Studies on Quality Characteristics Olive Flavored Oil Added with Herbs Lee Byung Sub Dept. of Culinary and Food Service management The Graduate School of Tourism Sejong University In this study, production and commercialization possibility of herb added olive flavored oil by using basil and rosemary was intended to be observed under the judgment that consumption of flavored oil containing unique fragrance and flavor and useful active ingredients of natural substance such as flavored vegetable would be increased as living standard is enhanced and concern over health is grown and its result is as follows. pH of flavored oil added with basil and rosemary was measured as 6.0 in all the samples. Olive oil, a control group, showed the highest L value of chromaticity and that of basil added olive flavored oil was higher than that of rosemary added olive flavored oil and the more storage period was long, L value showed a tendency of being increased. In case of a value, olive oil, a control group, maintained green tendency without change by storage period and rosemary added group showed higher a value than basil added group and the more storage period was long, both basil added group and rosemary added group showed strong green tendency. b value of basil added group was measured to be higher than that of rosemary added group and such value was increased on 28th day of storage. On 7th day of storage, olive flavored oil added with 15% basil showed the lowest viscosity of 50.36 cP and on the very day of manufacture, olive flavored oil added with 15% rosemary showed the highest viscosity of 66.72 cP and significant change was not represented as storage period passes. Acid value was increased as basil and rosemary were added and storage period passed and rosemary added olive flavored oil maintained relatively low acid value than basil added olive flavored oil. Regardless of storage period, olive oil maintained generally low TBA value and TBA value of other samples was increased than that of the very day of storage and generally, TBA value increasing rate of basil added olive flavored oil group was higher. Rosemary added olive flavored oil showed higher total polyphenol content than that of control group olive oil and basil added olive flavored oil and in all the herb added olive flavored oil, polyphenol content was increased depending on its concentration. In addition, excepting control group olive oil, total polyphenol content showed a tendency of being generally increased depending on lapse of storage period. DPPH radical scavenging activity of rosemary extract was measured to be higher than that of basil extract and it was much higher when adding rosemary to olive oil. As a result of measurement of microorganism, antimicrobial activity against Staphylococcus aureus, E. coli, Salmonella spp. was not represented in all the samples. Color thickness, herb smell intensity among sensory characteristics of rosemary, basil added olive flavored oil were thickened and intensified as adding rate of both basil and rosemary group was increased and as basil adding rate of basil added olive flavored oil group was increased, fresh smell was evaluated to get stronger and in case of rosemary olive flavored oil group, it was evaluated that up to rosemary addition of 10%, fresh smell was intensified but at 15% addition, such smell intensity got rather weakened. It was evaluated that herb taste of 15% basil, rosemary added group was the strongest, bitter taste of 15% rosemary added olive flavored oil the strongest, oily taste of control group olive oil the strongest and 15% basil, rosemary added group the weakest. Off-taste of 15% rosemary added olive flavored oil was evaluated to be the strongest and control group olive oil the weakest. Sensory preference of basil and rosemary added olive flavored oil excepting 15% rosemary added olive flavored oil was represented to be better than that of control group olive oil and 10% rosemary added olive flavored oil that recorded the highest score in appearance, taste, general preference items showed the most excellent sensory preference. In case of sensory preference of salad that utilized basil and rosemary added olive flavored oil as dressing, in items of appearance, smell, taste, oral touch, general preference, salad with 10% rosemary added olive flavored oil dressing showed the highest preference. When summarizing above results, it was considered that commercialization possibility of olive flavored oil utilizing basil and rosemary would be promising as olive flavored oil being manufactured by adding basil and rosemary did not show any change of microorganism number during storage period, the more adding ratio of basil and rosemary was increased, total polyphenol content and DPPH scavenging activity were increased and such oil was also generally better than control group olive oil in terms of sensory preference and among these, adding 10% rosemary compared with olive oil amount would be most appropriate in terms of sensory preference. In addition, in the future research, it is considered that a research on manufacture of flavored oil utilizing more diversified herbs and edible oil would be performed and in order to commercialize rosemary added olive flavored oil, marketing strategy would be required through development of product container, packing material and selection of target market.
