And the molecular and crystalline structures, in vitro digestibility and physicochemical properties of them were investigated in the present study. Among the normal rice starches studied, the starch from Junam cultivar showed the highest amylose content (25.5%), followed by Boramchan (23.6%). Gelatinization enthalpy change (determined by differential scanning calorimetry), relative crystallinity (determined by X-ray diffractogram) and ratio of 1047 cm-1/1022 cm-1 (determined by Fourier transform infrared spectroscopy) exhibited higher values in waxy rice starches than normal rice starches due to higher degree of crystalline structure. The starch from Hanareum showed the lowest gelatinization enthalpy (12.4 J/g) among the tested rice starches. The swelling factor at 80 °C and 65 °C of normal and waxy rice starches ranged from 10.0 to 15.1 and from 19.9 to 41.3, respectively. The Hiami showed the highest pasting temperature (92.1 ℃) and the Backokchal had the highest peak viscosity (1576 cP) among the tested rice starches. The rapidly digestible starch (RDS) contents of normal rice starches (43.5-51.0%) were substantially lower than those of waxy rice starches (55.7-84.5%). However, the slowly digestible starch (SDS) contents of waxy rice starches (11.3-38.3%) were lower than that of normal rice starches (33.2-49.3%).
