(국문초록) 막걸리는 한국의 대표적인 전통술로 쌀과 누룩을 재료로 하여 만들어진 발효주이다. 막걸리의 독특한 풍미는 유기산의 신맛, 유리당의 단맛, 알코올의 쓴맛과 향미성분들이 조화를 이루어 형성된다. 한편 막걸리는 지역적으로 제조하는 방법이 다르므로 지역별로 막걸리의 성분이 차이가 있을 것으로 판단하여, 지역별 막걸리의 영양성분을 분석하였다. 성분분석을 위해 유기산 과 유리당, 유리아미노산은 HPLC를 이용하여 분석하였고, 향미성분은 SPME를 이용하여 분석하였다. 분석결과 유기산은 succinic acid와 citric acid 이 가장 많이 검출되었으며, 여수막걸리에 함량이 많았다. 유리당은 서울막걸리에서 가장 많았으며 성분은 Sucrose, Galactose, Lactose가 많이 검출되었고, 그 외 ribose, mannose, xylose가 함유되었다. 유리아미노산은 강진막걸리에 많았고 성분은 alanine , proline, phenylalanine, arginine, glycine이 많이 검출되었다. 향미성분은 acid 7 , alcohol 19종, ester류 26종 ,aldehyde 8종, hydrocarbons 6종, ketone류 4종이 검출되었다. 향미성분은 전체적으로 여수막걸리에 가장 함유량이 높았으며, 특히 ester 성분이 많았다. 강진막걸리는 ethanol 성분이 많았고, 부산막걸리는 acetic acid 성분이 다른 지역에 비해 높게 검출되었다. 서울막걸리가 향미성분이 가장 적었다.

This paper analyzed nutritive elements of Korean local Makgeoli to prove the assumption that each local component ratios of Makgeolli are different because of its different manufacturing techniques. The four different Makgeolli were analyzed in this paper: Makgelli from Gangjin County, Makgelli from Seoul, Makgelli from Yeosu, and Makgelli from Busan. HPLC method was used to measure amounts of organic acid, free sugar and free amino acid. SPME method was used to identify volatile compounds of Makgelli. The main experimental result is the following. Nine species of organic acid were detected in all kinds of Makgeolli. Among several organic acids, succinic acid and citric acid were the major compounds. Makgeolli from Yeosu had a higher organic acid content than other areas' Makgeolli. Eight species of free sugar were detected in all kinds of Makgeolli. Among free sugars, sucrose, galactose and lactose were highly detected. A small quantity of ribose, mannose and xylose were also contained in free sugars. Makgelli from Seoul had a high free sugar content. Among species of flavor, 7 acids , 19 alcohols, 26 esters , 8 aldehydes, 6 hydrocarbons, and 4 ketones were detected in all kinds of Makgelli. Makgellifrom Yeosu had more flavor compounds than other areas', expecially ester was most highly contained among flavor components. Makgellifrom Gangjin County had the highest ethanol content in all areas'. Makgeolli from Busan contained higher amount of acetic acid than other areas'. Makgelli from Seoul had lowest amounts of flavor compounds.
