The purpose of this study is to determine the adequacy of the microbial specifications of cooked foods in institutional foodservice establishments specified on Korean Food Code by Ministry of Food and Drug Safety revised in 2007. The results from the study can be summarized as follows:
First, quantitative analysis results of the lower risk food poisoning pathogens, Staphylococcus aureus was showed a detection range of the N.D∼1.54 log CFU/g in 10 salad samples(n=50). This is a level that dose not exceed the specification of 2 log CFU/g on Korean Food Code. Next, Bacillus cereus was not detected in 11 fried rice samples(n=55) which met the 4 log CFU/g based on Korean Food Code. Clostridium perfringens was showed the negative in all 11 meat and poultry samples, and Vibrio parahaemolyticus was not detected in 3 cold seafood and vegetable samples as well. This is the level that dose not exceed the specification of 2 log CFU/g specified on Korean Food Code respectively.
