This study was conducted to provide the basic data for activation of sodium reduction and to contribute to the settlement of healthy eating habits of school children and adolescents, the subjects of the school lunch program. The survey on the awareness and practices on the sodium reduction of 110 school nutrition teachers and dietitians in the Jeonbuk Province took place from April 26th to May 3rd, 2016. The survey shows that 87.3% of school nutrition teachers and dietitians recognize the need of the practice of the sodium reduction in the school meal. 91.8 % of school nutrition teachers and dietitians used the salinometer to check the salinity, 99.0% of them measured the salinity of soup and stew, and 77.8% of them kept it lower than 0.6%. More than 97% of school nutrition teachers and dietitians were aware that the salty taste of the school meal was adequate or not salty. However, 54.5 % of them responded that they did not know the exact amount of sodium in the school meal. The food categories containing the most sodium were in the order of soups and stews> processed meat products> braised foods("jorim")> kimchi> sauces. To practice the sodium reduction of school meal well, 63.6 % of school nutrition teachers and dietitians responded there should be a change of preferences and attitude of students and 51.8% of them thought there should be efforts of school nutrition teachers/dietitians and all the cooking employees. 79.1 % of school nutrition teachers/dietitians recognized the need of education on sodium reduction for them, but 40% of them were not satisfied with the education materials on the sodium reduction for school nutrition teachers and dietitians provided by the government. 68.8% of them thought that the nutrition education for school nutrition teachers and dietitians focused on the knowledge rather than the low sodium cooking skill and recipes, how to choose low sodium ingredients, and contents helpful for the low sodium nutrition education and counselling. In the school cafeterias of the Jeonbuk Province, the salinity measurement was limited to the soup and stew category, which makes it difficult reduce the amount of sodium in the other high sodium side dishes. Therefore, it is necessary to measure the salinity of other side dishes to reach the goal of 20% sodium reduction in 2017. Only 18% of school nutrition teachers and dietitians checked the amount of sodium of processed meat products like ham and sausages, but 52.7% of them tried to use processed meat products only once or twice a month and 86.3% to use natural foods like vegetables for the menu planning, which means that they tried to enforce the sodium reduction policy while to satisfy the preferences of students. The sodium amount of school meals were thoroughly regulated in elementary schools rather than middle and high schools. The less the working experience of school teachers and dietitians, the more of them thought about the preference. The more the working experience, the more of them tried to increase the preference and the taste even though the foods were less salty. The less salty foods were provided in the order of elementary school, middle school and high school. There were 31.8 % of schools which notified the sodium contents on the bulletin board to reduce the amount of sodium intake from the school meal. There were two reasons not to post the sodium content provided by school meal: firstly it was difficult to check the amount of sodium in every food (61.1%) and secondly it was not mandatory (31.9%).
