증식 억제 효과가 가장 높았으며 우수한 상품성을 유지하였다. 열처리 또한 미생물 증식 억제에 효과적이며 품질유지 효과를 얻을 수 있었으며, 품목별 조직 상태에 의해 열처리 한계온도 및 효과가 다르게 나타나므로 수차례에 걸친 실험을 통해 최적 조건을 설정하였다. 또한 최적 열처리에 의해 에틸렌 생성, 갈변현상 및 비타민 C 저하가 억제되었으며 항산화 활성도 높게 유지되는 효과를 확인할 수 있었다. 이산화탄소 처리시 세포의 pH가 변화함에 따라 효소적 갈변이 억제되며 조직의 강화 현상도 확인할 수 있었다. 이산화탄소를 세척 과정에 활용할 경우 탄산수 농도에 따라 잎부위에 갈색 반점이 나타나므로 장해를 일으키지 않는 처리 농도 기준을 pH 4.5 로 제시하였다. 그 외 유통 중 수분에 의한 짓무름 현상을 제어하기 위해 포장단계에서 수분 흡착제를 첨가하여 미생물 증식률을 감소시키고 관능 검사시 짓무름과 조직감의 변화가 억제되는 결과를 얻었다.
열처리를 신선편이 가공공정 단계별로 세척과 탈수 과정에 적용하여 효과를 비교 검토하였다. 세척단계 중 헹굼 공정에 열처리를 활용할 때 가장 효과적이었다. 그러나, 열처리 온도가 높아지면 짓무름이 발생하며, 온도가 적정온도보다 낮으면 처리 효과가 나타나지 않으므로 적정온도 유지가 매우 중요하며, 저온에 세척된 시료가 열처리 단계에 혼입될 때 온수 온도를 일정하게 유지하는 기술이 요구되었다. 신선편이 가공 공정 분석 결과 탈수 과정에서 어린잎과 포기상추의 부러짐과 짓무름이 가장 많이 발생하므로 물리적 상처를 경감시키면서 잉여 수분을 제거하는 방법으로써 열풍 건조 방식을 적용한 바 부러짐과 짓무름이 감소되고 갈변과 미생물 증식이 억제되어 품질 유지 및 안전성 확보에 효과적인 결과를 얻었다. 따라서 조직이 약한 어린잎과 one-cut 포기상추는 신선편이 제품화 과정에서의 손상을 최소화하기 위해 현재의 탈수 공정을 건조방식으로 변환하도록 제시하였다.
이산화탄소 처리를 신선편이 가공공정 단계별로 세척과 포장 과정에 적용하여 효과를 비교검토하였다. 원물수송, 절단 및 건조 단계에 이산화탄소 처리를 활용할 때 품질향상 효과가 미미하거나 전무하였으나 헹굼 단계에서의 탄산수 활용과 포장단계에서 고 이산화탄소 처리를 활용할 경우 갈변 및 미생물 증식이 탁월하게 억제되었다. 이산화탄소 처리를 할 경우에는 갈변과 미생물 증식을 억제할 뿐 아니라 조직감을 향상시켜 소비자 기호도가 높아지는 결과를 보였다.
각 공정별로 효과가 증명된 처리 기술들을 각각 병용하여 효과를 분석한 결과 세척공정에 열처리를 적용하고 포장단계에 active MAP 공정을 병행하는 방법과 세척과정에 열처리와 탄산수 처리 병행하는 방식을 선정하여 시범수출 환경 시뮬레이션 실험결과 14일의 선도유지 기간이 확보됨을 확인하였으며 이러한 결과를 바탕으로 어린잎과 one-cut 포기상추의 신선편이 제품화 공정 및 기술을 최적화하여 제시하였다.
