The objective of this study were to estimate genetic parameters on carcass traits and to investigate the effects affecting carcass quality. The data were obtained from local farms rearing Hanwoo in Jeonnam province.
Carcass traits including backfat thickness, eye muscle area, carcass weight, marbling score, quantity index, meat color, fat color, texture, maturity, and final weight were estimated using MTDFREML program to obtain variance and covariance, heritability, and genetic correlation among traits.
Estimates of heritability were 0.10 in backfat thickness, 0.20 in eye muscle area, 0.11 in carcass weight, 0.20 in marbling score, 0.08 in quantity index, 0.09 in meat color, 0.01 in fat color, 0.09 in textures, 0.09 in maturity, and 0.18 in final weight, respectively.
Overall mean and standard deviation in heifer was 13.64±5.47㎜ in backfat thickness, 79.35±10.66㎠ in eye muscle area, 348.73±49.36㎏ in carcass weight, 4.01±1.86 in marbling score, 64.81±3.76 in quantity index, 4.99±0.39 in meat color, 3.10±0.44 in fat color, 1.55±0.50 in textures, 5.40±1.88 in maturity, 621.18±72.39㎏ in final weight, and in steer was 13.32±5.35㎜ in backfat thickness, 90.22±10.31㎠ in eye muscle area, 425.20±45.08㎏ in carcass weight, 5.64±1.91 in marbling score, 64.45±3.92 in quantity index, 4.83±0.47 in meat color, 3.00±0.22 in fat color, 1.17±0.38 in textures, 2.25±0.56 in maturity, 710.06±69.39㎏ in final weight, respectively.
The genetic correlation of backfat thckness was –0.20 with eye muscle area, –0.47 with carcass weight, 0.11 with marbling score, 0.27 with meat color, 0.44 with maturity, and –0.76 with final weight.
The genetic correlation between carcass weight and marbling score was positive to be 0.42 and between carcass weight and final weight was highly positive to be 0.73.
