The purpose of this study was to determine the possibility of the development of jelly-type among the general food forms which are listed in the definition of a HFF code. In addition this study was conducted to provide base data for improvement of HFF market. First of all, the number of jelly-type product registrations was increased 24% in 2013 for selected 5 manufacturers in comparison with 2012. The products were classified by total 10 kinds of functional claims for 2012 and 2013. Among functional claims, ‘weight loss’ with 36.6%, and ‘skin moisturizing’ with 21.4% had higher shares. Also 287 Koreans of ages 20 ~ 40s were surveyed to find out the consumer's intake status and recognition of jelly-type health functional food. The survey questionnaire consisted of questions on general characteristics, knowledge and intake status of health functional food, preference of jelly-type, and the SPSS (ver.21.0) program was used for analysis. In the result of this survey, awareness of symbol marks for health functional food (30.3%), and deliberation for advertisement (18.5%) appear to be low. Also consumers did not clearly distinguish between 'general food' and 'health functional food'. 40.1% of consumers were experienced in jelly-type health functional food, and the first reason for their consumption was 'It seems easier to eat' with 51.3%. The first reason for no consumption was 'jelly is not good for the body in use additives such as sugar' with 30.6%. The preference for jelly-type depending on age showed significant differences (p<0.05) in terms of texture, shape, sweetness, serving size, and number of dosage.
