Chemical composition, minerals, amino acids, and fatty acids of the leaf and stem parts of 2 weeks grown safflower sprout were analyzed. The chemical components of safflower sprout (Leaf and Stem) were approximately as follows, respectively; leaf was contained moisture 8.9 %, crude protein 27.0 %, crude fat 15.7 % and crude ash 4.8 %, stem was contained moisture 15.0 %, crude protein 26.3 %, crude fat 7.7 % and crude ash 5.5 %. The mineral-contents were analyzed the safflower sprout by SEA 2120 X-ray Fluorescence Analyzer. On the fresh matter basis, the ash contents of safflower sprout ranged leaf : 4.8%, stem : 5.5 %. Leaf was contained P 49.19 wt%, K 21.75 wt%, Mg 14.88 wt%, Ca 9.53 wt%, Fe 1.73 wt%, Zn 1.61 wt%, Cu 0.73 wt%, Mn 0.36 wt%, Sr 0.198 wt% and Rb 0.017 wt% in order. Stem was contained S 50.86 wt%, P 26.66 wt%, K 9.50 wt%, Ca 6.84 wt%, Mg 4.27 wt%, Fe 0.88 wt%, Zn 0.48 wt%, Cu 0.24 wt% Mn 0.12 wt%, Sr 0.111 wt% and Rb 0.043 wt% in order. Especially, the content of Pt was conducted with the Inductively coupled plasma/mass spectrometry (ICP/MS) once more. As a result, Pt component was 1.8 ppb and 1.7 ppb in leaf and stem parts, respectively. Essential amino acid composition of safflower sprout was analyzed of the basis of their dried weight. From the results analyzed, mineral contents of leaf was shown that Asp 12.41 %, Glu 11.56 %, Leu 7.44 %, Phe 6.82 %, Ala 6.68 %, Arg 6.66 %, Pro 6.57 %, Lys 6.44 %, Iso 5.96 %, Val 5.84 %, His 5.33 %, Thr 4.69 %, Gly 4.60 %, Tyr 4.32 %, Ser 3.52 % and Met 1.16 % in order, whereas these of stem was shown that Asp 19.40 %, Glu 14.47 %, Pro 6.65 %, Leu 6.35 %, Val 6.15 %, Lys 5.96 %, Ala 5.44 %, Phe 5.05 %, Iso 4.98 %, Thr 4.58 %, Ser 4.27 %, Gly 4.24 %, Arg 4.01 %, His 3.79 %, Tyr 2.39 %, Cys 1.17 % and Met 1.07 % in order. Fatty acid composition, of safflower sprout was analyzed by gas chromatography (GC-17A, shimazu, Japan). The major fatty acids of leaf were generally palmitoleic acid 7.1 %, stearic acid 2.5 %, oleic acid 7.2 %, linoleic acid 66.7 %, α-linolenic acid 13.5 %. The major fatty acids of stem were generally myristic acid 1.1 %, palmitic acid 16.8 %, stearic acid 12.3 %, oleic acid 5.6 %, linoleic acid 46.6 %, α-linolenic acid 10.7 %. In fatty acid composition of GC, safflower sprout revealed higher content in linoleic acid than content in α-linolenic acid. On the basis of chemical analyses, the safflower sprout showed to have relatively high contents of crude protein, crude fat, and fatty acid including the polyunsaturated fatty acids, linoleic acid and ?-linolenic acid as well as small amount of Pt. These results suggested that the chemical composition of safflower sprout were provided the value of food nutrition as well as the possibility as useful material of natrual health food for the development of functional food.