3. 수출용 신선편이 농산물의 미생물 위해분석 및 저감화 기술 연구
어린잎 채소와 원컷 상추의 생산 및 가공 공정에서 원료 농산물과 토양 및 용수 등 환경 시료를 채취하여 미생물학적 품질을 평가하고 식중독을 유발시킬 수 있는 주요 병원성 미생물을 분석하였다. 생산단계 어린잎 채소와 환경 시료의 일반 세균수는 모두 6.8 log CFU/g 이상 분석되었으며 대장균군은 어린잎 채소와 토양에서 각각 3.2 log CFU/g 및 3.5 log CFU/g 수준으로 오염되어 있었다. 가공공정 단계에서는 일반세균수와 대장균군 모두 세척공정이 진행됨에 따라 최종제품 단계에서는 오염수준이 감소되었다. B. cereus의 경우 생산단계에서는 어린잎채소와 토양 또는 지지토에서 오염도가 높았으며, 가공공정에서는 원료 대비 최종 제품에서 약 1.4 log CFU/g 정도 감소되었다. 병원성 미생물의 정성분석 결과 생산단계에서는 S. aureus를 제외한 모든 병원성 미생물은 음성이었다. 본 연구에서 분리된 B. cereus를 이용하여 rep-PCR을 이용한 유전적 상동성을 분석한 결과 생산단계의 경우 지지토와 시료에서 분리된 균주의 유전적 상동성이 높아 반복적으로 이용되는 지지토에 오염된 균주가 농산물로 이행되었을 가능성을 보여준 반면 가공공정에서 분리된 균주의 경우 유전적 상동성이 낮아 공정 중 재 오염될 가능성이 낮음을 시사하였다. 원컷 상추의 경우도 오염패턴은 유사한 경향이었으나 공정 중분리된 B. cereus의 유전적 상동성은 높고, 환경에서는 분리되지 않아 원료에 오염된 균주가 최종제품까지 이행되고 있음을 시사하고 있다.
신선편이 채소에서 개발된 주요 식중독균의 생육 모델을 10여건 수집하였으며 생산부터 가공까지 모든 단계에서 분석 가능한 위생지표로 총균수를 대상으로 온도 변화에 따른 증식 패턴을 분석하였다. 1차 모델로 barany and roberts model을 이용하였으며 2차 모델로는 suboptimal Ratkowsky model를 이용하여 개발하였다. 신선편이 농산물의 생산-유통 및 수출단계의 온도 데이터를 data logger를 이용하여 수집하고 @Risk 프로그램을 이용하여 최적 분포함수를 도출하였다. 위해분석 모델은 위해미생물 중 생산-가공-최종 제품에서 검출빈도가 가장 높은 B. cereus를 대상으로 개발하였다. 농장에서 유통센터까지의 단계를 농장에서 예냉, 농장냉장창고에서 보관, 농장에서 가공공장으로 이송, 가공, 가공공장에서 유통센터로 이송, 유통센터에서 보관하는 단계로 구성하였다. 아울러 수출단계에서의 증식도 확률위해분석을 이용하여 추정하였다. 제시된 생산-유통 단계 중 농장에서 예냉 단계와 가공공장-유통센터사이의 이송단계에서 미생물이 추가로 증식될 가능성이 있었고 특히 예냉 단계에서 증식도가 상대적으로 높게 추정되었다. 한편 수출단계에서의 온도 조건에서도 농장에서의 예냉 단계 다음으로 증식도가 높게 추정되어 수출제품의 경우 수출 중의 온도관리를 철저히 할 필요성이 제시되었다.
신선편이 농산물 제어기술로는 대조군, 가정용탄산수, 전해산화수, 이산화염소, 차아염소산수, 마이크로버블+이산화염소, 열수마이크로버블 등을 비교하였다. 전기전도도, 일반미생물, 곰팡이를 분석한 결과 화학적 조건 중에서는 이산화염소가, 물리적 조건 중에서는 열수마이크로버블의 효과가 가장 우수함을 확인하였다. 이산화염소의 최적 농도 및 시간에 대해 품질과 미생물 저해정도를 바탕으로 식품으로써의 품질 특성을 저하시키지 않고 미생물은 저감화할 수 있는 처리조건을 도출하였다. 이를 바탕으로 열수마이크로버블, 열수마이크로버블+이산화염소수, 이산화염소처리 후 열수마이크로버블 처리와 같은 여러 미생물 복합제어기술을 선정하였다. 각 제어기술에 대해 어린잎채소의 품질특성과 미생물 제어수준을 분석하여 최적의 제어기술을 개발하였다. 아울러 복합 제어기술을 적용한 시료 중 미생물 군집을 분석하여 유사 농산물의 제어를 위한 정보를 제시하였다. 한편 신선편이 농산물의 생산 및 가공 단계 중 오염패턴, 분리균주의 유전적 상동성, 생산-가공-유통-수출 단계의 환경 인자에 기반한 위해분석 모델과 시뮬레이션 결과를 바탕으로 중점 제어단계를 도출하였고 품질 유지를 기반으로 한 미생물 저감화 기술에 대한 정보를 결합하여 각 중점 제어 단계에 대한 제어기술을 제시하였다.
