To investigate the thermostability of leek's antimicrobial activity, leek extract was heated at 98℃ for 20min and at 60℃ for 30 min, whereas fresh sample was used as a control. To investigate the pH stability of leek as a antimicrobial agent, the pH of the sample was adjusted into pH 2.0. The results obtained were as follow; 1. The antimicrobial activity of leek was most effective when fresh sample was used, dependent upon the amount of sample used, relatively stable at pH 2.0 and confirmed in all bacterial strains examined, specially in Lactobacillus bulgaricus, Bifidobacterium bifidum and Staphylococcus aureus. 2. The antimicrobial activity of leek was not detected after dialysis, which indicates the antimicrobial activities of leek extract seems to be low molecular weight substances. 3. The retardation of lactic acid bacteria by addition of leek extract would delay the excessive lactic fermetation and souring of lactic acid fermentation products.
