Moringa oleifera, a tropical tree cultivated in tropical area, is known for its nutraceutical properties, particularly antioxidant effects. It was hypothesized that yogurt supplemented with moringa extract (ME) may promote fermentability and bioactive properties of yogurt. To evaluate the properties of moringa yogurt, yogurt was fermented with ME (hot water extract, 100°C, 30 min) at concentrations of 0.05, 0.1 and 0.2% using yogurt starter (S. thermophilus, L. acidophilus and B. longum). Results showed that the addition of ME to yogurt fermentation significantly accelerated fermentation rate due to growth promotion of the lactic acid bacteria. Addition of ME reduced syneresis and enhanced water holding capacity of yogurt. During 21-day cold storage (4°C, 21 d), pH of yogurt has no different between ME and control yogurts. Viscosity increased in ME yogurt in a dose-dependent manner during 21-day cold storage. Furthermore, ME yogurt exhibited remarkably higher radical scavenging activity during 21-day cold storage. In sensory test, the addition of 0.05% ME to yogurt did not significantly influence the overall acceptability compared with the control yogurt. These data suggest that yogurt fermented with concentration of 0.05% ME can maintain the sensory acceptability and possess positive health effects by increasing the proliferation of lactic acid bacteria and antioxidant properties.