4. 시범수출을 통한 수출상품화 전략 수립 및 개발기술의 실용화
수출대상국(일본, 홍콩, 싱가포르)의 검역조건 및 위생관리 기준을 조사한 결과 신선편이 농산물은 수출 금지 품목에 제외된 품목이며 위생관리 기준으로 일반 세균수 규제는 일본 105 CFU/g 이하, 싱가포르 105 CFU/g 이하, 홍콩 106 CFU/g 이하로 권고하고 있다. 일본에서 신선편이를 제조하는 회사의 경우 국산 원료를 고집하고 외식이나 업무용은 수입 원료를 받아들이고 있었다. 홍콩에서 샐러드 채소는 주로 고급 마트에서만 소비되고 미국산이 대부분을 점유하고 있었으며 소비자 인지도가 높지 않은 편이나 현지의 다채로운 식문화는 지속적인 관련 품목의 소비를 예상케 하였다. 최근의 한류 붐 및 일본 원전사태는 한국 농식품의 안전성을 부각시키고 있으며 한국산 신선 농산물의 현지 소비자 인식은 긍정적인 상황이다. 싱가포르 소비자들은 고품질의 상품을 선호함에 따라 기존에 말레이시아, 인도네시아에서 수입하던 신선제품을 재배기술 및 품질관리 기술이 뛰어난 호주, 뉴질랜드, 미국 등에서 수입하고 있었다.
신선편이 어린잎은 국내산 62.5원/g, 홍콩ㆍ싱가포르 39.2~45.4원/g, 일본 27.6원/g으로 가격 경쟁력이 떨어졌다. 미국에서 수입된 샐러드 제품은 대부분 유기농 제품 위주였으며 유통기한은 생산에서 판매까지 2주 정도 확보가 가능하였고 운송 방법은 항공 운송을 실시하고 있었다.
신선편이 어린잎 수출시장은 일본의 경우 소비자들 타겟보다는 식자재 시장이 밝을 것으로 예상되며 싱가포르ㆍ홍콩은 수입업체와 지속적인 만남과 한국산 농산물에 대한 신뢰를 쌓고 수입 업체 및 대형 유통업체가 희망하는 유통기한 연장이 가능하도록 품질유지 기술 확보가 요구되며 가격 경쟁력이 있어야 수출 가능성이 있다고 판단된다.
선박 시범수출과정 중 환경 분석 및 품질 변화를 추적하기 위해 홍콩으로 어린잎 과 원컷 상추를 20ft 냉장컨테이너로 시범수출(1차)한 결과 신선편이 어린잎의 품질은 양호한 편이었고 one-cut 포기상추의 경우 수분 손실과 연한 조직의 짓눌림 현상으로 상품성이 하락되었다. 이어 세부 1과제에서 개발한 수확후 관리 기술(탄산수 세척, 열처리 후 탄산수 세척)을 적용하여 품질개선 효과를 검증하기 위해 어린잎 과 one-cut 포기상추를 홍콩으로 2차 시범수출을 시도하였다. 그 결과 품질개선 효과가 있었으며 특히 어린잎 보다 원컷 상추의 수확후 관리 기술 적용 효과가 뛰어났으며 제품 생산후 9일차 3%, 12일차 7∼8% 정도 짓무름이 발생되었다. 수확후 관리 기술의 최적 개발 조건을 적용하기 위해 수송시간이 더 소요되는 싱가포르에 3차 시범수출 후 품질을 모니터링 하였다. 그 결과 제품 생산 후 10일째 외관상 품질은 대조구와 처리구의 품질상태는 양호하였다. 특히 열처리 및 탄산수 처리한 어린잎의 신선함이 대조구에 비해 좀 더 양호한 상품성을 나타내었다. 생산 후 12일과 14일째 대체로 상품성을 유지하였으나 포장 내 결로가 발생하고 짓무름과 갈변이 발생되는 것이 관찰되었다.
