In the field research, the state of coffee shops was analyzed from the perspective of the selected customers in three different stages (pre-service, during service and post-service) and according to the AIO (activity, interest and opinion) method that was to observe the behavioral patterns of customers and classify them by lifestyles. Second, face-to-face interviews were conducted to find out their needs and whether they experienced any inconvenience when they used coffee shops, and a customer-journey map was prepared to show the results. Third, the customers were classified into several groups according to the similarities of their demands. After personae who were imaginary persons were created based on the grouping results, scenarios were written, and then how to improve service design was suggested. Indeed, it's not easy to grasp customer needs by conducting a survey that uses stereotyped questions, and the purpose of this study was to examine how to satisfy customer needs by making a quantitative analysis of customer needs through face-to-face interviews, by grouping customers whose demands were similar, by setting up personae who were imaginary persons, by writing scenarios for the personae and finally by suggesting possible solutions to the problems.
