CCP 결정, 관리 등 HACCP 7원칙도 미생물 및 이물 클레임 저감화에 큰 요인이 되었다. 본 연구결과, HACCP의 도입은 즉석섭취식품의 위생수준에 긍정적인 영향을 끼쳤으며, 이물 클레임 감소에도 효과가 있는 것으로 나타났다. 즉석섭취식품은 소비자가 구입 후 바로 섭취하는 것이 중요하며, 즉석섭취식품도 HACCP인증 의무화 품목으로 고려할 필요가 있는 것으로 생각된다.

In this study, seven samples such as raw materials, semi-final products, final products, workers, processing facilities, airborne microorganisms, and consumer claim were analyzed and compared both 2010 and 2012 to verify microbiological contamination levels. There was no significant difference of aerobic plate counts(APC)(p>0.05) in raw materials between before and after implementation of HACCP. The results also demonstrated no significant difference(p>0.05) in semi-final products between before and after the implementation of HACCP. The APC of final products were ranged from 4.4~4.8 log CFU/g before HACCP but decrease to 3.4~3.7 after HACCP(p<0.05). The APC of workers hands resulted 3.52±0.52 log CFU/hands before HACCP but decrease to 2.25±0.21 after HACCP(p<0.05). Five of 8 samples showed significantly decreased(p<0.05) airborne microorganisms. The consumer claims also approximately 34% decreased. The reduction of microorganisms by implementing HACCP could be due to protection of the product and processing environment via room sealing, upgrading the washing program in hands and processing facilities, color separation of uniform in each section of the processing line, etc. Therefore this study suggest that implementation of HACCP should be an obligation for ready-to-eat products manufacturing because it is an effective mean to assure the safety management levels and consumer claim on physical hazards.
