In this study, 223 high school students consisting of 98 male students and 125 female students of the two boarding schools (all the studentslive in the dormitory) in the region of Seocheon in Choongnam were surveyed with regard to fruits, vegetables and the degree of preference and the realities of intake. The contents of the questionnaires were composed of four parts: general information (gender, physical condition, mother’s academic background, mother’s occupation, monthly income, subjective physical form); survey on attitudes towards eating habit and diet; survey on nutrition knowledge; survey on the preference for fruits and vegetables. The results of analyzing the demographic factors for the sample of 223 students showed that the number of female students accounted for 56.1%, which is greater than that of male students, and in the BMI, normal was the most with 49.8%; in the mother’s academic background, high school graduates were the most with 58.3%; in the mother’s occupation, working housewives were the most with 52.0%; in the monthly income, less than one million won was the most with 25.6% and in the subjective physical forms, ordinary form was the most with 42.6%. In the regularity of having breakfast, having every meal was the most with 73.1%, in the unbalanced diet, slightly unbalanced diet was the most with 69.1% and on the other hand, in the perception of the unbalanced diet, not being very much interested in unbalanced diet was the most with 48.2%. In the preference for vegetables, having vegetables in every meal was the most with 36.3%, followed by having them daily and having them twice or three times a week. When eating vegetables, in the amount of eating them at one time, eating more than four chopsticks of vegetables was the most with 42.2%. Forthe reasons that they like vegetables, being delicious was the most with 50.6% and in the favorite recipe of vegetables; salad was the most with 31.4%. On the other hand, for the reasons that they don’t eat vegetables, not being delicious was the most with 90.2%, and when asked whether they will eat vegetables if the vegetables are cooked by different recipe, eating them in every meal was the most with 34.5%. The results of analyzing the difference in nutrition knowledge showed that non-working housewives scored higher in nutrition knowledge with 3.75 than working housewives with 3.46.
