With the interest in health continuing to grow, and with academic and industrial studies on various bio-active substances of natural materials being diversified, there has been a growing interest in the active components of Theobroma cacao L., a raw material for chocolate. Recently, various cacao-processed products have been commercialized in the Korean market. In addition, with its nutritional values and physiological functions being recognized anew, the intake of its raw materials and its related processed foods have been reported to have a beneficial effect on health. This study divided the samples of cacao nibs which are produced by finely pulverizing cacao beans (the fruits of Theobroma cacao L.) and the samples of cacao tea which is made of the husks of cacao beans into three groups: the group of cacao nibs, the group of the 1:1 mixture of cacao nibs and cacao husks, and the group of cacao husks, in order to confirm the anti-oxidative activity of each of the groups when consumed under the different conditions of temperature and time. For this purpose, the total contents of polyphenol and flavonoid were measured while the radicals scavenging activities of DPPH and ABTS were confirmed. In addition, the study sought to identify the functionally and preferentially optimized drinking conditions of cacao tea through an expert panel's sensory evaluation, electronic nose & tongue analysis and colorimetric analysis using representative samples extracted under the conditions of the low and high temperature. The results showed that the polyphenol content of the group of cacao nibs was the highest among the 3 samples regardless of the temperature and time conditions. The measured values were found to be higher in the extraction group in the high temperature than in the one in the low temperature, and the highest values were shown to be obtained from the samples extracted for 2 minutes at the temperature of 100℃. The flavonoid content was found to be higher under the condition of the low-temperature extraction than of the high temperature and have the highest measured values when the samples were extracted at 20℃ temperature for 12 hours. The DPPH radicals scavenging ability of the cacao husk group extracted at 20℃ for 24 hours was found to be greatest with 87.66±0.75%, and under the condition of the high temperature at 50℃ extraction for 10 minutes, it was measured at 91.63±0.22%, indicating that the group has a great DPPH scavenging ability in both low and high-temperature extraction. In the case of the ABTS radicals scavenging ability, the group of cacao nibs extracted under the condition of the low temperature at 10℃ for 24 hours showed a high effect with 91.69±0.44% and the group of the mixture of cacao nibs and husks extracted under the condition of the high temperature at 50℃ for 10 minutes showed a result of 89.85±0.21%. In the evaluation of preference through sensory evaluation, the group of cacao husks extracted under the condition of the low temperature at 20℃ for 12 hours, which had high scores of chocolate flavors and sweet and sour taste, showed the highest preference; and the characteristics of the flavors and fragrances of each sample group were able to be confirmed through the electronic nose & tongue analysis. Based on these results, the study confirmed the anti-oxidative activity of each of the cacao tea groups according to the drinking temperature and time; and examined the electronic nose & tongue analysis of the patterns of fragrances and tastes along with the expert panel's sensory evaluation. Through this, the study suggested the functionally and preferentially optimized drinking conditions of cacao tea and expects that the results will be used as basic data for developing various kinds of blending of favorite beverages and foods in the future.
