B. cereus는 선식에서만 평균 1.15 log CFU/g 이 검출되었으나 기준에 적합하였다. 즉석조리식품의 평균 일반세균수는 2.35 log CFU/g 이며 기준이 설정되어있지 않은 발효식품함유제품의 일반세균수가 최댓값인 5.78 log CFU/g 로 나타났으며, 기준이 100,000이하로 설정되어있는 제품 중 14.3%인 20건에서 기준에 근접한 104~105범위 사이에서 검출되어 위생관리에 주의가 좀 더 필요한 것으로 나타났다. 면류의 평균 일반세균수는 1.88 log CFU/g 로 나타났으며, 생면이 가장 많이 함유된 국수류의 평균 일반세균수는 2.46 log CFU/g 으로 가장 높게 나타났다. 대장균군 오염도는 비살균제품, 주정처리제품, 살균제품 순으로 높게 나타났다. 본 연구 결과, 다양한 발효식품 및 다소비 가공식품 중에서 전반적인 위생 및 유통관리가 잘 이루어지고 있는 것으로 보이지만 새로운 제품이 계속 개발되고 일부 제품의 경우 기준에는 적합하나 기준에 근접한 높은 오염수준이 나타나 꾸준하고 폭넓은 위생관리가 지속적으로 이루어져야 할 것으로 보인진다. 본 연구 결과를 바탕으로 2016년 9월 30일 식품공전의 장류, 젓갈류, 면류에서 미생물 단일표본 검사법의 일부를 통계적 개념을 도입한 기준·규격으로 개정되었고, 2018년 1월 1일부터 시행될 예정이다.

Thus, it is necessary to evaluate the potential risks of food poisoning and the continuous hygiene level. The purpose of this study was to analyze the contamination level of microorganisms and to provide data for the establishment of statistical standards in microbiological tests. A total of 940 samples were analyzed in fermented foods and key processed foods. Five samples were collected for each sample with the same shelf life and manufacturer in the same lot product. Hygienic indicator bacteria and food poisoning bacteria such as Staphylococcus aureus, Bacillus cereus and Clostridium perfringens were tested according to the microbiological test method of Food Code. As a result, aerobic plate counts of fermented soybean product, jeotgal and kimchi were average 7.81, 3.89 and 4.61 log CFU/g, respectively. Relatively high values seem to be due to the inclusion of beneficial bacteria such as lactic acid bacteria generated during fermentation process. In case of B. cereus, about 20% of the fermented soybean product were detected between 103 and 104 CFU/g, which is close to 10,000 CFU/g in Korean Food Standard Codex. The average of 1.62 log CFU/g of coliform group was detected only in cheonggukjang among the fermented soybean product. In case of the jeotgal products, average aerobic plate count of seasoned joetgal was 5.17 log CFU/g and this is twice as high as that of aekjeot and jeotgal. Among the seasoned joetgal, 0.18 log CFU/g of coliform group was detected only in the mollusk products. Average aerobic plate count of ready-to-eat foods was 1.75 log CFU/g. Most of them were detected to be high in sunsik and burger. B. cereus of ready-to-eat foods were detected only in sunsik with average 1.15 log CFU/g. Average aerobic plate count of ready-to-cook foods was 2.35 log CFU/g. The maximum value of average aerobic plat count in the fermented food-containing product was 5.78 log CFU/g with no standard set. Of its no-containing products whose standard were set at less than 100,000, 20 cases, 14.3%, were found between 104 and 105. Average aerobic plate count of noodle products was 1.88 log CFU/g. Noodles containing many wet noodles were the highest among noodle product. The highest coliform group of noodle product was detected in the non-sterilized products, followed by the alcohol-treated products, and the sterilized products. All samples met the overall hygiene standards and distribution management of microbial tests seemed to be well done. But new products have been developed and some products have high levels of contamination close to the standards. Therefore, it is considered necessary to be careful in wide sanitary management.