선박 시범수출과정을 모니터링한 결과 소비지에서 요구하는 제품군을 다양하게 구성하여 수출하기 위해서는 다수의 가공공장이 필요하고 이를 한곳에 수집하여 운송하는 과정에서 저온유통 체계가 불가능한 구간이 발생되었다. 이는 소량의 다품목을 시범 수출하는 과정에서 나타난 문제점이므로 본격적인 수출시 개선이 가능한 사항으로 판단된다. 시범수출시 온ㆍ습도를 모니터링 한 결과 저온 수송 컨테이너는 화물을 적입하기 전에 충분히 냉각시키지 않은 문제가 발생하여 이를 개선토록 제안하였다. 홍콩과 싱가포르 모두 선박 운송 후 현지에서의 통관 과정에서 온도 관리가 잘 되지 않는 현실을 확인할 수 있었다. 핵심기술 개발연구팀에 모니터링한 결과를 공유하여 현지 상황을 고려한 유통기한 설정을 요구하였다. 수출용 외포장 상자는 규격화가 필수적이나 현재 시범수출의 경우에는 제품의 형태에 따라 박스의 규격이 상이하였고 선적 작업시 팔렛트를 이용하지 않아 물류 효율이 떨어지며 수송 중 냉기 순환을 고려한 적재가 이루어지지 않고 있음을 확인할 수 있었다. 또한 팔렛타이징이 되지 않으므로 수송 중진동에 의한 상품성 손상이 우려 되었다. 모니터링 결과를 반영하여 선박 수송시 팔렛타이징을 위한 내포장 및 외포장 규격안을 제시하였다.

For an export product that is capable of producing high quality products year round, both domestic and international markets were inspected, while considering whether or not the product has strong point in yield value, transportation, storage, and safety, and as a result, 5 types of baby vegetables and 5 types of and lettuce were selected. Additionally, for a stable year round supply, a pesticide free, GAP level hydroponic system capable of being supplied to farms was developed, supplied to a farm in Icheon, and to establish a systematic operating system, we have certified both GAP and ISO 22000.
Although we have identified through our research that the NFT hydroponic system was the best choice when considering yield value and quality safety, because there is not a large amount of NFT infrastructure, and because the initial investment cost large, to lessen the burden on the farms, we have opted to choose the DFT method as the standard and have modified our optimal cultivation standards and processing technology to this method, and have taken steps to reinforce some of its disadvantages. As a result, a tailored soil composition, nutrition solution concentration and pH, and exclusive tray has been developed for a safe and seeding process, and to deal with safety issues that are involved with dealing with microorganism safety in exportation, a nutrition solution with a UV antibacterial system has been implemented on a harvest level to an even safer base material supply system. The initial goal number for year round production had been reached, and the 40% deviation from changing seasons is being controlled at 25%, thus proving that the production deviation resulting from outside air can be controlled using harvest technology and care. Additionally, although they have yet to see everyday use, supplemental light sources of artificial origin (LED, UV), aeration tray for the one-cut lettuce, and other advance cultivation technology have proven to be reliable guidelines to a more advanced hydroponic system.
Unit technology application is not limited to cultivation, but after being applied and harvested, unit technology usage was enlarged by modifying pre-cooling facilities made for the field. Through this application, the increase in respiration during processing and distribution can be controlled, and by doing so, effects of freshness perseveration have be seen, and this is currently applied, not only to export products, but to fresh-cut produce targeting the domestic market are also maintain their freshness. This research already has a manual in print that concerns itself with unit level processing technology, harvesting standard per processing phase, and can be used as a reference during farming technology training.
