Recently, the rice consumption has been continuously decreasing, and the total stock of rice also has been increasing. To make up stable rice industry and to facilitate the market for processed rice foods, the proper milling technology in terms of flour particle size and damaged starch content and the new rice cultivar with dry milling adaptability as well as good processing properties were developed.
To establish the bulk-production and distribution system of rice flour with cheap and stable quality, the current condition of rice flour market, the approaching possibility into the market of the new dry milled rice flour, and economical efficiency of the new dry milled rice flour were surveyed.
Finally the market strategy for the domestic approach and overseas expansion of the new dry milled rice flour were also investigated.
Results
○From the survey with the domestic and overseas’s flour milling company and food processing company, the current condition of rice flour market, and the consumption pattern of rice flour in each rice processed food were surveyed.
○The analysis for the raw price construction of dry-milled rice flour depending on the milling system and scale
-The prices calculated from the various scenario on the milling system(dry and wet milling) and milling scales(more than 40 ton and less than 40) were estimated and the economic efficiency were evaluated.
○The analyses for the flexibility of rice consumption amount and the attractivity of rice flour
-The local rice consumption for processing was affected by the rice price supplied from the government.
-The rice flour was very attractive for the substituting the wheat flour, but it shown the less properties on the raw price for the production and distribution of product.
-To endow the competitive power of the rice flour against wheat flour, government have to support on the cost for the raw rice production as well as the proper assist for the rice processing food company.
○The survey for the consumer recognizing on the rice processing food -For this project, the conjoint analysis was conducted with Korean, Japanese and Western consumers.
-Korean consumers paid more attention to the product certification, especially the organic certification whilst Japanese consumers took prominence in the Gluten-free certification.
-In the USA and European consumers prioritized the market certification and the Gluten-free certification.
○The establishment of marketing strategy for approaching to the domestic market
-The items for marketing were determined as rice beer, baby food, and homemade mixes made with rice, based on the analysis of domestic rice processing foods and consumer preference.
-For the marketing of rice beer, the construction of local joint union consortium was needed.
○The establishment of marketing strategy for the overseas expansion of the new dry milled rice flour
-Because the price construction factors of rice flour product was very complex and the demand for the rice flour was extremely low, the processing food made with rice flour, instead of rice flour itself was more desirable for the marketing the dry-milled rice flour in overseas.
-USA: USA is rice production country. So it is very hard for new dry-milled rice flour to entering to the USA market. Also USA consumers recognized the rice as the very cheap raw material for processing food. Therefore, for marketing of new dry milled rice flour, rice processing food or functional healthy food is recommended.
-France: In france, there was not rice flour market. France consumer recognized the rice as the gluten free raw material. For marketing of new dry milled rice flour, rice processing food with gluten free certification is recommended. But it will be taken a time.
-China: Because Korean wave could play an important role on the Korean products, Korean rice processing food made with gluten-free, especially organic baby food with rice is recommended.
Expected Contribution
○Based on the price estimation and the economic efficiency analysis of dry milled rice, government can use it for setting up the policy for the stable market construction of dry-milled rice flour in rice processing industry.
○New rice cultivar for dry milled rice flour could be stably supplied into the food industry. The production and distribution of the high quality rice flour will reach to the B2B and B2C.
○The rice processing industry will be activated and developed based in rice flour industry stabilization.
○High quality rice processing food made with new dry milled rice flour could approach to each countries.
