Rice flour has recently received great attentions in the food industry since it is recognized to be highly nutritional, hypoallergenic, and healthy for human. However, the poor processing performance of rice flour has limited its utilization as a major ingredient in a variety of food products. Therefore, more extensive trials are needed to improve the processing performance of rice flour and also provide a new functionality beyond its tradition use. The first part of this study covered the utilization of high amylose rice flour (Goami 2) as an oil barrier to reduce the oil uptake of fried foods. High-amylose rice flours were fractionated into four fractions (70, 198, 256, and 415 μm) of which morphology was also analyzed by scanning electron microscopy. Rice flour with smaller particle size exhibited a higher degree of starch gelatinization, giving rise to increased pasting parameters. When the rice flours were incorporated into frying batters, higher steady shear viscosity was observed in the batters with finer rice flour, which could be well characterized by the power law model. In addition, the dynamic viscoelastic properties of the batters were enhanced by the use of rice flour with smaller particle size, which also caused an increase in batter pickup. When subjected to deep fat frying, the batters with finer rice flour exhibited reduced moisture loss. Furthermore, the oil uptake was found to have a positive correlation with the particle size of rice flour (R2=0.88), even showing the reduction of oil uptake by 15%. It could be synergistically attributed to the formation of outer starch granular layers, high batter viscosity/pickup, and reduced moisture loss by finer rice flour. In addition, rice flours were obtained by two different milling methods (dry- and wet-milling) and their noodle-making characteristics were evaluated in terms of rheological, textural, and cooking properties. In the pasting measurements, wet-milled rice flour had higher peak and break-down viscosity than dry-milled rice flour. Also, dry-milled rice flour showed more resistance against the mechanical shear stress from the mixolab curves. The use of dry-milled rice flour contributed to the enhancement of elastic property and elongational viscosity of noodle dough. In the case of rice noodle strands, the incorporation of dry-milled rice flour led to an increase in the tensile strength of the noodles. Also, the rice noodles made from dry-milled rice flour had remarkably higher breaking stress than those from wet-milled rice flour. When the rice noodles were cooked, wet-milled rice noodles had lower cooking loss and turbidity than dry-milled rice samples.
