It is well known that fruit by-products are rich in dietary fibers and vitamin contents as well as other associated bioactive compounds such as total phenolics, flavonoids, ascorbic acid, and β-carotene content which exhibit antioxidant properties. High dietary fiber diets are associated with the prevention and treatment of some diseases, such as diverticular and coronary heart diseases. On the other hand, natural antioxidants from fruit by-products could be used for increasing the stability of foods by preventing lipid peroxidation and protecting from oxidative damage by scavenging oxygen radicals. Persimmon (Diospyros kaki L. cv. Daebong) is a good source of nutritional antioxidative vitamins, polyphenols, and dietary fiber. The main by-products of persimmon are peels and seeds which are obtained during processing of dried persimmon food products and puree. Generally, persimmon by-products are considered as waste. Therefore, the goals of this research were to prepare fiber rich powders from ripe soft persimmon peel and to investigate the effects of washing, blanching, and drying temperatures on the physicochemical properties, dietary fiber components, and antioxidant properties. In addition, to evaluate the antioxidant properties, such as DPPH radical scavenging activity, reducing power, ability of chelating ferrous ion, and the ABTS+ radical scavenging activity of persimmon seed extracts using various solvents (ethanol, methanol, and acetone). hemicellulose, lignin content, and swelling capacity. There were no significant
differences in terms of the β-carotene content of the powder produced from blanched and unblanched ripe persimmon peels. After drying, significant increases in total dietary fiber, cellulose, and lignin were observed, whereas pectin content and total antioxidant activity slightly decreased. In addition, physical properties, dietary fiber components, and antioxidant activities of ripe persimmon peel as affected by different washing treatments such as hot water and tap water washing were also investigated. Washed peels had higher amount of total dietary fiber, β-carotene content, and hydration properties, such as water retention capacity (WRC) and swelling capacity (SWC) than the unwashed sample. However, washing treatments significantly reduced total phenolics and ascorbic acid content, even though all samples still retained substantial amount of total phenolics and the antioxidant activities, such as DPPH radical scavenging, metal chelating capacity, total antioxidant activities, and reducing power. Furthermore, various fiber-rich powders including enzyme treated insoluble dietary fiber (IDF), alcohol insoluble solid (AIS), and water insoluble solid (WIS) were prepared from the peel of soft ripe persimmon and their chemical characteristics and functional properties were investigated. Analysis of the monomeric sugars of different insoluble fibers showed that galacturonic acid was the main sugar followed by glucose, which indicated that all insoluble fibers were mainly composed of pectic substances and cellulose. The bulk density, swelling capacity (SWC), and water holding capacity (WHC) were higher in IDF than AIS and WIS. However, WIS
had higher oil holding capacity (OHC) than that of AIS and WIS. In addition, the antioxidant properties of persimmon seeds using different solvents (absolute and 80% ethanol, absolute and 80% methanol, and absolute and 80% acetone) were evaluated. The results showed that absolute ethanol and methanol extract had higher DPPH (2, 2-diphenyl-1-picrylhydrazyl) radical scavenging activity as compared to butylated hydroxyanisole (BHA). However, the higher reducing power was in absolute acetone extract than that of BHA. Although absolute methanol extract had the highest antioxidant activity, but exhibited the lowest content of total phenolics and flavonoids. In contrast, all 80% solvent extracts showed a good correlation between antioxidant properties and total phenolics contents compared to the absolute solvent extracts. The overall study concluded that persimmon peel could be used as a cheap and abundant source of natural antioxidant rich dietary fiber. On the other hand, persimmon seed extracts exhibited good antioxidant properties and have potential as a natural antioxidant. Thus, persimmon by-products such as peels and seeds could be used as functional ingredients in the food and pharmaceutical industries.
