Aerobic bacteria growth on Korean pan-fried meat patties as a primary quality deterioration factor was modeled as function of temperature to estimate microbial spoilage on a real-time basis under dynamic storage conditions. The package headspace gas concentration was also monitored and related to the microbial quality change of aerobic bacterial count as an index for on-line shelf life control. First, the counts of bacteria of the stretch-wrapped food held at constant temperatures of 0, 5, 10 and 15oC were measured through the storage. Bootstrapping method was applied to generate many resampled data sets of mean microbial counts, which were then used to estimate the parameters of microbial growth model of Baranyi & Roberts in the form of differential equations. The temperature functions of the primary model parameters were set up with confidence limits. Incorporating the temperature dependent parameters into the differential equations of bacterial growth could produce the predictions close to the experimental data under constant and fluctuating temperature conditions. Also, nondimensional model of microbial growth applicable to fluctuating temperature conditions was examined and tested against the aerobic bacterial count data of pan-fried meat patties. In description of time-dependent microbial growth, the model uses a logistic function which is subsequently normalized into nondimensional one incorporating square root equation for the temperature dependent growth rate. This model has advantage of simplicity and easy compatibility with common widespread software program such as spreadsheet. Model parameters were obtained from constant temperature storage data and incorporated into the model’s iteration formula to predict the microbial growth under dynamic temperature conditions. Its limitation was identified and relieved by fine-tuning the variable of initial microbial load in the iteration scheme of the model. Proper definition of initial microbial state and account on temperature dependences of maximum cell density are suggested for more versatile and powerful application of the model. Gas concentration of hermetic package headspace of pan-fried meat patties was monitored and related to the microbial quality change of aerobic bacterial count in order to examine the potential of using package atmospheric change as a primary quality index for shelf life control. Changes in aerobic bacterial count at four different temperatures of 0, 5, 10 and 15oC were described by a mathematic model of logistic function. Oxygen concentration decreased and carbon dioxide concentration increased with microbial growth. Those concentration changes could be correlated with the microbial growth and also described by mathematical functions commonly used for microbial growth. Lag time of headspace gas concentration indexes was longer than bacterial lag time, particularly at high temperature. There have been presented potentials to use package headspace gas concentration monitoring as a tool to control shelf life of the perishable food products.