2. Development of core technology for fresh-cut production distribution control
The baby vegetables and one-cut lettuces that were classified as export products had the physiological characteristics and processing characteristics of their base materials investigated, and upon analyses of the change in quality by product, products with soft tissues (red beat) showed examples of festering, thought to be a result of stress from the processing process, during their distribution process, while products with strong tissues (Batavia green, Batavia red) did not show many occurrences of festering, but showed problems in the snapping phenomena of their stems. In the case of lettuces, browning reactions were a problem, and upon further comparison regarding quality change in the four types, ‘Ovired, 'Westham', 'Risewan', and 'Coventry', the types ‘Ovired', and ‘Westham' were chosen because they had less occurrences of browning reactions and microorganism proliferation. When consumer preference is taken into consideration, and the items mixed and commercialized, browning reactions are not readily seen to the naked eye, but the festering and snapping in weak tissues during distribution were analyzed to lowers the marketability of the product. Additionally, mixed products were seen to have a higher respiration rate and ethylene production rate than single products, and consequently, were seen have the possibility of having a faster quality change rate. Therefore, the need to develop technology that can reduce physical injuries and inhibit respiration rates while controlling browning reactions and microorganism proliferation is seen.
Physical injury during the fresh-cut produce processing process and inspection of its effects on the quality of the product indicated that microorganism proliferation was faster in the presence of a physical injury, and additionally, if the distribution temperature was to decrease from 5℃ to 1~0, the quality change rate was inhibited, and the microorganism proliferation rate from the physical injury could be modified. Although 5℃ is suitable for domestic markets where the shelf life of a fresh-cut produce is 5 days, exports require a freshness retainment period of 10~14 days and consequently, it was deemed that a lower temperature distribution system was required. Although microorganism proliferation decreases at lower temperatures, the rate increases after four days even in a 0~1℃ environment. Because this project targeted pesticide-free and hydroponically grown base materials during research development, germicide usage was restricted and organic technology such as Active MAP, heat treatment, and carbon dioxide treatment was researched with each method being used during the processing process to analyze its effects on freshness retainment. During Active MAP treatment, when the 5% carbon dioxide condition was maintained alongside an 85% oxygen condition, the microorganism proliferation inhibition effect was the greatest, and consequently marketability quality was high. Heat treatment was also effective at inhibiting microorganism proliferation and maintaining quality levels, and depending on the tissue type, the temperature limit and effect were observed to be different, leading to multiple rounds of experiments to find the optimal conditions. Additionally, optimal heat treatment showed ethylene production, inhibition of browning effects, and inhibition of decreasing vitamin C levels with an increase in antioxidative activity. Carbon dioxide treatment leads to a change in the pH in the cells, subsequent inhibition of browning effects, and an appearance of stronger tissue. During carbon dioxide treatment at the cleansing phase, depending on the concentration of the carbon water, brown spots were seen on the leaves, so a pH level of 4.5 is recommended to prevent such effects from happening. Other methods include utilizing moisture absorbents at the packaging phase to prevent festering by from moisture, inhibit microorganism proliferation, and during organic function examinations, control festering and tissue change.
Heat treatment was done on the cleansing and dehydration phases of the fresh-cut fruit processing process and the results were examined and compared. Heat treatment was the most effective during the rinsing stage of the cleansing phase. However, if the temperature got too high, the product started to fester, and if the temperature was lower than the optimal temperature, nothing seemed to happened, and thus, maintaining an optimal temperature was critical in addition to having the technology to maintain a warm temperature in the case a specimen that was subject to sub-optimal heat treatment happened to be mistakenly mixed into the product. Fresh-cut processing process results indicated that the baby vegetables and lettuces were most likely to be subject to snapping and festering during the dehydration phase, and so to reduce physical damage and remove remaining moisture, the hot-air drying method was utilized as an efficient method of decreasing snapping, festering, browning reactions, and microorganism proliferation, all of which are favorable results regarding quality maintenance and safety procurement. Therefore, to minimize damage to baby vegetables and one-cut lettuces during the fresh-cut produce commercialization process, the current dehydration process was changed to the drying method.
The results for carbon dioxide treatment done on the cleansing and packaging phases of the processing process were examined and compared. During the original transportation phase, the cutting phase, and the drying phase, the results of the carbon dioxide treatment on improving the quality were small or negligible, but the application of carbonated water on the rinsing phase, and the concentrated carbon dioxide treatment during the packaging phase excellently prevented browning reactions and microorganism proliferation. Carbon dioxide treatment inhibits browning reactions and microorganism proliferation while improving texture qualities and improving consumer preferences.
The effect of each treatment technique was proven, and upon the joint application of these technologies, heat treatment during the cleansing phase and active MAP during the packing phase, and heat treatment with carbonated water treatment during the cleaning phase were the two methods selected for preliminary export environmental simulations. The results showed that freshness was maintained for a 14day period, and based upon these finding, we have suggested, for baby vegetables and one-cut lettuces commercialization, an optimized method.
