Raw Oxya japonia contained a somewhat amount of lower water(60%) compared with beef(sirloin 65.5%, tenderloin 66.8%), pork(tenderloin 70.8%, belly 55.4%), and chicken (lean meat 65.4%, thigh 67.4%). Its protein content was 30-32% in a raw state (Oxya japonia 32.1%, Patanga japonica Bolivar 30.5%) and 72-77% in a dried state, which was 1.5 times higher than that of beef (sirloin 17.5%, tenderloin 20.0%), pork(tenderloin 14.1%, belly 17.8%), and chicken(lean meat 19.8%, thigh 20.6%). It suggests that Oxya japonia is a high protein food. In the composition and content of amino acids, which consists of protein, lysine (an essential amino acid) was 55.1%(based on 100g of dried weight). It can be used as the supply source of lysine, which is not sufficient in cereal protein.
