The purpose of this study was to examine actual conditions of sanitary management of restaurants by its types based on actual scene investigation. Study subjects were 27 fast food restaurants, 51 family restaurants and 22 Italian restaurants distributed nationwide. The sanitary assessment table was developed on the basis of the international excellent sanitary standard and the food sanitary law. Data were statistically processed with the SPSS ver 18.0 program. Study findings are as follows: The total average of restaurants was 13.18 (87.4%). By the types of restaurants, Italian restaurants were most excellent by 13.56 (90.1%) and it was followed by fast food restaurants (13.13, 87.5%) and family restaurants (13.05, 86.2%) in order. As for the spheres of sanitary, study subjects were excellent in the management of legal requirements, temperature, document and record-keeping in general. However, their most vulnerable area was the management of washing, disinfection and cleanliness. So it is necessary to manage these areas intensively. In particular, the most unsatisfactory areas were the cleanliness and managing conditions of ice-making machine's ice storage (11.8, 59.1%), the cleanliness states of workplace (3.2, 63.6%) and the management states of cold-storage and freezing equipments (3.4, 68.2%). Fast food restaurants were vulnerable in the observation of hand-washing time (13.3, 66.7%) and the observation of hand-washing method (14.1, 70.4%). In addition, comparing to other types of restaurants, the disposal of wastes was not managed well (16.3, 81.5%). The characteristic of their business made them use many disposable items, but employees were lacking with the ability of emptying and caring wastes, when they were even accumulated. Family restaurants were vulnerable in the use status of washing agents and sterilizing agents (6.9, 68.6%), the condition of cleanliness management (6.9, 68.6%), the storage state of raw materials and half-finished products (21.2, 70.6%) and the management of labeling of food materials (7.1, 70.6%).
