The quality and safety of bottled water has been concerned. In this study, we investigated microbiological qualities regulated by law of bottled water and the bacterial changes during storage at various temperatures. We analyzed microbiological qualities of 25 different bottled water brands purchased from retail store in Korea. The heterotrophic plate count (HPC) was detected at the level over the limit for approximately 40% of examined samples but total coliforms and pathogenic bacteria were not detected at all in every examined product. The results of changes of bacteria during storage for 6 months at various temperatures, HPC at 4℃ storage were decreased more rapidly than other temperatures. However, it was not satisfied for legal limit and did not show bacterial regrowth. In intentional spike test, the number of E. coli at 4℃ storage was decreased more rapidly than other temperatures like the results of HPC. The required times for 2 and 4 log reduction for E. coli was 25 and 50 days, respectively. Consequently, microbiological quality of bottled water should be managed on stage of manufacturing as indicator and even after production through monitoring.