3. Microorganism hazard analysis and reduction technology research for export fresh-cut produce
Environmental samples, such base material, soil, and water, used in the growth and processing process of baby vegetables and one-cut lettuces were acquired for microorganism quality testing and to check if there were any food-poisoning inducing pathogenic microorganisms. The normal bacterial count was analyzed to be 6.8 log CFU/g for the Environmental sample of baby vegetables in the production phase, with the colon bacillus group being 3.2 log CFU/g and 3.5 log CFU/g for baby vegetables and the soil respectively.
In the processing phase, both the normal bacterial colon bacillus group had their contamination levels reduced after the cleansing process. In the case of B. cereus, for the production phase of baby vegetables, the contamination level was high for both the baby vegetable itself and the soil, and for the processing phase, the final number for was as low as 1.4 log CFU/g for the final product. Qualitative analysis of pathogenic microorganisms revealed that in all pathogenic microorganisms except S. aureus were negative in the production phase. This research used rep-PCR with a separated B. cereus to analyze the genetic homogeny, and found out that during the production phase, the soil and other environmental samples, the separated bacteria had high genetic homogeny, and as the soil was continuously reused, the soil was contaminated, and this contamination was thought to have been transferred to the product, while for the processing phase, the separated bacteria had low genetic homogeny reading and thus implied that there were little cases of recontamination.
The contamination pattern for one-cut lettuces showed similar tendencies, by had high genetic homogeny readings for the separated B. cereus during the processing phase, and this showed that the contaminated bacteria did not separate in that environment and eventually contaminated the final product all the way from the base material state.
Approximately 10 cases of the growth and development model of Fresh-cut vegetable food poisoning bacteria was acquired and was tracked from production to processing with the total bacteria number as the tracking factor, and with the change in temperature used to analyze proliferation patterns. The primary model was the Barany and Roberts model and the secondary model was the suboptimal Ratkowsky model. The production-distribution and export phase temperature data for the fresh-cut agriculture was acquired using data logger and the @Risk program was used to obtain an optimal distribution function. The hazard analysis model was developed using B. cereus as it had the highest appearance frequency among the hazardous microorganism during the production-processing-end product points. The period from the farm to a distribution center was divided into smaller steps, where it ranges from the farm to the pre-cooling facility, storage at the farm refrigerator, from the farm to the processing facility, processing process, from the processing facility to the distribution center, and finally storage at the distribution center. Additionally proliferation during the exportation phase was assumed from probability risk analysis. From the smaller steps above, possible points of proliferation include from the farm to the pre-cooling facility and from the processing facility to the distribution center, with an especially high expectation for the pre-cooling step. On the other hand, during the exportation phase, because of the temperature conditions, it was thought that this point in time will have the second highest proliferation rate, and thus this is why temperature control at this point in time is such important.
For the control group of the fresh-cut produce controlling technology, family carbonated water, electrolyzed oxidizing water, chlorine dioxide, sodium hypochlorite water, a combination of micro bubbles and chlorine dioxide, and a hydrothermal micro bubble solution was inspected.
Conductivity, normal microorganisms, and fungus were analyzed, and the analysis results indicated that chlorine dioxide and hydrothermal micro bubble solution showed the best results for chemical condition and physical condition respectively. With regards to the optimal concentration and time for chlorine dioxide, based on the inhibition rate of microorganisms, processing conditions were deduced that could reduce microorganisms without deteriorating the quality characteristics of the food itself. After hydrothermal micro bubble, hydrothermal microbubble + chlorine dioxide, and chlorine dioxide processing, various microorganism complex control technologies, such as hydrothermal bubble processing, were selected. With regards to each control technology, the quality characteristics of baby leaf vegetables and microorganism control levels were analyzed in order to develop the optimal control technology. Moreover, among the specimen to which complex control technologies were applied, microorganism communities were analyzed to suggest information for the control of similar agricultural products. On the one hand, among the production and processing stages for agricultural products, based on the pollution patterns, genetic homology of the surroundings of isolates, and the analysis model and simulation results on hazardous factors based on the environmental factors within the production-processing-distribution-export stages, central control stages were deduced, and by combining information with regards to microorganism reduction technology based on quality maintenance, control technologies for each central control stage have been suggested.
