This study was carried out to obtain preliminary data to make Punica Granatum. as a brand and to develop manufactured goods. For this, general and special components, and antimicrobial activities were analyzed. The contents of moisture in Punica Granatum. was 82.30% in flesh, 66.00% in pericarp and 38.23% in seed. The contents of crude fiber was 4.32% in pericarp and there was 4.41% of crude protein and 9.87% of crude fiber. The contents of crude protein and crude fiber in seed were higher than flesh and pericarp, as it was 4.41% and 9.87% respectively. The contents of free sugar in Punica Granatum. flesh were 3.71% for fructose, 7.19% for glucos, and 1.13% for sucrose. The total sugar content was 12.03% in flesh, 11.71% in pericarp and 6.15% in seed. Organic acids including tartaric acid, malic acid and citric acid were detected in each part. The total content of the organic acids was 11.59% in flesh, 6.47% in pericarp and trace in seed. The content of citric acid was the largest in flesh while malic acid was in pericarp. The highest inorganic component was K and its content was 636.8 mg%, in pericarp and 224.3 mg% in flesh, followed by Ca(95 mg%), Na(39.7 mg%), and Fe(6.1 mg%) in pericarp and Na(5.3 mg%), Fe(5.2 mg%), and Ca(3.6mg%) in flesh. The highest inorganic component was K and its content was 636.8 mg% in pericarp, 224.3 mg% in flesh and 148.5 mg% in seed, followed by Na(39.7 mg%), Ca(95 mg%) and Fe(6.1 mg%) in pericarp, Na(5.3 mg%), Ca(3.6 mg%) and Fe(5.2 mg%) in flesh and Na(20 mg%), Ca(29.7 mg%) and Fe(6.8 mg%) in seed. The content of inorganic component was in order of K > Ca > Na > Fe in pericarp and seed and K > Na > Fe > Ca in flesh. The total content of amino acids was the highest in seed, followed by pericarp and flesh. The content of main amino acids was in order of Glutamic acid > Aspartic acid > Histidine > Alanine in pericarp, Glutamic acid > Aspartic acid > Histidine > Leucine > Lycine in flesh and Glutamic acid > Aspartic acid > Valine > Histidine > Alanine in seed. The total content of free amino acids was 1,156 mg%, 412 mg%, and 2,243 mg% in pericarp, flesh and seed, respectively. From flesh, pericarp, and seed of Punica Granatum. 22, 19, and 11 volatile components were extracted. The content of volatile components was high in order of 3-Ethynyl-2-methyl-furanone > acetic acid > 1-butene > 1-butanamine > methanol. The content of polyphenol was 42.12 mg% in flesh, 445.6 mg% in pericarp and 15.28 mg% in seed. The total content of estrogen was 19.7 ppm in pericarp, 6.5 ppm in flesh and 8.8 ppm in seed. Punica granatum. flesh, pericarp, and seed were extracted with waterm ethanol, ethyl acetate, diethyl ether and hexane, and then their antimicrobial activities were analyzed. Antimicrobial activity was higher in water extracts of pericarp and flesh but lower in diethyl ether. As a result of the examination on the antimicrobial activities of Punica granatum. extract solvent, ethanol and water extracts of pericarp and flesh showed strong antimicrobial activities, but in the low polarity ethyl acetate it was weak. And in lower polarity diethyl ether, there was no antimicrobial activity. For the seed, it has the antimicrobial activity only in the extract of ethanol. It is assumed that Most of the antimicrobial activities derive from the extract of ethanol and water. And also it is assumed that the substance melts more easily with ethanol than water. The antimicrobial activity substance which was contained in the extract of ethanol was proved to have stability against the heat and the change of pH. As a result of this study, Punica Granatum. appears to have more nutrition, estrogen, antimicrobial activity and inhibition activity of oxidization than those from iran. So it is considered that if it developed as a processed product, it can have the competitiveness.
