Turmeric, also called Curcuma longa Linne is a perennial herb, which belongs to the Zingiberaceae family and originates from India and Tropical Asia. A yellow-pigmented fraction isolated from the rhizomes of Curcuma longa contains curcuminoids belonging to the dicinnamoyl methane group. Curcumin is an important active ingredient responsible for the biological activity of Curcuma longa. Although its main activity is anti-inflammatory, it has also been reported to posses antioxidant, antiallergic, wound healing, antispasmodic, antibacterial and antitumor activity. In this study, analyzed the chemical composition and biological activity was in progress of Curcuma longa Linne. Based on these results, the production of area chemical composition and biological activity of Curcuma longa Linne was investigated. Curcuma longa Linne in South Korea the production to basic materials were prepared. Contents in proximate composition, mineral, free sugar, organic acid, free amino acid, curcumin, vitamin B, C, volatile components and crude saponin of Curcuma longa were investigated according to the area of production. The purity of curcumin was analyzed by an improved HPLC method. HPLC separation was performed on a C column using methanol solvent, with detection at 424nm. Curcumin content was different depending on growth conditions including geographical location, soil, temperature and solar. Antioxidant activity of ethanol extract of Curcuma longa were evaluated by DPPH radical scavenging assay, nitrite scavenging ability and lipid peroxidation in linoleic acid substrate. DPPH radical scavenging assay and nitrite scavenging ability showed the highest antioxidant, lipid peroxidation did not appear in linoleic acid. The growth responses of microorganisms exposed to materials extracted from Curcuma longa rhizomes were examined using inoculated disc plate method. Ethanol extracts of Curcuma longa rhizomes exhibited strong inhibitory activity against Bac. cereus and S. typosa. However, in tests conducted with E. coli, lactic acid bacteria and yeast, the ethanol extract showed no inhibitory response. The antimicrobial activity of ethanol extracts were not different according to the production in the area.