4. Export Commercialization Strategy Establishment and Development Technology Commercialization through preliminary Exports.
Upon researching quarantine conditions and health control standards, it has been found that fresh cut produce are not on the list of products that cannot be exported, and according to the health control standards, the recommended standard bacterial count is less than 105cfu/g for Japan, less than 105cfu/g for Singapore, and less than 106cfu/g for HongKong. Japanese companies that manufacture fresh-cut produce adamantly use domestic materials while their other food service industries and food business industries utilize imported materials. Salad vegetables in HongKong, usually imported from the United States, are usually sold at high quality stores, and although consumer recognition of the origins of their food is low, the diverse local food culture indicates that a related product will sell continuously. The recent Korean wave and the Japan’s nuclear status have brought to light the safety of Korean agricultural products, and local consumers have positive opinions of such Korean fresh-cut produce. Consumers in Singapore prefer high quality products, and have switched from importing fresh-cut produce from Malaysia and Indonesia to countries with advanced cultivation techniques and quality control, such as Australia, New Zealand, and the United States.
Domestic fresh-cut baby vegetables, which were 62.5Won/g, could not compete price-wise with Hong Kong’s and Singapore’s 39.2~45.4Won/g baby vegetables, and Japan’s 27.6Won/g baby vegetables. Salad ingredients imported from the United States were usually organically grown products, and their shelf life, from being cultivated to being sold, was approximately two weeks with air transport being the main method of transportation.
Fresh-cut baby vegetables export market requirements require, for Japan, potential consumers not in the individual consumers themselves, but in the food ingredient market, and for Singapore and Hong Kong, constant contact with distribution businesses, increase in trust regarding Korea agriculture products through improving the shelf life, as requested by the importation companies and major distribution businesses, and done by possessing advanced quality maintenance technology, and by having a competitive price
During the first preliminary export process through ship transportation to Hong Kong, baby vegetables and one-cut lettuces were stored in a 20ft refrigerator, and in the end, the baby vegetable quality was satisfactory while the one-cut lettuces had moisture loss and festering at the soft tissues, and as a result, had a decline in market value. To investigate the effects of the developed after harvest maintenance technology (carbonated water cleansing, carbonated water cleansing after heat treatment) a second preliminary export was sent to Hong Kong with the same cargo of baby vegetables and one-cut lettuces. The results showed an improvement in quality where the after harvest maintenance technology had a greater effect one-cut lettuces than on baby vegetables, with products showing a 3% festering value on the 9th day after production, and a 7~8% value on the 12th day after production. To identify the optimal development conditions for the after harvest maintenance technology, the third preliminary export was sent to Singapore, where the transportation time was longer. Results show that the appearance for the control group and treatment group were good for both groups on the 10th day after production. The baby vegetables that were subject to carbonated water cleansing after heat treatment were especially in good condition when compared to the control group. The products maintained satisfactory market value on both the 12th day and 14th day, but dew condensation was seen inside the packaging with festering symptoms and browning reactions.
Upon monitoring preliminary vessel export processes, when trying to satisfy the consumer country with a diverse product selection, a number of processing facilities are required, but in the process of gathering all the products in one place for exportation, we have identified places where the low temperature distribution system could not cover. This problem was found when sending small amounts of diverse items on a preliminary export experiment, but the problem can be solved when exportation begins in earnest. Upon monitoring temperature and humidity during the preliminary export experiments, it was found that the products were not cooled to an appropriate temperature before being placed inside a low temperature container, and thus this issue was brought up for improvement. If was also found that when the products arrived at their destination at Hong Kong and Singapore, the temperature supervision was not done properly during customs. The core technology team had been alerted of the monitoring results and has been asked to think of solutions that may alleviate the problems at consumer countries. Outer packing boxes made for exportation have standardized sizes, but the boxes used for the preliminary exportation trials had various sizes and during the loading phase, did not use pallets, leading to a decrease in distribution efficiency, and implied that the circulation of cold air did not take place. Additionally, because pallets were not used, there is concern for possible damage from vibrations during transport. From our monitoring results, we have suggested inner packaging and out packaging dimensions for utilizing pallets during transportation
