This study aims at providing middle school students in Ulsan with the basic data required for nutrition education so that they enjoy wholesome dietary life through purchasing healthy and nutrient food by examining the current situation of their habits on snacks, their behaviors on processed food purchase and the use of food description and nutrition description. First, 43.5% of the participating students ate snacks once a day, and 36.6% of the students spent less than KRW 1,000 in average for their snacks. Most of the students spent less than KRW 2,000 in average for their snack purchase, and there was a significant difference according to their monthly allowance (p<0.05). Small retail stores and convenient stores were the place that they most frequented for purchasing snacks (69.5%), which showed a significant difference based on the monthly allowance and their mother’s level of education (p<0.05). 48.3% of the students ate snacks after school, which showed a significant difference based on sex and monthly income (p<0.05). 79.2% of the students said they eat snacks because they arehungry and 8.1% and 7.0% of the students said snack purchase was out of their habit or just for fun, respectively. Snacks were the process food that more students purchased (16.0%), and boys ate more ice creams and other frozen desserts. This result showed a significant difference based on the monthly income, parents’ level of education, and mother’s job (p<0.05). Second, 48.3% of the students responded that their purchase of processed food is based on taste, 22.7% on price, and 15.0% on the expiration date. This showed a significant difference based on the household’s monthly income (p<0.05). As for the behavior of purchasing processed food, price comparison when purchasing food was highest at the score of 4.05, and most students showed low accuracy in theawareness of processed food, except one question. Third, as for the confirmation of food description, 65.6% of the students said they would check on the food description and the other 34.4% said they would not, which showed a significant difference based on the household’s monthly income (p<0.05). The students who said they would check on the food description responded that it was to check the expiration date (26.3%), followed by price check (22.4%). Those who said they would not check on the food description responded that it was out of their purchasing habit (32.3%), followed by the small and complicated description (28.6%), not being able to understand the description (22.4%), and not being able to believe the description (11.5%). The students’ check rate of the content of food description by the types of food was highest on milk and diary food (3.95), followed by cookies (3.46), bread (3.46), frozen food (3.26), and canned food (3.20), which showed a significant difference based on the school year, sex, household income, monthly allowance, father’s level of education and mother’s level of education (p<0.05). The most important item to the students in the content of food description was the expiration date, followed by price. Fourth, as for the confirmation of nutrition description when purchasing processed food, 89.7% of the students said they would check on it while only 10.3% of them said they would not, showing that the check rate was very high. The significant difference was only shown in the father’s job (p<0.05). As for the reasons why they check on the nutrition description, 35.6% of the students said that it was because they wanted to check what nutrients are included in the food, and 2.15% of them said that it was because of health management. The reasons why they did not check on the nutrition description were because they did not have any interest in nutrients information (28.1%), they made purchase out of habit and without too much thinking (23.4%), nutrient descriptions were difficult to understand (21.9%) or were too small or complicated to read (17.2%). This result shows that there is an urgent need to device a plant to promote the students’interest level on the description of nutrient information and help them proactively use this information in daily life. Fifth, 78.4% of the students acknowledged the necessity of nutrition description, which showed a significant difference based on the monthly income (p0.05), whereas that of ‘in making a choice on food, the nutrition description makes one product easily differentiated from the others’ was 3.60, showing a significant difference based on the mother’s level of education (p<0.05). The score of ‘the nutrition description improves the quality of food’was 3.58, showing a statistically significant difference based on sex (p<0.05), and that of ‘the nutrition description helps improve nutrition knowledge’was 3.44, showing a statistically significant difference based on the mother’s level of education (p<0.05). In other words, most of the questions on the awareness of the effect of nutrition descriptions on consumers scored 3.0 or more, showing a mid- or higher level of awareness. And finally, sixth, among the five nutrients that are considered important in the content of the nutrition description, the total calories of the food was the most important to the students (15.3%), followed by fat (15.1%), trans fat (13.2%), cholesterol (11.7%), and protein (10.65), respectively. Both boy and girl students considered the total calories and fat most important nutrients out of the nutrition description, whereas the importance level of dietary fiber and sodium were very low. The overall level of their knowledge on nutrition description also was low. As discussed, middle school students have often had experienced reading food or nutrition descriptions while the level of their consideration on nutrition when choosing processed food was low. Therefore, how to choose snacks and use food and nutrition descriptions for health should be systematically and continuously promoted and repeatedly educated, and also required are practice-centered nutrition education and effective nutrition education tools. Furthermore, food nutrition descriptions on processed food should be designed and written in such a way to help students take interest in them and understand them more easily.
