Functional effects and components relative to cultivar (Seungjudolbae, Chengsilri, Quangne, Hwangsilri, Bakunbae, Hwasan, Gamcheonbae and Shingobae), growth time and parts(young fruit, immature fruit, mature fruit and shoots) of pears were investigated to contribute utilization agricultural resources and stabilization of farm industry.
Antioxidant activities were investigated by means of DPPH assay and ORP(Oxidation reduction potential) test. DPPH free radical scavenging activity showed highest activity in shoot and following are in young fruit, immature fruit and mature fruit, respectively. The activity were found to be higher in hot water extracts than in EtOH extracts of all samples, except Chengsilri.
Oxidation reduction potential value of EtOH extracts were higher than that of hot water extracts. ORP activity of EtOH extracts relative to growth time and parts showed as follwing: young fruit > shoots> immature fruit > mature fruit. Otherwise, activities of young fruit EtOH extracts relative to cultivar were as follwing: Chengsilri > Shingo > Bakunbae > Quangne.
Tyrosinase inhibitory activity was high in EtOH extracts of each of young fruit and shoots. Especially the activity(SC50) on EtOH extracts and hot water extracts of bakunbae shoots showed 0.20 mg/g and 0.17 mg/g, respectively. Anti-wrinkle effect of hot water extracts of each young fruit by means of elastase inhibitory assay were as following: Bakunbae > Hwangsilri > Quangne > Shingo > Chengsilri > Gamcheon.
The content of total phenolic compound in EtOH extract of Chengsilri young fruit was highest as to be 6.54 mg/g. The content of total flavonoid were found to be highst(51.46 mg/g), and then were as following: Hwasan > Shingo > Seungjudolbae.
As the results of HPLC analysis for functional components in hot water extracts of shoots of baekunbae which were showed high activities, the contents of arbutin in young fruit, mature fruit, immature fruit and shoots were 10.130 mg/g, 9.454 mg/g, 6.764 mg/g and 8.714 mg/g, respectively.
