This study assessed the effects of slightly acidic electrolyzed water and aqueous chlorine dioxide as disinfection and sterilization methods to reduce microorganisms in shrimps effectively. The study checked the reduction effects of 100 and 200ppm of sodium hypochlorite usually used for disinfection and sterilization, 30, 50 and 80ppm of slightly acidic electrolyzed water, and 10, 30 and 50ppm of aqueous chlorine dioxide on Vibrio arahaemolyticus, general bacteria, and coliform bacteria. The investigator did the disinfection and sterilization operation on V. parahaemolyticus with the three agents for five and ten minutes along with simple tap water, which reduced it only by 0.22, 0.37 log CFU/g, whereas sodium hypochlorite reduced it by 1.27, 1.01 log CFU/g at 100ppm and by 1.01, 1.47 log CFU/g at 200ppm. Slightly acidic electrolyzed water reduced it by 0.82, 0.98 log CFU/g, 1.63, 1.05 log CFU/g, and 1.76, 1.22 log CFU/g at 30, 50, and 80ppm, respectively. Aqueous chlorine dioxide reduced it by 1.29, 1.05 log CFU/g, 1.62, 1.03 log CFU/g, and 1.58, 1.3 log CFU/g at 10, 30, and 80ppm, respectively. Residual chlorine was measured in each treatment group during disinfection and sterilization, and the results show a considerable reduction, which suggests that additional ten minutes of treatment did not add more effects on its reduction. There were no significant differences in the effects among the three agents(p>0.05). In short, five-minute disinfection and sterilization with aqueous chlorine dioxide of 10ppm will be effective for reducing V. parahaemolyticus.
